What's for dinner 12/28?

Laundry day, but haven't done much else. I made Alisande's curried egg salad that we'll have on croissants with a bowl of turkey chowder. I've tasted the egg salad and it's delish!

BJ/Wildchicken - thank you so much for the calendar. I always have one by now but this year I didn't buy one. And this one will put a smile on my face each time I look at it and think of you (and Suzanne LOL). Love you girlfriend! Suzanne - BJ got me a calendar that you would be so envious of. It is "Extraordinary Chickens". Believe me it is filled with chickens I never knew existed. One in particular could probably only be truly appreciated by you LOL - it's a Silkie - Non-Bearded Splash. Jan - I am happy that your visit was such a nice one. I will keep your nephew in my prayers. I am sure you and your DH will enjoy your Christmas quietness. I am way way behind this morning. We had to pick up DD#2 at the train (1+ hours away) and it was 3 1/2 hours late - the one thing I don't have to waste right now is TIME. We didn't get home until 3AM. We have a party to go to and I have a big dinner to prepare and the tree isn't decorated yet. I'm glad I work well under pressure LOL. Love to all.

Spicy Chicken Patties 1 cup bread crumbs... 1 pound chicken (skinless boneless breasts) processed 1/4 cup chopped chives (I used dry) 3 Tablespoons Mayonnaise 1 teaspoon cajun seasoning (next time I'll use a bit more) 1/4 teaspoon salt 2 large eggs Make into patties, cook in oil it said 7 mins on each side or until done Sauce 2 Tablespoons Mayonnaise 2 teaspoons horseradish 1 teaspoon minced garlic 1/8 teaspoon salt (I doubled. Next time will use more horseradish and I used a little bit of prepared mustard) serve sause over meat. I hope you enjoy it as much as we did... patti

Went all out last night... I've never done Chinese, except for an occasional stir fry, and I had a new cookbook :-) I made: Orange Chicken Shrimp in Lobster Sauce Kung Po Pork Served with Rice and some sort of oriental rice noodles, along with (purchased) eggrolls and fortune cookies. Emi and her boyfriend joined Gary and I for dinner and I received soooo many compliments. It took about 2 1/2 hours (of solid kitchen work by ME) to prepare the meal and another hour to clean up the huge amount of dishes and pans I used, so I won't be doing this often, despite the compliments. Mostly the recipes were simple, it was just co-ordinating timing and so on that was tough. The food was good, although a bit salty. The Orange Chicken was a bit of a disappointment (only to me) because I didn't like it nearly as well as I do restaurant Orange Chicken. I might have to look for a different recipe and try again. Anyway, a fun cooking and eating evening!

Caldo de Pollo!
I think it is the best pot of soup I have ever made...probably was realy hungry...and I know how much trouble I went to to skim the fat and make it healthy!

Did not serve it with tortillas or cornbread...but I did have a sip of really good tequila for dessert. (Hey, I'm still on vacation 'til the 3rd!)

We will have grilled chicken salads tonight, we need a load of fresh veggies after all the junk we have had the last few days.

it is one of my resolutions to learn to make 4-5 soups this year I know how to make none so maybe you can lead me to the KT reciepe site???

Hounds what was the soup you made?? I know pollo is chicken but what else??

LOL Terilyn!

I made the Potatoes Anna I posted on the recipe thread this morning. Had it with roast beef. Put roasted carrots around the roast. No gravy.

We had pork chops, stuffing (last of the leftover) corn (last of the leftover) wild rice, and applesauce.

Dh is cooking as we speak. He is making pork chops. Risotto and cheesy tomatos. I will add some steamed frozen veg to it for me, he is having salad.

I too, would love some good, tried and true soup recipes to try out. It is COLD here this week. Storm coming in from arctic. Single digits at night and low 20's during the day.

Check out the KT Gathering Place that Joann/FL created and click on "Our Recipes". I definitely recommend Jasdip's wild rice soup. You may have to add more broth since the rice really absorbs the liquid. It's wonderful!!
