Pick one from each tree and taste.. Sometimes apples can ripen at diferent times even on the same tree. I had a couple that were a bit dry and mealy, but most were nice and crisp and juicy. The two trees I have do ripen at slightly different times, and most are always green with just a red blush on the exposed side. I picked all from one tree and most from the other so far, and have already made a big batch of apple pie filling. The spices used were cinnimanon, nutmeg, ginger, and some cardamom. These apples remained firm even after the whole batch was brought to a boil. I use some added acid too, because I prefer a thicker filling, and had used Splenda as the sweetener. Love that hand crank apple peeler, corer, slicer. Turn the crank and your apple is all done in 3 seconds or less..

About the only thing I can think of is to hot pack the apples plain, using water or unsweetened apple, white grape or pineapple juice instead of a sugar syrup (per NCHFP: "In canning regular fruits without sugar, it is very important to select fully ripe but firm fruits of the best quality. Prepare these as described for hot-packs for each fruit, but use water or regular unsweetened fruit juices instead of sugar syrup. (For more information see additional publications for individual fruits.) Juice made from the fruit being canned is best. Blends of unsweetened apple, pineapple, and white grape juice are also good for filling over solid fruit pieces. Adjust headspaces and lids and use the processing recommendations given for regular fruits. Add sugar substitutes, if desired, when serving.") You could then use them in a lot of different recipes. I bought a red variety of malay apple last summer, about 2 ft tall. Planted in the ground without any amendment , move it three times and now is about 5-6 ft tall and looking happy. I am thinking of air layering it because the location is not ideal but the plant is too big to move. As far as I know, the plant/tree is very large when mature. I remembered (from my childhood before moving here) them as being as big as mango tree, must be more than 30 ft tall.

Not sure I see the point in an Apple Watch without cellular service. I'm looking forward to seeing the new models when they are in stores. If usable by a blind person, it will make it possible for DH to have connectivity at the gym without having to carry a phone. Also, like the idea of fall alert. (He once fell and dislocated a shoulder in a confusing and icy bit of construction on city sidewalk. I could have been on my way to him much faster with an alert rather than the time it took him to get sorted out and call me.) 2katz4me, the bands are fairly easy to change.
