Egg,mayo a bit of sweet pickle relish~~~I really am a clean/simple/less is more eater. Of course that does not count my junk food;)

Eggs, mayo, dash of dill pickle juice, dash of dry mustard, sea salt, course ground pepper!

6 hard cooked eggs
1/2 C finely chopped celery
1 T. minced onion
1/3 C mayo
1/4 tsp salt
dash pepper

Good ole Betty Crocker 50 years ago....I do not like sweet pickle relish in mine and it must be on fresh pumpernickel bread. You got me craving now. Think I'll zip out tomorrow and pick up some pumpernickel and make egg salad sandwiches for dinner tomorrow night.

5 hard boiled eggs ,diced in slicer.
2 stalks diced celery(optional).
2 tablespoons of mayonaise
1/2 tsp of prepared yellow mustard
1/4 to 1/2 tsp paprika
1/4 cup of Del Monte brand Sweet Pickle Relish.

I love to eat it on Wheat Thins crackers or on celery ribs

I have an egg salad panini every day for brunch. One egg mashed with half an avocado, sea salt, pepper ,cinnamon, diced walnuts and cranberries. Diced chicken if there's any leftovers. Put on heavy grain bread with mozzarella cheese and grilled two minutes.

I like mine simple. Just eggs, mayo, sweet pickle relish on whole wheat bread. However, I am going to try Lily316 's recipe. I would never have thought of combining those ingredients, but the more I think about it, the better it sounds!

I am a simple salad gal too.
Boiled eggs
kraft mayo
French's mustard
Mash up eggs mayo and mustard mix till creamy with some chunks add a dash of sea salt and pepper. Eat on soft white bread.
When I am sick or have had surgery when I am able to eat that's always what I want.
I taught my husband how to make it after one of my surgeries so now he knows and does a great job.

I like a few fresh chiives snipped into it as well. Otherwise the same as yours.

I like bigger pickle bits to add something to bite, so I use baby sweet pickles cut up instead of relish.

Curried Egg Salad

I do mine like Georgysmom but I do add just a tad of mustard....Making me hungry!

Nobody here mentioned capers?

I just use eggs, mayo, Kosciusko spicy brown mustard, and capers.

And I usually cook the eggs by steaming them rather than boiling them, which makes them much easier to peel.

I don't like too much mayo, so this is basically how I do mine.

8 hard boiled eggs
2 T HellmanâÂÂs mayo
1 t French's mustard
1/2 t salt
1/4 tpepper

Taste egg salad first to determine if it needs additional salt and pepper, since the mayo and mustard contain salt sometimes additional salt and pepper is not needed. I have also used Miracle Whip instead of mayo.

I too love egg salad too. I use about 5 to 6 hard boiled eggs 2-3 sweet pickles instead of the relish a little of the pickle juice and celery also chopped. Mayonnaise, a little mustard sorry I don't use measurements. I serve mine on toast sometimes with a ripe tomato. Yummy.

I don't boil mine either.
When water comes to boil, remove from heat, cover and let sit for 20 minutes PERFECT and easy to peel.

Find the end of egg that has the pocket and crack it and peeling just winds around and comes off perfect.

Glenda, that is exactly how I do "boiled" eggs. So much nicer than boiling.

Pretty much the same here except I only do them 16 - 17 min. Always peel perfectly.

I do my eggs like you do, Glenda. Only I let them sit 10 minutes. Bright yellow yolks and no green.

For egg salad, I use mayonnaise, salt and lots of fresh ground pepper. We sold lots of these when I was a kid working at a drug store soda fountain. One of our ladies made it and showed me how so I could do it if we ran out. It's also the egg salad so many of the golfers like at the Augusta Open. (Or so I've read.)
