Alisande's egg salad recipe

Alisande, thank you for posting the recipe for curried egg salad. We had it for dinner last night and it was so good I don't think I'll make regular egg salad ever again. The apple gives it a little crunch and sweetens the curry. We had it on croissants last night but tonight I'll toast them on regular bread.

If you missed it and want to try it, here is her recipe:

CURRIED EGG SALAD (Alisande@KT)

1/3 cup mayonnaise

1 tablespoon fresh lime juice (half of one lime)

1 1/2 teaspoons curry powder

1 Ã¯Â¿Â½ teaspoons whole grain or Dijon mustard

1/4 teaspoon salt

Pinch of cayenne

6 hard-boiled large eggs, chopped

1 cup diced Granny Smith apple (roughly 1 apple)

1/4 cup finely chopped red onion

8 slices wheat bread

Lettuce for garnish (optional)

Mix together the mayo, lime juice, curry powder, mustard, salt and cayenne. In a separate bowl, add together the chopped eggs, apple and onion. Pour the curry dressing over top and gently stir everything together. Serve on toasted wheat bread with lettuce, or just eat it with a fork as it is.

This is slightly different each time because depending on the number of people the amounts changes a bit...The recipe is my mother's but with her blessing she approves of the addition of the shrimp. 1. red or white potates about 2-3 pounds. Scrub skins and put in 3 quart pan. Fill pan halfway water and add 2 tsp of salt. Boil until just tender.(do not over-cook) cool then peel if you wish, then cube (medium) the potatoes and put in a very large mixing bowl or 5 quart pan works great for mixing. 2. Chop 5 ribs of celery and add to potatoes. 3. Chop 1 large dill pickle and add. 4. Add 8 chopped hard boiled eggs. 5. Add 1/3 cup of finely chopped sweet onion or more/less to taste. 6. Add 2 small cans of med shrimp drained (this is optional), but if you like shrimp and potato salad you will love the flavors when combined. 7. Lightly toss all of the above. 8. Add 1-2 cups of mayonaise or half mayonaise/half Miracle whip. This is a tastes isssue...I prefer to use Hellman's (Best Foods) mayo only but add mustard 1-2 Tablespoons. 9. With the above add salt and pepper to taste as you mix, using a clean tasting spoon each time. 9. Mix together lightly but thoroughly. Add more mayo if needed. Put in bowl and slice two hard boiled eggs to decorate. Sprinkle paprika on top. Cover tightly and refrigerate until ready to serve. Enjoy!

I do my eggs like you do, Glenda. Only I let them sit 10 minutes. Bright yellow yolks and no green. For egg salad, I use mayonnaise, salt and lots of fresh ground pepper. We sold lots of these when I was a kid working at a drug store soda fountain. One of our ladies made it and showed me how so I could do it if we ran out. It's also the egg salad so many of the golfers like at the Augusta Open. (Or so I've read.)

There is something about sweet pickle relish that turns me off. Don't even put it on hot dogs and I for sure wouldn't add it to egg salad but that's just me :-)) Except for gherkins, I don't even like pickles much and don't think about putting one on my hamburger!! I just don't care for savory and sweet mixed together.

Oh, I'm glad you liked it! I made it for a party before Christmas, and again on Christmas for my family. Everyone was complimentary!

I have never tasted Curry. Is it hot (spicy)? If so, I would probably out less in.

Dotmom, it isn't hot and spicy in this recipe, but you could start with less if you like. Curry loves something sweet as a condiment, and the apple fills this nicely. Curry is actually a mixture of spices. I have several different kinds in my pantry, including a couple bought at an Asian market. But my favorite is McCormick's.

Have you smelled curry, at least? I hope you'll like it well enough to make other curried dishes.

Thanks, Alisande,,,,,no I've never been exposed to it at all, but have been curious. I have the makings for this recipe on my grocery shopping list. I'll be sure to look for McCormicks Curry.

I love it in apple salad with celery and walnuts, too. I used to have a great recipe for curried meatballs, but I've lost it. I'd sure like to make them again.

That's really funny because I just finished making the exact same egg salad recipe to bring to my NYE party tonight. I got the recipe off the internet about 2 weeks ago. I licked the spoon and it was pretty darn good. Not spicy at all. Will put on bread just before leaving the house.

I make a curried chicken salad that is delish. I got the recipe from a friend's mother and I've used it for years--long enough that I don't refer to the recipe anymore. Y'all know how that goes!
