What's for dinner 12/27/10?

It's getting to be that time again on the east coast. Tonight it's meatloaf, roasted potatoes and collard greens. I made the meatloaf some time ago and sealed half of it for another day. Well, today's the day. I cleaned out both overstuffed refrigerators today and tossed a lot of stuff so it's time to start over--haha! Very cold day and the weather says it's going down to 19 tonight. Bah!!!

a very humble dinner tonight, cornbread is in the oven now. Daughter brought over homemade vegetable soup. Hubby is having soup and cornbread. I am having cornbread and milk. Grew up eating this, and still love it. Only thing different will be that I didn't milk the cow this morning for the milk. When I was small would take an onion out of the root cellar, sprinkle the bread and milk with black pepper and that was supper. In my older years, stopped the onion, but put lots of black pepper.

I have been gone most of the day and on the way home we stopped at Steak and Shake and brought home Wisconsin buttery burgers. I had a glass of milk with mine. Noon time meal was at Logan's, southwestern chicken, onion petals, fried apples, coleslaw, a yeast roll, unsweetened iced tea and a half dozen peanuts. All good today.

I tried a new recipe tonight and it's a WINNER! Arrange 4-6 chicken breasts in a baking dish. Mix 1 cup sour cream, 1/2 cup dijon mustard & 1/4 cup white wine and pour over chicken. Cover dish with aluminum foil. Bake at 350 X 40 mins., then uncover and bake 10 mins. more. Served with pasta and broccoli tonight. YUM! (Next time I'll add some mushrooms to the chicken for unneeded oomph -- we just like mushrooms.) Pat

I changed the original recipe up to suit my flavor. ASo this is mine. Patti's might be a little different. 1 can chicken broth or use your own 1Tbl olive oil 2 boneless chicken breast, chopped **** OR Use WalMarts,rotisserie, and use breast only shredded. 1/4 cup or more chopped onion 1 4 oz can green chiles, chopped ***I puree mine with my hand blender WITH juice 1 19 oz can navy beans, undrained 1 tsp garlic powder 1/2 tsp cilantro ***I use instead 2 tsp chili powder 1/2 tsp oregano 1/8 tsp red pepper Sauce chicken and onions 4-5 minutes in olive oil **If using Wal Marts cooked, saute onions only till translucent Stir in spices, broth, simmer about 15 minutes, then add beans and shredded chicken and simmer 5 more minutes, to get the flavors blended. We love it topped with fritos, shredded cheese, and a dollop of sour cream

It's 8 degrees here and breezy and we are on the verge of another storm. You all know how I feel about that so I won't say anything else! ;) Teresa I hope you and your DD don't get sick! Lots of colds and stomach flu around here. I have a roast in the crock, DH has to go to work at 5:30ish so I will have to run supper out to him. I am thinking to make it easier it will be hot beef sandwiches. Yummmmmm. Hope his is still warm when I get it out there! LOL

We went to a little neighborhood Mexican restaurant. I had a carnitas (pork) quesadilla. DH had a carnitas burrito. And of course, chips and salsa. Just a little salsa...oh my heck...it is just a tad bit too hot for me.

DH finished up the turkey leftovers and I had tacos with salsa. Cleaning out the fridge for trash day tomorrow.

Now as for tomorrow's meal...

I'm defrosting some chicken for a Puerto Rican stew that I love, but DH isn't crazy about. I tend to double or triple the recipe I like it so much and have found short cuts along the years to make it less labor intensive. I have some shrimp in the freezer I could do too? Decisions decisions!
