We're just having spaghetti with meat sauce and a tossed salad.

Mine is still in the oven.

Boneless chicken breasts that I cut a slit in and stuffed with some herb goat cheese. Breaded with my butter, worcestershire and dijon and bread crumbs mixture.

Baked potatoes and carrots that I'll glaze with orange juice, brown sugar and butter mixture.

My butter tart squares for dessert.

Today was cookie baking day, so we did Mystery Meat in the Crock pot. Just have to make the mashed potatoes.

Mystery Meat (because it's a mystery why it's so good)
cut up one onion and throw into pot
take a hunk of beef (any cut) brown it and throw in
open one can of Cream of Celery and Tomato soup
set on low for 8 hours

(I jazz it up with carrots, mushrooms, bay leaf and Fox Point seasoning (Penzey's)

Mashed Potatoes
besides russet potatoes
butter, salt, pepper
heavy whipping cream
slice of American Cheese (we are out of jack cheddar)

Hi Jaktup! I haven't heard the term "mystery meat" since high school cafeteria :-) But anything with mashed potatoes has to be good, right? If you're new, we're glad to see you and hope you will like it here with us at the KT.

Jasdip, we didn't have your apple cobbler last night, but I am determined to save room tonight. (I have nibbled on the crust part and love the lemon taste.) I used your breading a LOT. Yummy and easy.

Georgysmom, what are you doing now that golf season is over? I know you're still busy either planning parties or dinners. What do you mean "just spaghetti"? Your dinner sounds pretty good to me!

Jeaninwa, your house is probably smelling really good about now. I haven't made a pot roast yet this year.

Glenda, fried foods always do the "burp" thing for me. I try to avoid them, but have to say Capt. D's sounds so easy and good.

Linda, is Partner's Pizza local or a chain? I haven't heard of it. What kind are you having?

I used to be very active in 1998-2001, then life took a turn and I have just (yesterday) come back. Thanks for the welcome! It used to be called That Home Site, but I was still able to hunt it down without much trouble. I have to say, the site has sure grown by leaps and bounds! I came back in search of a couple of recipes I had from Ginger from way back. They seem to have disappeared, but I have found Ginger here and sent her a request even though I know it is a long shot.

I don't get online very often, but I have been plucking a LOT of great sounding recipes off the forums.

If you're like me, Jaktup, your file of recipes is huge!
There are so many great-sounding recipes here, that I need more binders! LOL

Jskyup, if you post the recipes you're looking for from Ginger, Glenda may be able to help. I have several of her recipes from another site she visited and probably Terri PacNW may have them. She sure had some great recipes, didn't she?

Patti, she has already found the cake recipe for me! I remember that it was a little tedious to make, but OH!!! So worth it! Here it is in case you would like it.

APPLE CAKE WITH HOT CARAMEL RUM SAUCE
Caramel Rum Sauce
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup heavy cream
1 stick butter
1/4 cup dark rum

2 sticks butter, softened
1 cup sugar
2 eggs, well beaten
1 1/2 tsp vanilla extract
1 1/2 cups flour
1 tsp cinnamon
1 tsp grated nutmeg
1 tsp baking soda
1/2 tsp salt
3 medium apples, peeled, cored & chopped
3/4 cup coarsely chopped pecans

Make the sauce: combine the sugars & cream in the top part of a double boiler & cook over simmering water, stirring occasionally for 1 1/2 hours. Add the butter & cook another 30 minutes. (The mixture may look curdled but will smooth out when beaten.) Remove from the heat, add the rum & beat until smooth.
Make the cake: Preheat oven to 350. Grease a 10" pie plate or 9" square baking pan. Cream the butter & sugar together until light & fluffy; beat in the eggs & vanilla until well mixed. Whisk together the flour, cinnamon, nutmeg, soda & salt: blend into the butter mixture. Stir in the apples & pecans. Spoon the batter evenly into the prepared pan & bake about 45 minutes or until golden brown. Serve w/the warm sauce.

Jasdip, the chicken sounds great and easy. I have done a similar incision in steak and inserted basil/garlic/butter and wrapped in prosciutto. I'm trying to make the switch to more chicken and less beef, but I was raised in Ohio. It definitely sounds great.

I met Ginger, in St Thomas, for lunch, few years back. She was retiring, had her home sold there, plus her car, and was waiting to decide where in the states she was going to retire.

She has retired since, and we are no longer in touch. Have no idea where she is. She never posts at the cooking forums. So she REALLY retired.

Hi Patti. It's amazing how busy I am even though golf season is over. Friday night I had some couples over for hors d'oeuvres and we went out to dinner. I was rushing to finish up the decorating, clean up the mess I made, and make some hors d'oeuvres. Sat. I had a meeting to plan next years golf schedule, then I did my Christmas cards. Today was watching the Steelers and getting started making some cookie doughs. Tomorrow I will be making some more cookie doughs. Tomorrow night is Mexican train. Tuesday is another cookie day, Tuesday night bridge and it goes on and on. I'm trying to be organized because on the 14th I'm having my Wine and Dine Christmas party. Everybody will be bringing food. I will be making appletinis and cosmos along with sweet and sour meatballs, a trifle and rosettes. On the 16th I'm having a luncheon for my golf group. On the 21st, I'm having a luncheon for my neighbors and on the 23rd I'm having my birthday group and husbands for hors d'oeuvres, we go out to dinner and then come back here for champagne and dessert. I couldn't play golf if I wanted to. LOL Come January I go back to playing weather permitting.

Glenda, I couldn't remember for sure, but I believe I may have been Nutbckt. The other recipe I was looking for was a brownie recipe, but it would have been posted between 1998-1999. I want to say it was a blondie and had icing on it. I only made it once, but still remember them, so it had to be wicked good. I'm recently returning to cooking/baking and can't locate these two, well, now one.

Beef stew from the crockpot and I baked a loaf of bread. It was cold. It snowed. I put up the tree. My give a damns broke! LOL

I forgot to say HI Jaktup and welcome. Was a toffee brownie? I was doing a search for you and found a brownie recipe from Ginger St Thomas. It was a Toffee crunch or something brownie.

LOL, Glenda. It gets my house clean! I'm only having DS and SO for Christmas so I look forward to having people over for the holidays. Gets me decorating early. I'm a big procrastinator otherwise.

Haha, Nodakgal! But at least you have the tree up! I've been thinking about beef stew lately, and then our cold spell passed and it's going to be 79 degrees today! I bought a candy thermometer, BTW. Need to get started on Christmas stuff.

Georgysmom, you remind me of my sister--she is hosting 2 dinners, 1 luncheon and going to 2 other parties all in the next 2-1/2 weeks--and--she's in Indiana for most of this week. She's a glutton for punishment! Only difference is she doesn't bake.
