What's for Dinner .... Friday?

I finally was able to get out and about today after Tuesday's snow storm. Now we're in for another round starting in the middle of the night.

My evening meal will be a pork roast with sauerkraut and mashed potatoes.

So what's going to be on your table tonight?

Had physical therapy, and running late, so a quick stop at Zaxby's for 5 chicken fingers and ranch dressing.

We shared some blue crab nachos for lunch which were very good. For dinner we are going to use the remaining grilled shrimp from last night add some homemade Pico made with Vidalia onions and fresh tomatoes and lime juice a little shredded lettuce and wrap it up in a flour tortilla. I have cantaloupe and fresh cherries for desert. The wind is gusting very strong here at the beach today, I was wondering if we were going to blow away! Other than that beautiful day here today. They served home made fresh cooked potato chips with our lunch, they were fried dark and seasoned with Fajita seasoning... Omg mmm... I could eat a sinful amount of those.

Its confusing because it goes against what has been the accepted common knowledge since perhaps the early 1800's. The farmers growing them and calling them yams, are wrong. The grocers selling them and calling them yams, are wrong. The companies canning them and labeling them as yams, are wrong. The people who first introduced them to the United States called them yams, perhaps to distinguish them from the different variety of sweet potatoes that were already on the market, they were wrong too. Even some sites on the web that try to explain the difference with helpful images like this one: http://www.frugallivingnw.com/wp-content/uploads/2013/11/yams-sweet-potatoes-is-there-a-difference-2.jpg are wrong. (hint they are all sweet potatoes, despite their labels) So it is not at all surprising that what I learned at a young age from my mother and grandmother, and which was continually re-enforced every Thanksgiving or every time I visited a grocery store, is wrong. I have never eaten a true yam in my life, and seeing some of the pictures of what a true yam look like, I probably never will. Does it harm me in any way if other people choose to call some varieties of sweet potatoes "yams", no. It merely bothers the pedantic part of me a little when someone asserts something to be a fact, when they are in fact wrong.

Just made some Caesar salad dressing and topped the salad with blackened salmon for DH. I was too tired to eat myself. Maybe in a little bit. Returned home from a golfing trip with the ladies….3 days of golf and late nights. Took one day off except for Mexican train last night and played golf today. Looking forward to a quiet weekend.

Oh dear....not the ideal dinner for us! We had been invited to some close friends' home for dinner over a week ago. I asked if there was anything I could bring and she insisted that everything was covered.....she was making lasagna. She turned down my offer of a salad. I love lasagna, but I have a real problem with wheat pasta. When I make it, it's a veggie layered meal, with ricotta, Italian sausage, gooey and delicious but no wheat noodles. She had yummy appetizers, puff pastry treats mostly, which I adore but can't eat much of. Luckily, there was a veggie platter. Her lasagna smelled and tasted divine, but I knew if I ate more than a bite that I'd suffer all weekend. And NO salad! I guess I'm going to have to declare myself 'wheat free' to my friends. I've never been to a restaurant or dinner where there were zero options and this was a bit of a shock. We stopped at McDonald's on the way home so I could have their Southwestern salad with grilled chicken. Robert stuffed himself with lasagna, lol.

Lamb shanks (some really meaty ones!), rubbed with crushed garlic, salt, olive oil, and black pepper, and left to sit until room temperature and then roasted on a bed of thickly sliced potatoes and onions.

Something green...and maybe a mashed rutabaga.

We had chicken parmigiana. Instead of using the usual pasta as a side, I made latkes! I made them a couple of weeks ago and we loved them. Since I had a huge sweet potato which needed used up, I used that, and some yellow potatoes. Delicious!

Got a little warmer today, was 20 this morning & got to 40 during the day.

Dinner for hubby was sloppy joes, I had a cube steak & french fries.

I have no idea. I have been in my pjs all day reading, napping, watching tv and eating all day long. I have eaten cookies, chestnuts, toast, left over fried rice and anything else I could find. I absolutely hate days like this. I have to get dressed and be at a meeting by 7:00 and may just do a drive through after the meeting.
Maybe I'll cook a nice meal tomorrow night .

Leftover pizza and leftover green chile stew! Rainy and cold. Moose is coming home from the hospital! Been there since the day after Thanksgiving. Our vet will have a very Merry Christmas.

Scissors: Happy Birthday to your Dad. I hope all of you enjoy the meal out.

Glenda: I like mustard sauce on chicken fingers (or gravy if available)

Caroline: I have never eaten lamb. I'd like to try it sometime. Sounds like a good meal to me.

Ravencajun: If we get to have our party this weekend, one of my sisters is making sloppy joes and coneys. I really like coneys.

Jasdip: I like the sounds of your meal. I've only had latkes a couple of times. Still haven't had the combo of potatoes yet but intend to.

Mary: 40.... a heat wave. I'm north of you and we made it up to 32. I'll join you and have the cube steak.

Satine: What a variety of foods you've sampled today. Let me know what drive-thru you drive through.

Terilyn: Can you tell me what green chile stew is? Sometimes I reheat leftover pizza, sometimes right out of the refrigerator.

Shirley, it has roasted tomatillos, green chiles, roasted tomato, chicken broth, lots of spices. I add ground turkey, it is yummy! I cheat and use the Cookwell & Company two step mix!

I didn't get to eat my doggie bag steak and crab cake last night, so I ate it tonight along with a little leftover caviar pie and a swig of cosmopolitan from Wed. night. Now, I have to start baking Christmas cookies. Glad I only had a small swig of the Cosmo!

Georgysmom: I'd have liked to be there to take tastes of that doggie bag contents....then stay to have a cookie or two.

I fixed cream of potato soup today with rivels, for lunch. Cheryl, Amber and Alyssa were here helping get things ready for Christmas. I also made Banana Oatmeal cookies. My supper was some of the potato soup with Club crackers and some of my 4 bean salad. I am also wait6ing for the snow storm to arrive tonight, so far nothing out there.

I made pizza for us, too. When you're in the mood for pizza, nothing else will do. Luckily, I had a packet of yeast left over from Thanksgiving.

Sue: I'd have loved having some of your soup and club crackers. And of course, follow it up w/cookies. (I'd like to give you my share of the upcoming snow....had enough already).

Well I find it pretty easy to make pizza..

My dough is super simple...(I buy my yeast at Costco and keep it in a container in the freezer, because it last over 6 mo.)

Pizza Dough

1 c warm water
1 fork of honey
2 1/4 t yeast

Stir and let bubble.

1 t salt
3 glugs of EVOO

Stir.

3 c AP flour

Mix with fork, until you need your hands.
Form a ball, knead on the counter until it smooths out. Leave it there with a towel on it while getting everything together and heating the oven.

Makes one 16", or one 10" deep dish, or 4 personal size.

Bake regular pizzas at 425F, deep at 350F

Makes great bread sticks too..
