JT, I replied to your post and at least one other, what a pain that GW can't recover them. I see no reason not to put vinegar in an acrylic jar because reactivity is more a problem with metals, especially stainless & aluminum. You may leach out some plastic molecules, but water will do that too, and you probably won't get as much as you would get microwaving leftovers. This was sold as a food-safe canister, right? Even though acrylic is generally safe for food, canisters for crafts etc. might be processed with poisonous stuff. Below is a link to an acrylic tupperware pickle jar that I will take as proof that pickles can be stored in acrylic. Ken is right that pickled eggs were mentioned on another thread, but that was about egg cubers, so if you want to fill your acrylic canister with cubical eggs, you can search up that thread. Hi Linda Lou - nice to hear from you - and congratulations on your weight loss!! Also appreciate the no-lemon advice in my recipe. fearlessem - That sounds like an excellent filling for them - will give it a try next time. I never make them the same - it is usually some form of meat - beef, chicken, hamburger, - don't believe I've tried pork yet, sometimes pinto beans. This last batch, I used hamburger with onions and spices, and covered the enchiladas with jack cheese, baked until melted. The toppings can vary - I like to "build" a salad on top - such as shredded lettuce, cut tomato, or avocado, then sprinkle vinegar and olive oil on top. The original recipe recommends sour cream - and that also would be good, but I think a nice guacamole would too. Of course a salsa with tomato, pepper, onion, etc., also in the running. This last batch found me without any lettuce (growing season too late) so used some sprouted alfalfa and chopped garden fresh tomatoes - for my topping. Pretty crazy, I know, but fresh veggies just seem to go with it. (and a little glass of Piasano wine - heh heh). Bejay

Just listened to a piece on NPR this morning in which it was mentioned that there are still shelters that sell dogs and cats to research facilities. The practice is called pound seizure. They only keep the strays for the requisite 5 days, so if you don't get there in time, you are out of luck. I think they said only 17 states outlaw the practice. Maybe we should all check with our local shelters and ask if they do this. One person on the show said she got such an evasive answer that she knew her shelter followed that practice. Depending on what you find out, you could also organize to have the laws in your state changed. I will link a website I found and here is what it said about Virginia laws. The first part worried me, but the second part appears to ban pound seizure. "� 3.2-6547. Acceptance of animals for research or experimentation; prohibition No person shall use or accept for the purpose of medical research or experimentation any animal bearing a tag, license, or tattooed identification, unless the individual who owns such animal consents thereto in writing. � 3.2-6557.
