Linda, I used 4 20 oz cans pineapple and double the ingredients. And it turned out enough for the jars that I have.

****I broke my 4 inch cinnamon stick into 4 ONE INCH and place a stick in each jar along with couple whole cloves that were in the pan.

Spiced Pineapple Pickups
1 Â 1 pound 13oz can pineapple chunks

¾ C vinegar

1¼ C granulated sugar

Dash salt

6 to 8 whole cloves

1 - 4 inch piece of stick cinnamon

A day or two before servingÂ.

Drain the syrup from the pineapple.

To ¾ C pineapple syrup, add vinegar, sugar, salt, cloves, & cinnamon, Heat in a sauce pan for 10 minutes. Add pineapple, bring to a boil. Put into refrigerator to cool THEN

Pour into an air tight containers and refrigerate

To serve. Drain pineapple and serve ice cold with a toothpick.

***Serve it as you would any pickle at your table. Great with ham/turkey!

Just took one of the larger jars to DF as part of her Christmas. Asked her if that would be enough for Christmas.

After she tasted she said DEFINITELY NOT! :O)

I'll have an extra jar just for her.

Sounds delicios-I love pickles and I love pineapple. I've tried pineapple salsa and it's great!

What does it taste like Glenda? Is it spicy, does it taste sort of like pickled watermelon rind? just sweet spicy pineapple? I can't imagine, try to describe it for me. I'm interesed.

Oh, you get the vinegarish kick, with the sweetness of the sugar and the spiceiness of the cloves and the cinnamon.

You DON'T eat a lot. Like you eat one pickle spear! Maybe two or three pineapple chunks.

MY MIL always made them, and after she was no longer in my life, I made them and they are always well received.

about 20 yrs ago i used to can & pickle fresh pineapple w/ a similiar recipe but included whole allspice, a couple red pepper flakes per jar and some corriander. it was mild pickle-like but also like mulling spice w/ a smidge of heat. i really loved it, it was yummy drained, heated and served over vanilla ice cream! i should do some this holiday season since fresh pineapple is so cheap down here. i think i just might...~ liz

It really compliments Turkey and ham.

I made this for our extended family Christmas dinner which we have just had. I was worried they might not like it because they're not terribly adventurous, but it was a great hit, especially with DH. Thank you Glenda!

I made 1 jar, just using 1 can of pineapple. Turned out fine, a bit tangy to say the least.

joann, if you made use it for just ONE can of pineapple, did you adjust the liquid, etc.????

Use white cider vinegar, but apple will work as well.

It does have a kick, but so do cucumber pickles.

I found this recipe, if you need just 1 jar here it is.

SPICY PINEAPPLE PICKLES

1 (20 oz.) can pineapple chunks
2/3 c. sugar
Dash salt
1/2 c. vinegar
5 or 6 whole cloves
3 or 4 whole allspice (opt.)
2 sticks cinnamon
Red & green food coloring

Drain pineapple, divide and put into two refrigerator dishes. Combine sugar, salt, vinegar, cloves, allspice and cinnamon and bring to a boil. Simmer about 10 minutes. Divide into 2 portions; add green coloring to one portion, red to the other. Pour over pineapple chunks in the refrigerator dishes; let cool before returning to refrigerator. Best if prepared several days in advance to allow flavors to blend. Spicy cinnamon "red hots" may be used instead of the stick cinnamon.

I used 1 stick of cinnamon & 3 red hots for the jar. It turned it a light pink. I didn't do the 2 dishes or colors I followed your recipe, I also added just a bit of the pineapple juice

I don't think I'd like the food coloring.

I used apple cider vinegar because that's what I had. It was great!
I'm not sure about food colouring either. Pink is the colour pineapple turns when it is mouldy. :-P
