Meatloaf, is it still safe to eat?

I baked a meatloaf on Thursday evening, containing milk and eggs.
Baked well done.

Hubs came home from tennis and didn't want a heavy meal. So I let it cool down and put in fridge.

Dinner out on Fri. and Sat. we had to go out of town for the day.

So, now its Sunday. Would the meatloaf still be safe to eat? It hasn't been sliced, only out about an hour to cool in a fairly cool house and has been in a Rubbermaid container since.

Shall I risk it?

Unless it smells bad, I would say that there's nothing wrong with it. Three or four days is not a long time to hold a cooked meatloaf in the refrigerator. If it sat out on the countertop all day, I would hesitate.

There's a wise old saying, "When in doubt, throw it out." But I don't think that applies to this situation.

" When in doubt, try it out" is what I do for myself.

Because I know exactly my refrigerator temperature, and I have a very strong stomach.

It is not the same if I were to advise you.

Oooh! Another Southeast Texan!!! :-) I've been canning a few years now, yet had a siphoning problem this weekend with my greens, too. I have the 23 qt Presto, so I can double deck the jars. First batch, 14 pints of kale. Was surprised to see the jars had lost quite a bit of liquid. Absolutely followed instructions to the letter. I used So Easy to Preserve for recipe and instructions. I am positive I didn't overpack and removed air bubbles. Kale was prepared according to instructions. Vented 10 minutes, processed for 70 minutes after coming up to pressure. Cooled down 1 hr 15 minutes, checked weight and gauge for pressure, then removed weight, waited another 10 minutes, removed lid and jars. During processing, the weight seemed to be rocking a bit too vigorously, so I did make an adjustment, but not much. Second batch, this time collard greens. Same prep, same instructions. Kept temp a bit lower to start with and brought up to pressure a little slower. Again double decked and followed the instructions absolutely to the letter. Even though the temp was lower, I did adjusted the heat only once due to the vigorous rocking of the weight, but it was a very slight change. Followed proper processing and cool down procedures. Still had substantial siphoning. There are a couple of things I've been pondering over the cause of the siphoning: I have always tightened rings only very lightly, staying with "finger tight" but I had come to believe I was leaving them a bit too loose, and tightened them a bit more than usual...but still, I believe, only "finger tight." I don't usually process in double stacked loads, but know my canner is designed for it, and I have a proper rack between the two levels. Jars were not crowded, had a free flow of water around them. Weight rocked pretty vigorously...water seemed to be boiling pretty hard, but I didn't want to adjust temps much because I knew it could cause siphoning. I have a strong comfort level these were properly processed, but was really surprised it happened in both batches to the extent it did. Jill

Welcome! As long as the fruits haven't split, discolored, or otherwise turned to mush, they're fine. I just pulled my final Bih pod off the plant this morning. We've had several hard freezes. I have two Thai chiles and a Black Pearl hanging in my garage, too. Haven't had time to pluck them. Josh

Personally, I would toss it, but would consider it borderline safe if: -The refrigerator temperature has been colder than 39-degrees F. -Not a lot of opening and closing the refrigerator (which raises the temperature each time). -It doesn't smell sweet(ish) or fermented, or has mold growing on it, -It hasn't been in-and-out of the refrigerator - moving from a safe cold temperature to room temperature several times during the week. As an example, families who take milk out of the refrigerator and let it sit for a prolonged time at room temperature before placing it back in the refrigerator may find their milk sours faster than someone who uses what they need and immediately places it back in the refrigerator and maintains the colder than 40-degrees F food safe temperature. The longer it sits at an unsafe room temperature, the faster bacteria grows. -I would also suggest it be thoroughly cooked if you decide to use it, and not used for a cold salad type dish. There are so many spelling variations for "tabouli", they all look misspelled to me no matter which one I use ;-). Parties get complicated for leftovers as it is social and we loose control over what we would normally do. I often chill meats immediately while carving, into a small platter or bowl and into the fridge, make stock after, then add chilled stock to the meat for the freezer. (knowing i'll have leftovers)...not always possible. NewYears was easy as we had so much ham. Half of the ham, sliced, went into the fridge early. I now have ham/veg stock with big ham chunks for soups. Rather than make a big soup, then freeze, i freeze parts. Soup 'kits'. Saturday, while multi-tasking for a SuperBowl party, i made a bone broth as i was prepping so much stuff anyway and had lots of veg going, chopping... Nice meal, kitchen clean, dishwasher started, party prep done, i turned off the stock and sat down for a brief rest....fell asleep. DH dealt with the stock. Woke at 3am and had no clue what happened. (a dozen questions later) He did great by removing solids, straining, adding ice, chilling in the downstairs fridge....un-covered. Thermopen temp, containered and labeled and frozen. Our gut systems are designed to handle all messes of bacteria with no issues. Compromised is young and old or dealing with any number of infections...medications, antibiotics....if your system is fighting something, it is working hard to deal with it. No need to add to a weak immune system working overtime. Friends and family trust my cooking above all others as i cook fresh organic stocks and fresh organic produce especially if in chemo or under health stress.

My hold time is a week for cooked meat. Maybe a little less in the summer.

now is about the time i would get out the bread.. ketchup and ML ... to make cold meatloaf sandwiches ... often better than the original meal ... lol ...

i might also add ... if it was not cut previously ... and it still bothers you ... trim off the skin .... inside integrity should be 100% ...

What? You don't eat leftovers? That's what the refer is for. Most of the time, those leftovers have been sitting out thru dinner and beyond before ending in the frig. I would normally expect regular leftovers to be good for several days. In your case of uncut, perfectly stored, I would expect several more days.

I would have said good for 4 days but first checked stilltasty.com. They agree, 3 to 4 days if stored correctly. You're good, it's only 3.

Plus, all the sourced recommendations include the CYA period. If the government or Mayo Clinic or some other authority tells you four days, that means you have plenty of leeway. Their numbers are so that there is no small possibility that it could in any way ever have a problem that would come back and bite them, not how long it actually takes for the food to go bad.

There was a recent publicity round from a natural resources group or something, trying to educate people about food quality and how to not waste because of the CYA numbers. Huge amounts of perfectly good food are ditched in the USA because of expiration dates rather than actual rot, mold or decline in quality.

What can happen is that it dries out in the fridge. If you heat it with some sauce (even just ketchup), you'll kill any transient bacteria (that probably isn't there anyway), and add back moisture. If it's been cold and sealed, and doesn't need the sauce, I wouldn't hesitate to eat it as is.

Meatloaf, is it still safe to eat?
