What;s for dinner Monday?

Whew, I'm late. We were getting ready to go grocery shopping when it started pouring down rain. We waited until the sun was out again and the air was so steamy it fogged Harry's glasses, but we gotter' dun.

Decided it was to late to cook anything so I picked up a couple of Marie Callander chicken pot pies. So that's dinner.

What are you having tonight?

I have chicken breast marinating in Caribbean jerk sauce, will make that, corn on the cob, sliced avocado.

***The pretzels tasted much much better today after I boxed them last night.

Only 12 at our luncheon today :o( And for the first time ever NO DESSERTS

My Farmer's Casserole
Squash casserole
Fresh collard greens with corn muffins
Multi salads
orange congealed salad
deviled eggs
Seafood dip

Hostess had wine for everyone to enjoy before lunch and the sugar cinnamon pretzels were a hit.

Jim congratulations on your upcoming cruise! I love it that you had wine with bacon and eggs. Audrey, your dinner looks and sounds fabulous. We had baked potatoes last nite. Shirley, I've yet to make red beans and rice. What's throwing me off from making it, much as I'd like to, is that we only have kidney beans, as far as a red bean, and I know that isn't the kind to use. I made quinoa with toasted almonds and red currants the other day. We like quinoa. Kath, for some reason companies change their recipes. In the event of making things healthier, taste gets compromised. Less fat and salt is less flavour it seems. Prairie Rose, do you make the light fluffy dumplings? That's what my Nan made and that's all I've ever known. I've never attempted it; I should! Raven, that looks divine!! We love roasted vegetables! Erin, I hope you feel better. That's dedication, coming onto a dinner thread when you're not feeling that great. Betsy, that's nice comfort food. Gyr_Falcon, that's a great sounding meal! Glad to see you here.

Sue you are always so busy, running around. You must have a great time with the girls. Mary, I haven't had chicken and dumplings since my Nan died, decades ago. She made the lightest fluffiest, dumplings. I just bought a another second-hand slow-cooker on the weekend and we used it for chicken as well. I'm thrilled with it. GM, I love meat and cheese with salads. Rhizo, we like breaded and fried eggplant. Zucchini would be just as good!

I made the Christmas turkey breast so I could get the slicing/dicing/broth for gravy done ahead of time and in the freezer. Monday is normally our "Big Meal" of the week (large cut of meat with all the trimmings), so that worked in nicely. I have a theme (genre) for each day of the week, rather than doing a specific meal plan. I'm the only person in the family who likes dressing with turkey, so I made a gluten-free boxed mix I found on the clearance rack after Thanksgiving at Aldi. It was surprisingly very good. Or perhaps it's been so long since I've had it due to going gluten-free 3-years ago, anything would taste "good", and now I have 5 more small servings in the freezer. ;-) Anyway, one less thing to worry about making on Christmas Day. Since I made two kinds of fudge on Monday, we had a sample for dessert along with fresh fruit.

ravencajun, please share your Caribbean jerk sauce recipe.

When we were in Jamaica, little restaurant had smoked Caribbean jerk chicken. Smelled so good. Lady that got one said it was delicious. Hers was in a tortilla wrap.

GS was water tubing and wasn't hungry for one when he got back to the bus.

I had leftovers also....ham, green beans, potatoes. Also added an ear of corn. Aren't leftovers great....easy to fix and fairly quick cleanup.

Glenda, that's a lot of food, but with all 12 bringing a dish it doesn't take long to fill up a buffet. I'm surprised there were no desserts!

Raven, everything sounds delicious. We ended up having sliced avocados last night because the mangoes weren't quite ready.

Way to go, Jasdip. You're making space in the frig for more of your good cooking!

Shirley, I looked for green beans in the grocery today and they were awful looking. I wanted green beans and red potatoes so bad!! Yep, I think we all love our leftovers and most of the time I think they taste better on day 2 (or 3).

Wow, this site is hard to get onto today (my pop-up blocker is blocking the whole site, for some reason--I'm assuming it's a good one--LOL).

Anyway, it was a gorgeous day here, finally got to finish painting the railing on the deck.

Late afternoon, my UPS guy brought me a jug of maple syrup I'd ordered, so naturally, we had 'breakfast for dinner'--whole wheat pancakes, delicious Grade B maple syrup and nice chunky applesauce.

I made oyster stew, not the best I have ever made but it was good enough that Mike went back for seconds. Enough leftover for another dinner.
