Reinforcing exposed keys on plaster walls, and plaster...

I'm in the middle of a major kitchen remodel which has necessitated removing walls to replace termite damaged studs, bad plumbing, wiring, etc. The plaster lath and keys in several other rooms are exposed. (Of course, way too many of the keys are missing.) While the lath and keys are exposed, is there any way to reinforce them? What about something to reinforce the sections where the keys are missing? I want to save the plaster walls in these rooms.

I sincerely appreciate any advice! I love my old house and want to keep the good features.
