Saute a chopped onion in a large sauce pan or soup pot in some olive oil until softened but not brown

Keeping the heat at medium, add the kale with salt and pepper and stir for a few minutes (in batches if too much) until starting to wilt.

Add a few ounces of water, turn the heat to low and put on the lid. Ready to eat in 5 or 6 minutes.

When using whole kale, I separate the leaves from the stems, chop the stems and saute them with the onion (they need the extra time to get tender). You may or may not want to do that with precut kale.

It's such a power food, we bought some recently. Like you I didn't know what to do with. It's very strong to eat on it's own, so we like it chopped fine into mixed salads.

Yesterday we juiced up some kale, carrots and apples and drank the juice. The "leavings" I mixed into the meat loaves for extra nutrition and fiber and it was awesome.

Kale added to any soup is good.

Take the tough rib out and just use the leaves. They soften if you massage them with oil.

Funny thing, years ago I got some boxes of old produce from our local grocery store. They used to give it away to people with guinea pigs, rabbits etc. I do worm composting and came home with "gold" for them.

I chopped up all the food and froze it. Months later I would thaw the kale and it thawed exactly like it went in.......it didn't break down at all.

That's when I decided I didn't like cilantro. I couldn't stand the smell of it when I was chopping it. I was afraid my "little guys" wouldn't like it either, but they did!

You can put it in anything that calls for spinach, but you would need to cook it longer.
It's good in salads, but most people would add oil and massage it before eating.

I think I will follow Snidely's recipe tonight and have them with the smothered pork chops and mashed potatoes instead of green beans..

Use broth instead of water for extra flavor, maybe some minced garlic. I always add some dashes of hot sauce, too.

Most of the kale I buy goes into our daily green smoothies.

If none of the above, drive to your local animal shelter and give it to them for the rabbits. Rabbits LOVE kale and it's very good for them! (shouldn't have it ALL the time because it's very high in calcium .... but my rabbits have always had a diet with a good amount of kale in it).

That would be a nice gift for the bunnies! Haha!

Kale chips! Just try it you will be hooked! I use Kale in my smoothies it does make it green but you can't taste it much. I add fruits and berries and yogurt or almond milk with the Kale or spinach and a few ice cubes smoothie it up!

Kale chips are super easy, Kale, olive oil and a flat baking sheet, with what ever kind of seasonings you want to sprinkle on from basic sea salt to Cajun, to soy sauce in the olive oil, to a sprinkle of taco seasoning just try it. Bake at 350 - 400 for 10-12minutes or till very crispy, sprinkle with the seasonings.
