Fish

I no longer care for tilapia, maui maui or a bunch of other types of fish. I don't even like salmon although I will make an exception to salmon when once a year red copper river salmon hits the market shelves.

I do like arctic char but it also only makes an appearance on the market shelves once a year. Have you tried this fish. If you have...what thoughts do you have. If you haven't tried arctic char... try it...you are in for a treat. I can't remember exactly when it hits the shelves but I think it may be in the spring. I buy it at Trader Joes. Give them a call and they will be able to give you the month they expect to have it in the store.

Hard to believe but I have developed a taste for perch. It just seems to hit a chord with me now. Breaded and fried it makes a tasty simple fish sandwich. My tastes seem to be headed downward to simplicity rather than upward to a gourmet level. Is perch ever on your shopping list.

I also enjoy soft shell crabs. Mario's Eatery place had some of the best looking soft shell crabs I have seen anywhere. Priced at about eight dollars each. I haven't found a source for frozen crabs yet so I am limited to the times they hit the market shelves generally in the spring.

Breaded fried clams are a source of joy for me. However, there is not one store in the size of a city like Chicago that makes them. I bought a mini wok and I am going to try my hand at frying them. If you are into this, any tips would be helpful before I embark on this effort.

I am fortunate in that I have about five stores within walking distance to shop at. I have noticed a trend in say the last three years or so to upgrade their stores and products. This is true even for a small local grocery store I shop at. A large supermarket store has now added a live lobster tank to its store. Hooray... I am now able to have fresh live lobster when ever I want and at a reasonable price. Do you have access to lobsters or do you even eat or like lobsters. This supermarket has also added an artisan bread area. I have had some pretty decent bread recently held back only by my waistline crying stop at every bite. Back when I was actually doing quite a bit of cooking I liked to make a fresh loaf of bread every couple of days. I have always felt that it added a ton of enjoyment and atmosphere to a dinner table. My hat is off to these stores for their moves to upgrade both their products and facilities.

I enjoy shrimp any time any way. Also scallops. Here is a simple dish I make quite often. This is a recipe from Roy Yamagochi. He likes to pair it with seared sea scallops. I like that combo too.

Edamame Mash

Note: I increase the edamames to 8 oz.
Also I buy the beans already shelled to make it easier. These are purchased frozen. I cook them a bit longer than the recipe calls for to reach the tender stage.

4 oz fresh, cooked and peeled edamame (soybeans)
1/4 cup heavy cream
1/4 cup unsalted butter
Salt and pepper

Cook the edamame in a pot of salted boiling water for about 10 minutes or until soft. Drain and puree the beans with a hand blender.

Add the cream and butter. Season with salt and pepper. Serve warm.

There are a lot of other fish types out there that I have not tried. Perhaps I am just a bit squeamish at times. Do you have any particular fish that you are focusing on right now.
