Just pulled it out of the oven. Would you like a cup of coffee to go with your slice of pie?

I was intrigued, since that seems to be the universal description, so I ran it down. The All-Clad site even says "porcelain" but doesn't explain. A customer review on Cooking.com says "heavy, non-metal insert". Here's a description from Metrokitchen.com: With the All-Clad Copper-Core porcelain double boiler insert, you can melt chocolate or gently reheat foods with confidence. This duo features a 2 quart sauce pan made of five layers of metal, including a core, copper layer to generate optimum heat distribution and conductivity. The 1.5 quart insert has a porcelain base to be placed over gently simmering water. You'll gain optimal temperature control of delicate ingredients without the threat of scorching or burning foods. This set comes with two lids to fit each piece individually. The All-Clad Copper-Core porcelain double boiler insert includes the following items:* Exterior pot is a 2 quart All-Clad Copper Core sauce pot* Insert is white porcelain with a capacity of 1.5 quarts* The porcelain comes with a stainless ring that fits around it. This ring has a handle to make the insert easier and safer to remove from the exterior pot* All-Clad stainless lid* Fully-clad All-Clad Copper Core cookware is made in the USA. Lids are currently being made in Asia. AHA! Progress! Then I found a much better picture on good old Houzz: Here's another view from Jlhufford.com It's a porcelain bowl grafted onto an All-Clad pot handle! It's actually a pretty cool design. It gets to be their signature stainless steel, but still a perfectly non-reactive interior. They have a larger one that they say is non-reactive because it's 18/10 stainless, and that's sort of true, but the porcelain is better. :) The picture at Chef's Arsenal that confounded you is probably of that bigger insert. OTOH, the shape isn't the most convenient looking. I haven't found a picture of the interior, but, for whisking, a true bowl shape works better, and, especially, a wider opening so you have room to work sideways, rather than up and down. Pyrex, Duralex, Arc and Anchor Hocking all make appropriate glass bowls. :) They're often sold as cheap open stock at grocery stores that have housewares sections, and they also come in nesting sets. Very useful things to have around. I have the Arc set, an extra from the "Arcoroc" days that was my mothers (most useful size and most used) and an extra set of the four smallest. You could check the market for a good bowl to use as a double boiler. :)

I'll suggest this coconut cream cake; the recipe even says it's best the 2nd day! Here ya go: Coconut Cream Cake 1/4 Cup Oil, 9" x 13" Pan 1 White Cake Mix 1 1/2 Cups Water 2 Eggs 2 Cups Cream of Coconut 8 oz. Cool Whip Pour oil in pan and roll to sides and bottom. Pour out excess. Mix cake mix, water, eggs and 1 cup Cream of Coconut with hand mixer on high until smooth. Pour into pan. Batter will be runny. Bake at 350 for 30 minutes. After baking, poke holes in top of cake with fork while hot. Pour 1/2 cup Cream of Coconut over holes. Cool in refrigerator at least 1 hour. FROSTING: Mix Cool Whip and 1/2 cup Cream of Coconut. Spread over cake and refrigerate. Tastes better the 2nd day.

This cobbler is great and you could easily add craisins to it. Apple Walnut Cobbler Source BH&G January 1997 5 c tart apples, peeled and thinly sliced 3/4 c chopped walnuts 3/4 c sugar, divided 1/2 tsp ground cinnamon 1 c all purpose flour 1 tsp baking powder 1 egg, beaten 1/2 c evaporated milk 1/3 c butter or margarine, melted Half & Half or light cream (Optional) Preheat oven to 325F. Lightly grease an 8x8 square baking dish. Spread the apples in prepared baking dish. Sprinkle with 1/2 c walnuts, 1/4 c sugar and the cinnamon. In medium mixing bowl, stir together the flour, 1/2 c sugar and baking powder. In small bowl, combine the egg, milk and melted butter. Stir egg mixture into the dry ingredients until smooth. Pour evenly over the apples, sprinkle with remaining walnuts. Bake 50-55 minutes or until toothpick inserted in center comes out clean. Serve warm, cut into squares. If desired, serve with half & half or cream. 9 servings You could also whip up a couple of the cake mixes and make a layer cake with fluff in between and topped off with a chocolate glaze made from the chips. Then chop the toffee chips up and sprinkle on top. Linda

Reporting back on the double chocolate biscotti (thanks, Olychick!): they turned out great (crisp/crunchy, but not tooth-breaking hard)! DH gladly served as my tester today, and his comment was, "They taste great, but kinda dry: maybe don't cook them as long?" Ugh -- biscotti, man, they're BISCOTTI! I'm going to try a couple of almond recipes tomorrow so I can gift 'black and white' versions to family this year. Question is, how do I label these so family don't think I'm giving them over baked cookies? :/ (They'd be too polite to say anything.)

Lilliepad - I'm in the Dallas area - come on! The recipe I use is DH's aunt's and it's the best we've ever had. I never could make a pecan pie until I got her recipe. It's literally "easy as pie!"

I'll have 3 pies by the end of the afternoon.
So far a Spice Rack Bourbon Sweet Potato (shared at the CF). But I'm going to put a Pecan Glaze on top.
Next to bake... Pumpkin and Apple. Pie crusts are "chilling".
You can have a slice of each Mz Glender!

My nephew left to drive to the Hill Country to go deer hunting and called and said it was snowing big fat flakes in Weatherford. I just checked the Dallas Morning News' website and it said we could see a flake or two, and it's not going to get out of the 40's between now and Sunday.

We've eaten and most have left - just my DD, SIL and grandson are still here. DH had to run to work - he's on call. I'm reading the paper, watching the Cowboy game and feel a nap coming on.

Hope everyone's day is going well.

It doesn't make a pretty picture but it sure tasted good....we had pumpkin pie cake.....and instead of using yellow cake mix, DH accidentally brought home carrot cake mix and it was so good! I topped it with chopped pecans.
