Another Q about Olive Oil...

I bought virgin olive oil, and couldn't believe the varied prices. The one I bought was med. range. Now my Q..after opening, do I keep it in the fridge or cupboard? Thanks again, Dottie

I keep my EVOO in the cupboard. I buy the quart bottles and I use it all before I notice any change. I don't know what the expert "rules" are, but this works for me.

It will get cloudy in the fridge. Keep in a pantry.

well, I'm a bit warmer than you (zone 6) and I don't use dormant oil, but I do use burlap to protect my first year or slightly tender roses. I usually do this after Thanksgiving; some of the roses may have leaves, but not a lot of leaves. I have 2 techniques: 1. build a little cage out of stakes or chicken wire around the rose, then wrap this in burlap or 2. (my favorite): buy a bunch of those sturdy brown paper leaf bags. Cut out the bottom, so you have this sort of "tube". Put it over the rose and secure it to the ground with stakes. For an extra tender rose, I might add leaves or straw inside the bag, or even wrap the exterior with burlap. For tougher roses, the thick paper is enough protection against winds. I prefer this technique because its easier, and seems to work very well. Also, the bags are quite sturdy and I usually get a few years out of them. I have a different questions that relates to the safety questions here. I have a jar of artichoke hearts in the fridge, a big jar from Costco. I've had it for months. It contains both oil and vinegar, and the oil sits in a pretty thick layer on top of the artichokes and brine. Should I be worried about safety, because the oil is creating an anaerobic environment underneath? I've been eating these sporadically in uncooked pasta sauce with no ill effect. Now I want to bake them inside some turnovers to bring to the ALS fundraising walk in my city. Of course I don't want to put strangers at risk, especially not sick strangers. Should I throw out the artichokes and stop buying big jars? If I buy new artichokes, can I assume a newly opened commercial jar is safe, or should I forget the artichokes for this potentially immune-compromised population? Melissa

If it tastes fine to you, go ahead and eat it. I have heard that rancid oils can inhibit your absorbtion of some nutrient, but forget what. I have been served rancid crackers that no one seems to think are awful, certainly rancid nuts and muffins made from rancid mixes, pies with crusts that must have spent 2 years in the freezer and gotten rancid.....and I seemed to be the only one turning up my nose. So if it tastes good to you, go ahead and eat it....but I have learned from experience to taste an oil of it's been around for a while, before I mix it with other ingredients. No need to spoil a whole batch of stuff. What does rancid taste like? Ever find 3 Ritz crackers in the bottom of a cracker tin that had likely been there since the flood? A- you are very welcome..I too can not use coconut oil on my eyes..I break out in tiny little bumps on the top of my cheek bone.. But I love to use it for owies, extra rough spots and internally. I pop popcorn and fry potatoes in refined coconut oil. I use Virgin for "ointment, moisturizer, and in my tea". As to the fancy oils and vinegars Renee, just use them,..but they are likely to be used as a drizzle or dressing..I wouldn't destroy the flavor in cooking. Alot of folks love balsamic as a dessert topping. So that is a great uses. Also try it on a spinach salad with strawberries..I bet it would be devine! The cranberry pear would be wonderful over a salad with grilled chicken. If there is a fair amount and you really are stuck the blood orange would be good in brownies or chocolate cake...orange might not come through to much..but it would be a way to use it before it went bad.

It you do not plan on using it up in a short time keep it in the fridge to keep it fresher longer. The cloudiness does not hurt it and will go away when it reaches room temp.

I keep mine in the pantry because I use olive oil a few times week and don't want to have to wait for it so liquefy when I want to use it.

Should be kept in a dark place...refrigerator is not the best, best is on a shelf with doors.

Nothing darker than a refrigerator and it is cool too. It is what experts recommend.

I keep my cans of oil on a shelf in the kitchen, away from heat & light. I have EVOO and canola oil.

I don't use a lot of any kind of oil. Generally, it goes rancid before I use it up if I keep it at room temperature. I keep my olive oil in the fridge and it stays fresh much longer. I put the safflower in the freezer--it's a very light oil and doesn't solidify even in the freezer.
