Brava for lunch, today. Wasn't hungry, cause I got into the bag of M&M's last nite :o(

They fixed me a chicken salad, with almonds, golden raisins, honey and brava mayo and served it with their pita chips.

We're having kielbasa, home fries and a salad. Keeping it simple because I'm taking it easy today. I just finished setting the table for Wednesday's luncheon for the neighbor ladies. I am going to make some egg rolls for the luncheon and then I'm making twice baked potatoes for Christmas dinner and then I'm through for the evening.

I had peanut butter sandwich and milk for supper. Been busy baking cinnamon rolls and baked beans for part of lunch tomorrow. The boys got the hitch made and welded to my big rig today, yipee! Now I can pull my new trailer.

Tried a new way of cooking potatoes. Thinly sliced and layered with cooked onions and shredded cheese, in a muffin tin. Baked up nice and browned and tender.

Meatloaf and carrots to go with it.

I had to cook for our party at the Home with my sister Annie tomorrow. I made potato salad and deviled eggs. For my supper, I had leftover meatloaf, potato salad, and creamed corn.

PS: When I went to put the potato salad in the fridge, I realized it will be too heavy for me to carry to my car tomorrow since I'm using a cane, and still unsteady on my feet. Guess someone will have to come and get it.

We had ham steak, mashed potatoes, squash and cottage cheese with fruit.

Shirley, isn't it odd how we forget we aren't as strong and agile as we used to be? I sure hope someone will come help you--or maybe you could put the salad in two containers so you can carry out one at a time and borrow a bowl from the Home.

Glenda, how nice they made the chicken salad for you. They must know how special you are, too. ;-)

Jasdip, you always amaze me with your zest for trying something new. Those potatoes sound so good! And perfect with meatloaf and carrots. It's a wonder we aren't orange as much as we love carrots.

Sue, I don't know how long it's been since I've had a PB sandwich and a glass of milk, but I betcha' it'll happen soon. Sounds so good!

Tobygirl, what kind of squash did you have? Harry has cottage cheese with fruit just about every day for lunch. I like it with sliced tomatoes myself--or, this is going to sound so weird--sugar-free strawberry preserves. Yum!

Patti: It was a carnival squash which is a cross between a sweet dumpling and an acorn squash. I just cut in half and baked with brown sugar and butter. It's my new favorite squash, and I'll be growing some next year.

We were out all day so we stopped at Longhorns for a late lunch, got home after 6 so we had meat, cheese and veggies. Nothing fun I'm afraid!

I've never seen a carnival squash, Tobygirl, but we love acorn squash. I bake mine like you, but add a little bourbon to the brown sugar/butter mix. Kicks it up a notch ;-)

Lynn, I think this will be a week of all of us eating catch-as-catch can. A busy week for all!

Patti, I wish I could fry cabbage like my DM did. Can't ever get it just right. How do you do yours?

Jasdip, about the potatoes and onions in the muffin cups. The potatoes were raw and the onions cooked, right? No milk or other liquid? Do they warm over okay? I've made meatloaf in muffin cups.

Gadgets. I empathize with you. Sometimes I go a couple steps out the door and then realize I've forgotten my cane. I was going to suggest two containers also.

Oh, for dinner last night I had Black-eyed Pea soup out of the freezer.

Patti, sausage, mashed potatoes and fried cabbage is one of our favourite meals. Onions and cabbage fried.

Sue, I would think the potatoes would re-heat. I sliced too many potatoes, not knowing how many I would need for the 6-cup tin. It doesn't take as many potatoes as you think!

The potatoes were raw, and the onions are cooked. I sliced the onions thinly and sauteed them.

The only liquid, is the tbsp half and half over top. There's lots of butter in the onions and the cheese helps cook it all.

Dh was just saying now, how much he enjoyed them.

For the record, next time I make them, I'm cutting out the salt completely. There's enough salt in the cheese.
