looking for a fudge recipe...

The one I want is the one someone here took to Sandy IA's home on the first KT get together.

It might have been Mush but I can't remember for sure.

I have asked for it before...but I think I've gotten it confused with another one I have.

If I remember right it was a Microwave one...

I bought stuff to make peanut butter fudge for Christmas but got to wore out to make much of anything.

The kids will be here tonight but I can't find the recipe I was looking for.

This is the microwave one I have in Our recipes. You can add PB to it, its pretty good. I don't know anything about the one you want.

Quick & Easy 2 Minute Fudge (microwave)
This is very fast & easy. I ususally add a heaping spoon of peanut butter to mine

1/2 cup butter
3 1/2 cups powdered sugar
1/2 cup cocoa
1/4 cup milk
1 teaspoon vanilla
1/2 cup chopped nuts

Place ingredients (except nuts) in bowl; do not mix. Microwave on high power for 2 minutes. Beat with electric mixer until smooth. Fold in nuts. Pour mixture into buttered 8x8 inch dish. Refrigerate 15-20 minutes until set before cutting into squares.

I think Ruthie gave me this recipe for microwave fudge. It is so easy that it's hard to believe it tastes so good.

MICROWAVE FUDGE

4 Cups Confectioners' Sugar
1/2 cup Unsweetened Cocoa Powder
1/4 cup Milk
1/2 cup Butter
2 teaspoons Vanilla Extract
1 cup chopped nuts (optional)

Grease a 9x9" dish
In a microwave safe bowl, stir together confectioners' sugar and cocoa. Pour milk over mixture and place butter in bowl. Do not mix.
Microwave until butter is melted (about 2 minutes). Stir in Vanilla (and nuts, if desired) and stir vigorously until smooth. Pour into prepared dish.
Chill in freezer 10 minutes before cutting into squares.

Ah - I believe I know what you're talking about. Many, many years ago, DH and I spent the weekend with a friend in Columbus, OH, where we used to live. She made these incredible brownies - a fudgy bottom layer, about a quarter-inch of icing in the center and a thin, hardened layer of unsweetened chocolate on the top. I found a similar recipe once in Woman's Day, lost the 2nd page, wrote to Woman's Day for another copy, but the one they sent wasn't it. Tried some other recipes, but could never duplicate it. A couple nights ago, I was looking through cookbooks trying to find a recipe for a cookie exchange, when I came across this one. I'm about 99% positive that this it. I would probably leave out the nuts, only because I don't remember my friend's recipe having nuts. Tint the frosting layer green and I think you might have it! I haven't tried this recipe yet, but plan to do it soon, b/c I think they'd be good for Christmas, especially with a green mint layer. Triple-layered Brownie Squares (from Sunset Cookies, 1991) 2 ounces unsweetened chocolate 3/4 cup butter 1 egg 1/2 cup granulated sugar 1/4 cup all-purpose flour 1 cup chopped almonds or pecans 2 cups powdered sugar 1/2 teaspoon vanilla 2 to 3 tablespoons whipping cream For the first layer, place 1 ounce of the chocolate and 4 tablespoons of the butter in the top of a double boiler over simmering water (or in a small pan over lowest possible heat). Stire until melted. In a small mixing bowl, beat egg and granulated sugar, then gradually beat in chocolate evenly in a lightly greased 9-inch square baking pan; bake in a 350 oven for 20 to 25 minutes or until brownie feels dry on top. Let cool completely in pan on a rack. For the second layer, place 4 tablespoons of the buter, powdered sugar, and vanilla in small bowl of an electric mixer. Beat together; then beat in enough cream to make frosting spreadable. Spread evenly over cooled brownie. Well, mine has marshmallow cream, Reese's peanut butter chips, but no vinegar. My kids love it, and it's easy and pretty foolproof, as long as you cook to soft ball stage before adding the chips. I find that 5 minutes isn't long enough, I always end up cooking at least 7 minutes. I've made it using a cup of peanut butter instead of the chips and it is a bit softer, but still good. FANTASY FUDGE 3 cups sugar 3/4 cup real butter 2/3 cup evaporated milk 12 oz. Chocolate chips 7 oz. Jar marshmallow cream 1 cup chopped nuts-optional 1 tsp vanilla Bring sugar, butter and milk to a rolling boil for 5 minutes, stirring constantly. (I test it at this point to make sure it has reached soft ball stage, sometimes it takes longer, especially if I make a double batch). Remove from heat and stir in remaining ingredients until chips are melted and fudge is smooth. Pour into a greased 9x13 pan, let cool to room temperature and cut into slices. VARIATIONS: Peanut butter fudge: Sub peanut butter chips for chocolate and omit nuts Cookies and Cream: Sub white chips and stir in 1 cup crushed Oreos instead of nuts Creamsicle Fudge: Sub white chips for chocolate, omit nuts, pour half of the fudge into pan. Stir 2 tsp orange extract, 4 drops yellow food coloring and 3 drops red food coloring into remaining fudge, pour orange fudge over plain fudge and marble in with knife. This is the one I always use:

Micro chocolate fudge

1 bx conf sugar
1/4 cup milk
1/3 cup cocoa
1 stick margarine
1 tsp vanilla
nuts optional

Dump in glass mixing bowl, cook 2 min on hi. Stir until mixed. You might have to micro couple times until all is melted and combined. Then stir in vanilla and nuts if desired.

For peanut butter fudge, omit the chocolate and add 1 cup pb. Pour into greased 8x8 pan put in refrig and chill. cut in to squares

On this mornings news show, they had a chef on making appetizers that could be made ahead, and one thing he made, I was going to log on and get the recipe, but forgot to do it. It was for Whiskey fudge! Harry Smith tasted it and said it was really good. Actually how bad could it be, made with whisky? LOL

Laura IA Fudge
3/4 cup butter
3 cups sugar
2/3 cup evaporated milk
1 12 oz. package semi-sweet chocolate chips
1 7oz jar marshmallow cream
1 cup chopped nuts (optional)
1 tsp vanilla
Lightly grease or spray 13 X 9 pan
Microwave butter on high for 1 minute or until melted
Add sugar and milk, stir well
Microwave on high for 5 minutes, stirring after 3 minutes.
Mix well, scraping bowl.
Microwave on high for 5 1/2 minutes, stirring after 3 minutes
Gradually stir in chocolate chips until melted.
Add remaining ingredients, mix well.
Pour into pan, and cool at room temperature.
Makes about 3 pounds.

Thanks CR...I think that is the one I tried at Christmas...so it must not be the recipe but my new Microwave. It sat up so quick I couldn't get the marshmallow stired into it.

This new microwave is a 1200 watt...I hate it.

I wish I would have paid more attention. I think my old one was 1000 watt

I'll have to figure out how many minutes to take off the recipe.

And I bought the milk choc. chips instead of the semi sweet. Wonder if that will taste as good.

I think the milk chocolate doesn't melt as well as the semi sweet, that may have been part of the problem. Also, if you happened to have gotten even just a bit of water in there, that will make it not come out right too.
