Have you ever made a pumpkin pie from scratch?

I did years ago but can't remember how.

I have three pumpkins left over that I'd like to cook.

My thought is that you peel, chunk and cook in water like you would potatoes. Then mash and go about the rest like you would if you opened a can of pumpkin.

Does that sound right?

Also the pumpkins are sitting on my covered porch.

We've had a lot of freezing weather. I'm wondering if they are okay to use.

my DH uses Seminole or Sugar pumpkins and bakes them on a jelly roll pan them till they are very soft. he is a pumpkin fanatic, i am not lol ~ liz

Patti, I don't know about the freezing, but my DD makes pumpkin pies from fresh pumpkins every year, using the ones bought for decoration for Halloween. She does like you said. They are always good.

Also if she has a lot she freezes it after it is cooked.

I'm genetically incapable of following a precise recipe. But we will shortly be making a few pies with 'Cha-Cha' kabocha squash. Cut the squash in half, scoop out the seeds and glop, bake the halves in a 350 oven for an hour - hour &15 minutes until when you pinch them, they give easily, and not burned. Let cool. Then scoop out the insides, throw out the skin. I use a food processor, but I suppose a mixer would do, but anyway, add a couple of eggs, cup-ish half & half, and the squash to the bowl, then spices. Grated fresh ginger, bit of honey, cinnamon, and couple tablespoons of lime juice. The squash itself is naturally very sweet and dense, so it doesn't take much sweetener at all. So what I've discovered is that making a custard isn't that hard, the milk and eggs does that for you with out much measuring. The question comes in with the spices, and we add a lot of cinnamon and ginger - say a tablespoon of cinnamon and a full two inches of ginger. But you're after that combination of cinnamon, ginger, and lime. You could add less, I suppose. I use a store bought crust, then bake at 350 for an hour - hour & a half, using a straw to check for doneness. The custard may split if you cook it too long, but thats not a problem, aside from cosmetics. It's wonderful for breakfast. :-)

I love pumpkin pie, and it is one of the few ways DH and DD will eat pumpkin. We don't have canned pumpkin here, so I cook and mash butternut squash for it, or occasionally Kent pumpkins which are sweet. My recipe has brown sugar and evaporated milk. Colleen's Pumpkin Pie 1 cup evaporated milk 2 eggs 1 1/2 cups mashed cooked pumpkin 1 cup brown sugar 1/2 tsp cinnamon 1/8 tsp nutmeg 1/8 tsp ginger 1/8 tsp cloves Mix thoroughly (I put it all in the blender) and pour into prepared 8" raw pie shell. (I make mine from scratch.) Bake 15 mins at 425F, then 50 mins at 350F. Using the blender makes it very smooth and creamy.

Until the UK joined what was then the EEC and had greater exposure to/from the rest of Europe, it had in the minds of many the WORST food in Europe. Unless bland, greasy, overcooked food is your thing. Standard advice back in the 70s and 80s for finding restaurants in London was to go to Soho and look for a Chinese or Indian place or other foreign food and avoid local restaurants at all costs. I give the English credit for creating trifle (which isn't all that different from strawberry shortcake and many pastry concoctions common on the Continent) but not for execution. Same for the other areas of Britain. Food there has improved from the few decades of foreign influence but the local traditions are still hideous. Unless local favorites like jellied eel, steak and kidney (yes real kidneys) pie, haggis or baked beans on toast, among others, are your idea of good food. Like LindaC, I have removed tarts from the pan, I have one of those fluted pans with a removable bottom, a gift from Evil Jessica. I miss her.... I also make deep dish pies because I love the filling and don't really like the crust. My crusts are made with home rendered lard and are flaky, but more substantial than the all butter crusts I sometimes make, so they might hold up to the "twirl", except that most of my pies have managed to bubble up and overflow and generally make a mess of the pan, and when it cools, it sticks. So, might work, but might not, with my pies, LOL, Like Cilantro, I'm also wondering if the crust would crumble and break when you cut it? Annie

Just like you said. I boil the pumpkin, mash and it's good. If it freezes, then the flesh isn't firm,the flavor changes and the texture is mush. I throw out veggies that freeze.

Yes, I have. But I BAKED the pumpkins. I think it retains
a little more flavor than boiling them.
Don't know if your pumpkins are still good. I know ours
were yucky a week after halloween!

If they are uncarved and do not have soft squishy spots, mould, nor mildew, they should be fine to eat.

You could cut the pumpkins in half and seed, then cut into wedges (like you would squash) and roast until soft. Scoop the flesh from the skins, then PUREE it. Strain the puree before using.

I am sorry, the mere thought of a pumpkin string in that custard pie makes me want to hurl.

Dances - whose dancing bunny is at home and whose well-meaning grandmother would make pies with stringy jack-o-lanterns.....like eating a pumpkin hairball if you ask me.

These pumpkins were not carved and are solid. So I'm guessing they will be okay.

I'll give them a try.

The one and only time I tried this I nearly cut my middle finger off cutting and peeling the pumpkin... I plan to be a little more careful this time...

And Dances...LOL...I love your humor...No pumpkin hairballs for me...

Cut the pumpkin in manageable wedges and boil until tender. Drain in a colander until able to handle. Then peel them - much easier then peeling them when in the raw state.

Best pumpkin taste and less hazardous to fingers. Baking the pumpkin.

Cut in half, no peeling necessary seed and de-string before cooking. Place on baking sheet cut side down bake 350 degree about 25-30 min. till soft. Scrape flesh from skin, mash whip or puree (desired lumpiness is a personal preference). Follow any recipe to add ingredients for pie you prefer. I always bake the pie with a pan of water in the oven to keep the top from getting to dry and splitting.

it is very easy just to scrape it out of the
peeling after they are baked. no reason to cut the
skin off beforehand.

I made a pumpkin pie from scratch when DD was in third grade........I cut the pumpkin into chunks and baked it.
You may need to let the baked pulp/puree drain through a colander to get rid of excess water.
My DD is now 44 and still thinks me making a pumpkin pie using a whole pumpkin is the coolest thing ever.
Now I use Kabocha squash aka Japanese pumpkin and like the flavor much better.

I have an awesome recipe for home made pumpkin pie. My pumpkin is from the pumpkin we buy for halloween. I never ever used canned stuff.

I made 2 from one recipe of pumpkin pie filling just 2 weeks ago. It's the first time though, that I ever used a Tenderflake Pie crust that I bought in the freezer section. I have always made the crust (I use the Crisco recipe for that). I've been told that I make the best pie, although i wouldn't know myself, as I hate pumpkin pie. I make it for the husband and kids. I thought i raised my kids better. LOL
