Basil Lime Cookies

2 cups sifted all-purpose flour

1 1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup sugar

2/3 cup softened butter or margarine

1 egg

1 teaspoon vanilla extract

3 tablespoons fresh cinnamon basil, chopped

1 tablespoon finely chopped lime peel

Sift first 3 ingredients; set aside. In large mixer bowl, beat butter until light. Gradually beat in sugar; add egg, vanilla, basil and lime peel, beating until very light and fluffy.

At low speed, beat in dry ingredients in 3 0r 4 additions. Turn out dough onto lightly floured surface; divide in half. Shape each half into a roll 6-7 inches long. Roll in plastic wrap.

Refrigerate until firm, at least 8 hours.

When ready to bake, preheat oven to 375. Cut dough into 1/8 inch slices and place 2 inches apart on ungreased cookie sheet. Bake 8-10 minutes or until lightly browned (do not overcook).

Immediately remove from sheet with spatula and place on wire rack to cool. When completely cool, store in airtight container.

NOTE: Rolls of dough may be frozen. Thaw for a short time in refrigerator just before baking.

Chocolate Sambucca Cookies

12 squares of semi-sweet bakers chocolate
4 tablespoon of butter or margarine
3 lg eggs
1/3 cup sambucca liquor
1 cup finely grind almonds
1 cup sugar
2/3 cup flour
3/4 teaspoon baking soda
1/2 icing sugar

Melt chocolate squares with butter. Let cool.
Whisk eggs, 1/2 cup sugar, sambucca together. Add melted chocolate. Spoon in flour, almonds, baking soda and mix with spoon. Batter should be soft. Wrap bowl with saran wrap and refridgerate for 4 hours or overnight. With floured hands, spoon batter and make into 1'balls, roll into a mixture of 1/2 cup of icing sugar and 1/2 cup of sugar. Put about 1' apart on baking sheet. Bake at 350 for 10-12 minutes. These cookies should puff and crack.

I found this receipe in a 1996 Christmas issue of Goodhouse Keeping Magazine and have made them every Christmas since. Family, friends and co-workers love them.
I have played around with this receipe and found using less chocolate and more sambucca, you then can taste the flavor of the sambucca better. Also I found keeping the batter in the fridge overnight is also better.

I'm not sure if I posted this before or not. It sounds like it would be good for a meal in January. Ham or sausage, or even chicken sausage can be used. She used a 3.5 quart slow cooker, but this recipe freezes well, so it can be doubled and used in a larger pot. Louisiana-Style Red Beans and Rice (Kalyn's Kitchen) 1 large onion, diced small 2-3 tsp olive oil 2 garlic cloves, minced 1 tbsp creole seasoning 1 tsp. dried thyme 1 tsp. dried oregano salt and black pepper to taste --salt isn't necessary because of the Creole seasoning 4 cups cooked small red beans (or use 3 cans red beans, rinsed and drained and add 1/2 cup more chicken stock) 3 cups diced lean ham or Louisiana Hot Sausages (dice into pieces about the size of the cooked beans) 3 cups homemade chicken stock or canned chicken broth 1 T Worcestershire sauce 1 tsp. green Tabasco (or use a smaller amount of red Tobasco) 2-3 bay leaves 1 tsp. red wine vinegar 3 cups cooked white or brown rice for serving If using dried beans, soak overnight and cook on stove until they are fairly soft, or cook in pressure cooker about 25 minutes. Drain beans. If using canned beans, rinse with cold water until no more foam appears, then drain. You can also cook them in the slow cooker the day before. Cut ham or sausage into small pieces, about the size of cooked beans. Heat olive oil in a heavy frying pan, then saute diced onion about 5 minutes, or until onion starts to brown. Add garlic and saute 1 minute, then add Creole Seasoning, dried thyme, and dried oregano and saute 1-2 minutes more. Put onion mixture into small crockpot. Add cooked beans and diced ham or sausage. Add stock, Worcestershire sauce, Tabasco sauce, bay leaves, and red wine vinegar, and stir to combine. Cook on high for 4-8 hours, until the beans are dissolved as much as you prefer. I like this best when the beans are at least 3/4 broken apart and dissolved into the liquid. Canned beans are usually softer and will break apart more quickly. An immersion blender works great to thicken the beans. Serve hot, topped with white rice. In New Orleans this is usually served in a bowl filled about 2/3 full of the soupy bean mixture, then topped with a scoop of rice.

SWEET POTATOES 2 tablespoons olive oil 3 large sweet potatoes 2 pinches dried oregano 2 pinches salt 2 pinches ground black pepper Directions Preheat oven to 350 degrees F (175 degrees C). Coat the bottom of a glass or non-stick baking dish with olive oil, just enough to coat. Wash and peel the sweet potatoes. Cut them into medium size pieces. Place the cut sweet potatoes in the baking dish and turn them so that they are coated with the olive oil. Sprinkle moderately with oregano, and salt and pepper (to taste). Bake in a preheated 350 degrees F (175 degrees C) oven for 60 minutes or until soft.

This is the Christmas Morning Wife Saver from the Best of Bridge cookbook. CHRISTMAS MORNING WIFE SAVER 16 slices of white bread slices of Canadian back bacon (enough to cover the pan) grated sharp cheddar cheese (enough to cover the pan) 6 eggs 1/2 tsp salt 1/2 tsp pepper 1 tsp dry mustard 1/4 c. minced onion 1/4 c. green pepper 2 tsp Worcestershire sauce 3 cups of whole milk dash of Tabasco sauce 1 stick of butter Special K or Corn Flakes Butter a 9 X 13 baking dish. Cover the bottom with a layer of 8 slices of bread, then bacon, then grated cheese, and top with remaining 8 slices of bread, sandwich style. Beat eggs, salt, and pepper together. Stir in mustard, onion, green pepper, Worcestershire sauce, milk, and Tabasco sauce. Pour the mixture over the "sandwiches", cover, and refrigerate overnight. In the morning, melt the butter and pour over the top of the "sandwiches". Cover with the cereal. Bake uncovered for 1 hour at 350 degrees. Let sit for 10 minutes before serving.

I love Molasses Cookies. Thanks for posting. Clare Here is one I make every Christmas. Also called Mexican or Italian wedding cookie, Russian tea cakes, or snowballs. Wedding Cookies 1 cup butter or margarine, softened 1/2 cup powdered sugar 1 teaspoon vanilla 2 1/4 cups all-purpose flour 3/4 cup very finely chopped nuts (I use pecans.) 1/4 teaspoon salt Powdered sugar Heat oven to 400ÂºF. 2. Mix butter, 1/2 cup powdered sugar and the vanilla in large bowl. Stir in flour, nuts and salt until dough holds together. 3. Shape dough into 1-inch balls. Place about 1 inch apart on ungreased cookie sheet. 4. Bake 10 to 12 minutes or until set but not brown. Remove from cookie sheet. Cool slightly on wire rack. 5. Roll warm cookies in powdered sugar; cool on wire rack. Roll in powdered sugar again.

I want to make these yet for Christmas, I hope I have time cause they sound right up our alley!

Coconut Balls 2
-------- ------------ --------------------------------
2 pounds powdered sugar
1 can sweetened condensed milk
1/2 cup chopped pecans
1 teaspoon vanilla
2 cup coconut
1/4 cup butter -- softened
Coating
6 ounces semi-sweet or milk chocolate chips -- (could be up
to 18 ounces)
1 tablespoon shortening -- (could be up to 3)
Mix together all ingredients, except coating ingredients.
Chill.
Form into 1-inch balls. Chill again on waxed paper lined cookie sheet.
Dip in a chocolate coating. Chill for another hour.
Melt chocolate & shortening over low heat; stirring constantly. (Use 1
tablespoon of shortening for every 6 ounces of chocolate.)
When mixture is smooth remove from heat. Dip each truffle into coating. (I
found dropping them in the chocolate & then fishing them out with a spoon
worked best. But work quickly or they will melt.) Then either place them on
foil or in paper candy-cups (they look like muffin papers only smaller) and
allow to
harden.
Mix 1/4 cup powdered sugar & 1/2 teaspoon of milk. Drizzle over truffles in
various designs

Not really cookies but they look easy to make. Cheerio Christmas trees.

6 cups Honey Nut CheeriosÂ® cereal
6 tablespoons butter or margarine
4 1/2 cups miniature marshmallows
Green food color
Red cinnamon candies or sliced gumdrops

1. Line a cookie sheet with waxed paper.

2. Pour the cereal into a 4-quart bowl. Set the bowl aside.
1. Place the butter and marshmallows in a 3-quart saucepan. Heat over low heat, stirring constantly, until the mixture is smooth. Remove the saucepan from the heat.
4. Stir in the food color until the mixture is evenly colored. Pour the marshmallow mixture over the cereal and stir until the cereal is evenly coated.

5. Lightly spray your hands with cooking spray. For each tree, shape about 1/4 cup of the cereal mixture into a Christmas tree shape on the cookie sheet.

6. Press the candies into the trees to decorate. Refrigerate until firm, about 1 hour. Store the trees in a loosely covered container.

Cream Cheese Spritz

2 c butter, softened
1 8 oz cream cheese, softened
1 c sugar
4 c flour
2 t vanilla

Cream butter,cream cheese, sugar and vanilla. Add flour until mixed. Use cookie press to shape. Decorate as desired. Bake 8-10 minutes at 375 degrees on ungreased cookie sheet.

What is basil cinnamon????

Sheilajoyce, it's not basil cinnamon, it's cinnamon basil. It's a type of basil that has a slight cinnamon flavor to it. I would think you could use regular sweet basil and add a 1/4 tsp cinnamon to the recipe instead.

Oh boy! I am finally done forming the coconut balls. Had many,many interruptions. I tasted one (I haven't dipped them in choc yet) and just plain it was delish!
