About that rosette iron. They are kind of a pain to make. It helps to know this - before you start, heat up the iron in hot oil (your instructions usually tells you this). Then, when you dip it in the batter and put the iron in the hot oil, leave it there for a few seconds and then pull it up slightly so just the bottom of the cookie is in the oil. This prevents the top of the cookie from clinging so tightly that you can't remove it from the iron. You'll need a wooden spoon to bang the cookie off. It takes a little practice. Also, you'll want to put the batter in a shallow dish just wide enough for the iron to fit so you can use most of the batter. I use to have a small Corningware casserole dish, the one with the blue cornflower on it, that was perfect for this but I got rid of it because I never used it. I forgot about rosettes. LOL I have a friend who has one that I can borrow, but I think I have the perfect oval dish that might do the trick. Good luck on your cookies.
