ever cooked with a spice called tanduri?

One of the funnest Christmas gifts was a bag of about 40 spices from my DS. He is in Atlanta in culinary school and went to the Dekalb Farmers Market and picked out a bunch of "different" spices for me. (I say "different" because I live in a relatively small town in Mississippi and some of these would NOT be available here! LOL) I love this gift because, like him, I love to cook. I have never heard of this Tanduri much less cooked with it so I am looking for recipes. Anybody got any information on this spice? (the name on the label is "Spicy Tanduri Red")

I've posted before that I once asked DH to pick up some heavy cream at the grocery, and he came home with a container of Cool Whip. I don't know how I was supposed to make a sauce out of that. One of the absolute weirdest experiences I ever had at a grocery store was when a woman, riding one of those mobility scooters, asked me to help her find a jar of cloves out of a wall of spices. Asked her, did she want the ground cloves or whole cloves. She looked puzzled and said, "I'm not sure". So trying to help I said, "well, what will you be using them in?" She looked embarrassed and said, "My neighbor told me to put them in my pooter." I was just about to say, "I beg your pardon" because I thought I heard her wrong. It took me a few very long seconds to realize that she had been instructed to use them as a suppository. I handed her the whole cloves and excused myself to continue shopping. I'm not sure whether her neighbor was having some fun at her expense, but I didn't want to hear any more of the story.

What I like about Penzeys is they sell almost all of their spices in the little 1/4 cup jars, which really helps me keep my spices fresh, since single-me doesn't use up spices that fast, especially the less common ones. I also love some of Penzeys unique blends. But I have to pay shipping so not much of a cost savings so I only order things once and a while from there, specialty items, etc. I can also get good spices locally so it's all good. I don't throw spices out too often, I just use them a little more liberally if they are older. Chile powders seem to hold up relatively well for me, I don't go thru the hotter stuff very fast. Paprika, on the other hand, looses its delicate flavor fast. But who cares if you are just using paprika for the color. I do some N. African/Middle Eastern and Hungarian cooking and I actually use paprika for the taste. As for having little jars of weird spices on the counter, I hear ya! But in those situations I try to find recipes I like using that ingredient. I love to experiment in the kitchen. Tumeric is so good for you, I have developed a repertoire of recipes using it. BTW, that's another spice that doesn't do well sitting on the shelf for long periods of time. I think that's why a lot of people don't think tumeric has much taste, because the taste it does have seems to fade faster than I can use it up. I like tumeric with rice and peas or spinach. It's the poor man's saffron.

I think you could try putting it in lentil soup. I've made lentil soup using Indian spices that were similar, except that they also had cayenne or other hot chili powder. You might try adding it to a white sauce or bÃ©chamel for cauliflower. I use the water the cauliflower is cooked in for my sauce. I wouldn't use too much of it, however, since a little cinnamon goes a long way. However, if you add cumin and chili to it, it will be very similar to garam masala. I agree it's probably a spice blend for making Tandoori dishes, and will contain cumin, chilli, and coriander at the very least. Possibly garlic, lemon, onion, turmeric (for the colour) and ginger added as well. The meat is supposed to come out a red colour, so often a red food dye is added. Tandoori is traditionally made on a special charcoal stove called a Tandor, but the modern version is much easier. Here's a really simple recipe for which you could use your Tanduri. Use the tanduri instead of the cumin/coriander and curry powder. Minted Tandoori Lamb 1 cup plain yoghurt 1 tablespoon ground cumin 1 tablespoon ground coriander seeds 2 tablespoons mild curry powder 4 lamb chump chops, each cut into 3 pieces 1 tablespoon chopped mint Combine yoghurt, cumin, coriander and curry powder, mix well. Toss pieces of lamb in yoghurt mixture, coat evenly. Place lamb on a rack which is standing inside a baking dish. Bake at 180Â°C for 45 minutes, turning lamb every 15 minutes. Sprinkle mint over lamb and serve immediately. Ditto for this recipe: Chicken Tandoori 500ml yoghurt 1/4 cup lime or lemon juice 2 cloves garlic, finely chopped 2 teaspoons salt 1/4 teaspoon turmeric 1/2 teaspoon coriander 1 teaspoon cumin 1 1/2 teaspoon ground ginger 1/8 teaspoon cayenne pepper (optional) 3 whole chicken breasts, split 1 onion, finely chopped 1 green capsicum, finely chopped Combine, coriander, lime juice, cumin, garlic, ginger, salt, cayenne, turmeric. Stir to mix. Add chicken pieces and toss to coat. Cover with capsicum and onions. Cover, chill overnight (or longer). Grill (broil) until done, basting with marinade throughout cooking. Jamie, "Tandoori" this is how we usually see it spelled is not a spice. Actually, the word comes from the name of a particular type of clay oven used by Indian chefs called a Tandoor. Food cooked in the tandoor is called tandoori. As the tandoor cooks at extremely high temperatures upwards to 800 degrees, foods must be cooked quickly. Because of this most tandoori foods are marinated for hours in a mixture of plain yoghurt and selected Indian spices, in order to tenderize the meat and reduce cooking time. I would assume what you have is someone's idea of what that blend of spices ought to be. There is no right or wrong. There are many good Indian cookbooks and you can find many recipes online for you to use the spices that your DS sent to you in a conventional oven. My guess is that the spices in that bag are predominately red which is how most tandoori foods such chicken, shrimp or lamb pieces look when come out of the tandoor. You can also use conventional oven set to high temperature to roast food prepared in this manner. You should be able to find recipes to tell you at what temperature and how long to cook.

We love Indian food especially tandoori. That's the reason why we know the above. Hmmmm. now that you mentioned Indian food I think we'll need to go out to eat at an Indian restaurant soon.

Tandoori chicken - yum! DH & I love Indian food. Jamie, try allrecipes.com. They have some tandoori recipes. We usually buy our tandoori as a paste in a jar, mix it with plain yogurt (drain with a strainer & coffee filter first so it's thicker) & then marinate & bake the chicken in it. I just use a regular glass baking pan.

I think I'll join nizza at the Indian restaurant.

Hmmmm! Ya'll are causing me to surf Indian Cuisine.

Meanwhile, Main Man is in the Kitchen fixin' me a "surprise". Yep...the surprise is....I get to clean up the mess. I have no idea what is is doing. I don't want to look. Nothin smells familiar.
