Except where raw packing instructions are given, the processing times are calculated based on hot ingredients and hot jars going into the PC to begin with. Comments (17)Do you have many thousands of dollars to spend on flash processing? They are not cheap and are the most costly device to run and maintain for any canning company. For extracting juice from tomatoes, there are several choices and some are a few hundred dollars or more starting with the Spremy which is motorized with conical screens. Adding a little acid to the juice can allow it to be home canned in quarts, provided its processed long enough. 200 plants yielded me about 60 quarts of sauce, but I did give many tomatoes away too. Depending on the type of plants and how much they produce, you can expect a big variable when it comes to the end result of filled jars. In some areas of the country, there are community kitchens that allow people to home can their produce. Comments (6)Well, you have both convinced me to not waste the pulp. Some of it is so thick, and almost chunky, that it would ruin the pleasure of the drinking experience. I'll save (freeze) and stockpile a good bit and then turn it into chile...that's sure easy enough. Paul, what would I need to do to make it tomato soup? Comments (9)Yeah when the jar popped it sent tomatoes through the vent pipe even though the counter weight was on. I was concerned and removed the weight causing the pressure to drop too fast. The heat was off I was waiting for the pressure to drop to zero so I could remove the weight. I am a very novice canner at best. The lid popped I don't know why the band was on. I know about the siphoning but I don't think it affects the quality or the storage life. Does it ? It usually doesn't take me too long to use my jars during the winter, last year they were gone by January. After reading lots of threads on here I got really nervous and I have ordered the three piece weights since I have a dial gauge. I asked my dad to test it for me bout he said not to be worried his moma canned for years and never had a gauge tested and they were fine. However he doesn't have a pressure canner and small batch cans tomato juice. He had several jars mold or ferment within weeks last year. I advised my kids not to eat anything paw paw canned. I have to learn through my own experience and online. I appreciate the input, as someday I hope to be able to produce and put by the majority of food we consume....See Moregrainlady_ks
