7 day cooked Quinoa safe to eat?

I made a chili last friday and one of the ingredients was cooked quinoa. I was thinking of doubling the recipe so I doubled the quinoa and then of course it was too much so I had some leftover and planned to make a quinoa tabouli (sp?) later this week. Well it was a very bad week and I never had time to do so and the quinoa is still sitting in my fridge. Is it safe to eat? I did a search and am getting different answers.

Well, I would . . . As long as it doesn't smell or taste off, if it is pasty that's a bad sign.

It depends on how cold is you refrigerator, how much salt you used, and what else is in it.

If it is just quinoa, what is the worst thing it can turn into, wine?

SLC, sorry I didn't get get your message until tonight. Here's a couple of cajun shrimp dishes. Sounds like you're adding some great stuff to your repertoire. I really don't mind cooking as long as I don't have to deal with leftovers, so it is actually fun planning and cooking for company once in a while. Shrimp is my favorite seafood and I love creole-cajun dishes. CAJUN STYLE BROILED SHRIMP Serves 2 as an appetizer 5-6 uncooked shrimp ¼ cup butter, melted (½ stick) 1 Tbsp. Louisiana hot sauce (Franks Red Hot or Crystal are good) 2 cloves garlic, pressed ¼ tsp salt ½ tsp coarsely ground or cracked black pepper ½ tsp finely chopped fresh parsley Pinch dried rosemary Lemon wedges Prepare the oven to 400 degrees F. Shell and de-vein the shrimp. In a small baking dish, combine the melted butter with the hot sauce, garlic, salt, cracked pepper, parsley, and rosemary. Stir. Arrange the shrimp side by side in the baking dish and bake for 6 to 8 minutes. Immediately broil the shrimp for 2-4 minutes or until the shrimp are done, but not chewy. Squeeze some lemon juice over the shrimp. Serve the shrimp sizzling hot in the baking dish This is from Ruths Chris Steak House and in keeping with their New Orleans flavor of many of their dishes. CREAMY CAJUN SHRIMP LINGUINE From Cooking Light Magazine Serves 4 1 cup water 1 can (14 oz) fat-free, less sodium, chicken broth 6 oz. uncooked linguine 1 pound med. Shrimp, peeled & de-veined 1 ½ Tbsp. butter 1 large red bell pepper, ½" slices ¼ tsp. salt ¼ cup fresh flat-leaf parsley 1 8-oz pkg. pre-sliced mushrooms 2 tsp. all-purpose flour 1 tsp. Cajun seasoning 2/3 cup half-&-half Combine 1 cup water & broth in Dutch oven; bring to boil. Break pasta in half, add to pan. Boil, cover, reduce heat and simmer 8 minutes. Add shrimp to pan. Cover and simmer 3 more minutes or until shrimp are done; drain. Melt butter in large skillet over medium heat. Add mushrooms and sliced red pepper; saute 4 minutes or until moisture evaporates. My daughters spent part of their childhood here in Spain where it was often customary to give the children a few drops of wine in a glass when it was being poured for the adults at the table. But it was diluted for them with a good squirt of the ever-present mesh-covered squirt bottle of carbonated water that graced most tables during that time. It was used for diluting drinks or drinking straight and was useful for moistening a napkin to mop off any food spills on your clothing while you dined LOL. If you see old photos of Europeans dining in restaurants or even at home pre-1970s you will often see the familiar mesh-covered sifon bottle on the table. I always had one on my dinner table. We would take the empty bottles back to the corner store and for a peseta or two (think cents) get a full bottle in return. (Now does that make me sound old!) This is one way I have made salmon and it was good. I'm accustomed to cooking with wine and wouldn't worry about serving this to children...but you could just give a small amount of the sauce if you were concerned. Here's how it looked when I made it: - Makes 4 servings. 1 teaspoon salt 1 teaspoon dry mustard 1 teaspoon dried thyme 1/2 teaspoon ground black pepper 4 (6-ounce) salmon steaks or fillets 2 teaspoons honey 3 teaspoons olive oil, divided 8 cups spinach leaves 1/2 teaspoon minced peeled garlic 2 cups red seedless grapes, halved 1/2 cup dry red wine Combine salt, mustard, thyme and pepper; mix well. Rub salmon fillets with honey and sprinkle with half the seasoning mixture. Heat 2 teaspoons of olive oil in a nonstick skillet. brown both sides of salmon fillets. I also agree that 145F is way overcooked for nearly any beef I might consume. Commercially obtained ground beef is my exception to that, I just don't trust the stuff and I eat it well done when I have to consume it, like in a restaurant. The chances of trichinosis from raw pork is minute. There were about 400 cases in the US last year, most from rural areas which grow and slaughter their own pork. The problem came from the producers feeding pigs raw meat scraps, something which is now forbidden by government regulations for commercial operations, although I'm not sure that's enforced very stringently. Anyway, if there are 327 million people in the United States, the chance of getting trichinosis from undercooked pork is about one in 817,000, if my math is correct. Annie

Nice article. No exactly up to date but close. He is very busy. Last up-date was March 30th. I'm most respectful of those being cautious. Irresponsible to not be. And does not take much extra time at all. Once a system is in place. Too many un-knowns. Yes, every hour decreases the viral load if it can't find a host. We are not getting many deliveries but all delivery persons are wearing masks except for one last week and I was pissed. Fortunately not perishable so I left it outside for the remainder of the week. Not 100%. So extra precautions makes sense to me. Masks are mandatory here in NY. We are only no contact in my household. Even with lifted openings. My surrounding area north of the city is still no contact. Why our numbers are down. The risk takers may/could find themselves in horrid financial ruin after 2-4 weeks hospitalized, survive, and have some big bills. Or funeral costs and family/friends suffering the loss. I would be fine supporting hot food take-out. We will not because I like cooking at home. But a roast chicken with hot sides?. Easily re-heated. Then a nice healthy stock with misc crisper drawer veg. Only the exterior of any take out could ever be infected or the packaging. I have an outdoor folding table. We decide how to deal each delivery. So easy to be careful. I had an enormous head of red leaf lettuce come in my box last night. Pulled off the outer 5-6 big leaves, bagged, went into downstairs storage. I will quickly blanch, ice bath, and use for a warm salad maybe a few days in the future.. Also the veg box spent time in transit. The inner leaves are best anyway. Having some of that tonight. I wash as the bags come upstairs and straight to the sink/soap/wash station. Fruit, squash, avocado, etc, They get a soap scrub with a soft nail brush. At least my kitchen fridge is de-covided. Everything else is quarantined. Cold temps like a fridge can suspend the viral death time but I agree rather low at the time it gets to that point. A freezer can hold a virus for maybe a year but again most likely a low viral load by the time it hits the freezer. We know so much more now. Close indoor contact. Wear a mask. Just a simple dealing with pantry moths 8-10 years ago. What worked was using all two dozen suggested methods. Not just one or two. (safe organic)...what eventually worked I have no idea. Combo treatment was the best solution.

Personally, I would toss it, but would consider it borderline safe if:

-The refrigerator temperature has been colder than 39-degrees F.

-Not a lot of opening and closing the refrigerator (which raises the temperature each time).

-It doesn't smell sweet(ish) or fermented, or has mold growing on it,

-It hasn't been in-and-out of the refrigerator - moving from a safe cold temperature to room temperature several times during the week. As an example, families who take milk out of the refrigerator and let it sit for a prolonged time at room temperature before placing it back in the refrigerator may find their milk sours faster than someone who uses what they need and immediately places it back in the refrigerator and maintains the colder than 40-degrees F food safe temperature. The longer it sits at an unsafe room temperature, the faster bacteria grows.

-I would also suggest it be thoroughly cooked if you decide to use it, and not used for a cold salad type dish.

There are so many spelling variations for "tabouli", they all look misspelled to me no matter which one I use ;-).

Tabbouli, Tabbouleh, Taboula, Tabouleh, Tabouli, TabboulÃÂ© or TaboulÃÂ© (and probably others)

Thanks for the replies I decided to toss it because I again did not have time to use it today and figure I'd rather not risk getting myself or Dh sick to save a dollar in quinoa. Dh's father past away last Friday night and it was quite a rough week. Today we had to meet the priest at the grave site for a prayer and ritual of eating koliva (wheat berries mixed with raisins walnuts and parsley) and tossing some of it on the grave.

Sorry about your stressful week and loss.
I'm glad you tossed it. Sometimes emotional stresses can weaken your defenses and leave an opening for digestive turmoil. A normal healthy week and all might pass fine but i have a 3 day limit, DH will take that to 4days. My pups have no limit.
I treat any cooked grains just like any other leftovers. Cool quickly and into the fridge. Freeze what i don't think i will be used within a couple days. After 24hrs i like to bring any leftover back up to a hot temp before using.

A forum exists somewhere for chefs and caterers that help each other through some trying recipes dealing with large quantity. Pretty interesting and difficult getting all the elements prepped and safely. One company does prepared meals for the elderly and has in-house testing. They have witnessed a change in cooked grain after 36hrs even quickly cooled and kept very cold. So they limit the use to 24hrs for safety reasons.

Our systems are designed to easily deal with day to day toxins/bugs/environmental crud.
Best to not intentionally add more stress to that process.
