Gardening in NC : Help Please

I am starting a garden at a local middle school in Raleigh. We will be donating produce to local homeless shelters through the plant a row program.

It's been awhile since I started a garden program in NC and I could use some advice on what to start inside in my growlab and when to transplant outside to the garden. I was given a random assortment of organic-non-gmo seeds. Many of these I have no experience with growing in this area.
