Your meals both sound pretty good. I fixed lean ground turkey with some mushrooms. Was intending to put cream of mushroom soup on it, but opened cream of celery instead. Once it was cooked, I couldn't tell the difference. Had a nuked potato and some peas with it.

It was in mid 40s here today. Will be anywhere from that to mid 50s this week. Maybe by the end of the week the snow/ice accumulation will be all gone here in my part of Ohio.

With leftover chili we had chili dogs & sweet potato fries.

We had beautiful weather here today, 60F. I had to go to work at the park for the day and it was beautiful. However, when I got home, with water standing everywhere and mud up to your knees, DH came driving in like a crazy person. We had a cow roll on her back. Not good at all. Came back in cold wet and muddy!!

DH did take out some steaks, but I am not really all that hungry. We will see if we do steaks or just have a bowl of soup when he gets in.

We are drowning over here! I now have water front property lol. My back yard is a lake. The roof which needs replacing badly( I have called for estimates and they don't call back do these companies not need work?) has sprung a bad leak so I have 4 containers lined up in a row catching the water. I want the rain to stop!
I am going to blacken some salmon and steam some cauliflower for dinner tonight have not decided if we need anything else probably not.

It was around 74F here today. I'm hoping that spring is here to stay! DH ate a very late lunch around 4pm so he told me he didn't want anything for dinner. I was starving on the way home from work, so I picked up a steak cantina bowl from Taco Bell.

Ellen, your meal sounds delicious. I made chicken cutlets with capers a couple of weeks ago and hubby loved them.

Shirley, you make good meals for yourself. A lot of our snow melted today with a lot more to melt with the increased temperatures this week.

Prairie, does your hubby have to use a fork lift of some sort to "right" the cow? The poor thing! He might want a steak when he comes in after working to get her up and going again.

Raven, I would have thought that roofing companies would be looking for business. To have 3 not even return your calls is inexcusable, especially when you're in an emergency situation. As usual, your dinner sounds great. For some reason salmon intimidates me :-(

It's super easy to cook it and it was wonderful. I use a ceramic non stick skillet, with a tablespoon or so of olive oil get it hot. I season the salmon squeezed lemon juice blackened seasoning a little rosemary and cracked pepper. I have no Idea if this is the right way or not but it's my way. I put it in the hot skillet skin side down. Set a timer for 3-4 minutes then flip sides. The skin will now just peel right off easily which I do while cooking, do that side for the same time. Then flip one more time to give the under skin side a few seconds to brown. Check for flaky meat and it should be done. Very quickly cooked especially for the smaller portions. The ones tonight were quite large so I did close to 5 minutes each.
