Sour Cream Cheese Casserole

"This casserole combines the flavors of sour cream, cream cheese and creamy chicken and mushroom soups, all topped with buttery, round crackers. Super easy to make - not the prettiest looking dish, but tastes great and kids love it!

READY IN 25 Min

INGREDIENTS

Â 4 skinless, boneless chicken breast halves - cooked and cubed

Â 1 (10.75 ounce) can condensed cream of mushroom soup

Â 1 (10.75 ounce) can condensed cream of chicken soup

Â 1/2 (8 ounce) package cream cheese

Â 1/2 cup sour cream

Â 1 cup crushed buttery round crackers

DIRECTIONS

1. In a large saucepan over medium low heat combine the chicken, cream of mushroom soup, cream of chicken soup, cream cheese, sour cream and 2/3 of the cracker crumbs. Mix well and cook until all blended together and cream cheese has melted.

2. Preheat oven to 350 degrees F (175 degrees C).

3. Transfer casserole mixture into a lightly greased 9x13 inch baking dish and top with remaining cracker crumbs.

4. Bake at 350 degrees F (175 degrees C) for about 15 minutes or until crackers turn golden brown. Spoon into bowls and enjoy!

I always use less tomatoes and add a can tomato sauce.Add use a whole green pepper too.

SPANISH RICE CASSEROLE
Serves 6

1 cup rice
1/2 pound lean ground beef
1/2 onion -- chopped
2 tablespoons butter
3 garlic cloves -- minced
1/2 green bell pepper -- chopped
2 1/2 cups stewed tomatoes
1 teaspoon salt
2 teaspoons chili powder

Wash rice, drain and allow to dry thoroughly.

Melt butter in heavy skillet; add rice. Cook, stirring constantly, until lightly browned, about 10 minutes.

Add onions and green peppers and cook until onion is translucent golden.

Add garlic and beef. Stir often to break up and brown meat.

Add undrained, chopped tomatoes and seasonings. Cover and simmer about 25 minutes or until rice is tender and most of the liquid has been absorbed.
Let stand, covered, about 5 minutes before serving.

Taco Casserole
1 pkg crescent rolls
1 pkg Doritos, crushed
1 to 1 1/2 lbs browned hamburger
1 pkg taco seasoning
1 pint sour cream
1/2 lb cheddar cheese,shredded
toppings as desired
Unroll rolls into 9x13 pan. Layer 1/2 the Doritos chips, then hamburger mixed with taco seasoning. Then sour cream,cheese and 1/2 of chips. Bake at 350 degrees for 20 minutes. Top as desired with chopped lettuce, tomatoes, onions,olives, etc.

I've posted this one before but it is absolutely delicious! Sandra Lee's Gnocchi gargonzola chicken **This is my changed rendition 1 pound potato gnocchi **I buy the boxed at Publix 1 pkg Knorr's three cheese sauce mix 2 cups milk 3 garlic cloves jarred crushed not minced 6 ounces Gorgonzola crumbles 1 store-bought roasted chicken (approximately 2 pounds), shredded 2 tablespoons chopped fresh parsley leaves To a large pot of boiling salted water, add gnocchi and cook for 3 to 4 minutes or until they float to the surface. Drain and return to pot; cover to keep warm. In a medium saucepan, over medium-high heat, whisk together white sauce mix and milk. Bring to a boil stirring constantly. Reduce heat to simmer and add minced garlic and Gorgonzola crumbles. Continue to simmer, stirring occasionally for 2 to 3 minutes as sauce thickens; remove from heat. Add shredded chicken to gnocchi. Pour sauce over warm gnocchi and chicken, and toss to combine. Serve warm and garnish with chopped fresh parsley.

Crustless Cranberry Pie "Light, super simple, and delicious dessert. Great with vanilla ice cream." INGREDIENTS Â 1 cup all-purpose flour Â 1 cup white sugar Â 1/4 teaspoon salt Â 2 cups cranberries Â 1/2 cup chopped walnuts Â 1/2 cup butter, melted Â 2 eggs Â 1 teaspoon almond extract DIRECTIONS 1. Preheat oven to 350 degrees F (175 degrees C). Grease one 9 inch pie pan. 2. Combine the flour, sugar, and salt. Stir in the cranberries and the walnuts, and toss to coat. Stir in the butter, beaten eggs, and almond extract. If you are using frozen cranberries, the mixture will be very thick. Spread the batter into the prepared pan. 3. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a wooden pick inserted near the center comes out clean. Serve warm with whipped cream or ice cream.

I love potlucks! I've taken Potato Pizza, the 5 Bean hotdish,coleslaw(both regular and the one I'm posting),AuGratin Potatoes you name it! Potato Pizza 1 lb hamburger 1 can cheddar cheese soup 1 cup milk 4 cups raw potatoes, sliced and salted Topping: 1 15oz can tomato sauce 1/2 cup chopped onion 1/2 teaspoon oregano 1/2 teaspoon pepper 1/2 teaspoon sugar Brwon hamburger, put in oblong baking dish 2 inches deep. Mix the soup and milk and pour over hamburger. SLice the raw potatoes over above mixture,dot with butter.Spread on the topping,bake(covered) at 375 degrees for 45 minutes or til potatoes are done (I bake a good hour at least) Remove from oven and cover with 1 cup mozzarella cheese. Bake uncovered for 15 minutes. ABC Coleslaw 1 red apple 1 stalk broccoli 1 small head cabbage shredded carrots pimentos (opt) green peppers (opt) Dressing: 1/2 teaspoon salt 3/4 cup sugar 1/2 cup vinegar 1/2 cup oil dill weed garlic salt or powder 1 teaspoon worcestershire sauce 1 tablespoon mustard Au Gratin potatoes Cook 6-8 potatoes in salted water with jackets on, until almost done, do not overcook. Cool and remove skins. Slice potatoes into a buttered casserole. Season with salt and pepper, onion and garlic salts. In saucepan put 1/2 cup cream, 1/2 cup milk and about 8 oz Velveeta cheese (cut in chunks) Melt together, pour over potatoes,bake at 350 degrees for about 1 hour until a golden brown.

Reuben Casserole

Carbohydrates:
very minimal - only what's in the cheese

Prep Time:
10 min

Ingredients:
1 lb. corned beef, shaved or grated
3/4 lb. swiss cheese, grated
2 cans sauerkraut, drained
1/2 c. mustard or low-carb Thousand Island dressing
1/2 c. mayonnaise

How to Prepare:
Preheat oven to 350.

Spread drained sauerkraut in a 9"x13" baking dish. Cover with shaved or grated corned beef. Sprinkle with swiss cheese.

In a small bowl, mix mustard or thousand island dressing together with mayonnaise. Spread mixture on top of cheese in the baking pan.

Bake at 350 for twenty minutes or so, until cheese is hot and bubbly and casserole is warm through.

** I always double the mayo/thousand island mixture - I love it extra saucy.

Chicken Casserole

4-6 chicken breasts, cut into bite size pieces.
Mix together:
6-8 oz. Russian dressing
6-8 oz. Apricot preserves
1 pkg Lipton Dry Onion Soup

Pour mix over chicken in a casserole dish.
Bake 350 for 1 hour.
