Remember those with the grape jelly/apple jelly and chili sauce?

Well, today, was water gals potluck Christmas party.

I made these and they were a big success.

Cranberry meatballs

2 pounds ground chuck

2 large eggs

1/3 cup dry breadcrumbs

1 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon thyme

1 (16-ounce) can cranberry sauce OR you can use the whole cranberry suce.

1 (12-ounce) jar chili sauce

1 Tablespoon brown sugar

2 tsp lemon juice

Combine first 8 ingredients in a large bowl. Shape mixture into about 54 (1-inch) balls.***I made 75 with smaller balls

Cook meatballs, in batches, in a large skillet over medium-high heat until browned (about 5 minutes); remove meatballs from pan, and drain well on paper towels.

Stir together cranberry and chili sauces, sugar and lemon juice. in a large Dutch oven over medium heat, and cook, whisking occasionally, 5 minutes or until smooth. Add meatballs; reduce heat to low, and cook, stirring occasionally, 15 to 20 minutes or until centers are no longer pink. **Because my meatballs were smaller, cooked in 10 minutes.

***The thyme, etc added an extra delightful taste to the meatballs.

I sure am missing our annual Superbowl down at my sister's house, but her DH has to have surgery (heart valve replacement) soon so, understandably, she wasn't up for it. But DHarry and I are having SB food anyway. We're having wings with celery and blue cheese ranch dressing, loaded potato skins, bacon-wrapped water chestnuts and a sausage, cream cheese and Rotel tomato dip with tortilla chips. So very not good for us! Maybe I'll put out some broccoli to dip in the dressing and sausage dip to allieve my guilty conscience. GO COLTS!!

I think on the surface any Italian-style meatball recipe is going to be pretty much the same thing. One or more types of ground meat, some herbs and spices, a binder, probably some cheese, maybe a surprise ingredient or two. Yet I've eaten many more bad or "just ok" meatballs than great, stand-out meatballs. That tells me the subtle differences in the recipes really make a difference. I'm not sure that I've seen a recipe with buttermilk before, and I know I've never added prosciutto. Both sound good to me. Here's the ingredients list of meatballs from a Gourmet recipe that I made a while back. Nothing "different" here except perhaps the lemon zest. But I'll tell you that they were hands down the best meatballs I've ever made and among the best I've ever eaten. Don't know why, but they were. 2 medium onions, finely chopped 1/4 cup extra-virgin olive oil 10 garlic cloves, finely chopped 3 cups torn day-old Italian bread 3 cups whole milk 6 large eggs 2 cups grated Parmigiano-Reggiano (1/4 pound) 1/3 cup finely chopped flat-leaf parsley 1/4 cup finely chopped oregano or 1 teaspoon dried, crumbled 1 tablespoon grated lemon zest 1 1/2 pounds ground veal 1 1/2 pounds ground pork 1 1/2 pounds ground beef (not lean)

Bob - there is no need to explain your variation on Swedish meatballs. Even if you used a pre-made meatball the sauces can vary greatly. One of the Scandinavian cooking sites I read lists a number of variances on the sauce. Some include a red wine, some sour cream and even one that is a sauce of sour cream and shredded gjetost. I'll pass on that one. And Beatrice Ojakangas a well known Finnish Minnesota author of several cookbooks lists many variations of the sauce adapted over the years. Just because someone has not heard of it does not mean it is not correct or wrong. I think your variation of the recipe used for a large group sounded good and one I will save for future use. The recipe for meatballs I use includes beef and pork, bread crumbs, eggs, milk, a couple Tbsp of red wine or sherry, nutmeg, allspice, garlic, white pepper and salt. The sauce is a cream based sauce, using cream or sour cream, beef broth, nutmeg, sometimes dill weed, sometimes sherry and sometime white wine. The Scandinavians (Swedes, Norwegians, Danes, Finns and Icelanders) were very creative with this recipe. They used what they had on hand. I believe they are all based on the same concept. A meatball with a sweeter taste and a creamy sauce that could include a variety of ingredients. It's kind of like meatloaf or chicken soup. Many variations - none are "correct". Different recipes work for different people. I bet your party was wonderful - not so sure about the banana suit!

I think that the best basic meatball recipe is this one. I use it as my guideline but adjust the seasoning to suit my own taste. Don't be afraid to use the eggs. Home Cookin Chapter: Recipes From Thibeault's Table ================================== adapted from: Nicolina DiSpirito Serves 4 to 6 My own Sauce 1 tablespoon olive oil 1/4 onion, chopped 2 or 3 cloves of garlic minced 2 cans of quality tomatoes season with basil, salt and pepper. Rocco's Mama's Meatballs 1/2 cup chicken stock 1/2 large sweet onion, rough chopped 4 cloves garlic, rough chopped 1/2 bunch parsley, chopped 1/2 pound ground beef 1/2 pound ground pork 1/2 pound ground veal 1/2 cup breadcrumbs 5 eggs, lightly beaten 1/2 cup grated Parmigiano Reggiano cheese 2 to 3 pinches chili flakes 2 to 3 pinches salt Olive oil, to coat hands and for browning meatballs Cooked spaghetti (optional) (Note: add Basil, oregano, rosemary, fennel seed, etc.) Make the sauce: Heat oil in a large saucepan. When oil is hot, sautÃ© onions until translucent.Add the garlic and the tomatoes. Simmer. when the meatballs have been browned add them to the sauce and simmer for at least one hour. I usually use grape jelly and chili sauce but I think I just might prefer the cranberry sauce. I was going to make meatballs tonight for dinner but made a meat sauce instead.

sounds delicious, I make the grape jelly/chili meatballs every Christmas Eve, a family tradition I started in memory of my beloved mother-in-law, I will have to try this one too.

The 1st year my DD was married, her DH made these and brought them to the family reunion and what a hit...We knew right then, DD had married a winner....

I made meatballs instead of hamburgers by adapting and expanding this recipe. It's for Hamburgers Walter Trohan and serves four (as hamburgers):

1 Lb. Ground Round
1 can (4 1/2 oz.) Deviled Ham
Salt, Pepper
Roquefort or Blue Cheese
Dry Red Wine
Butter

Mix ground round and deviled ham. Add a *little* salt and freshly ground pepper to taste. Cut cheese into squares and mold meat around cheese. Marinate in red wine, covered, in refrigerator, for about 3 hours. Cook in butter plus a bit of the marinade. Remove to plate. Add remaining marinade to skillet and heat to a boil. Serve meat hot with marinade. (I put mine in a chafing dish for buffets.)

My water aerobics group is thinking of putting together a cookbook. Sell it at our health club and proceeds go to kids in need camps, etc.
