Sweet Mini Apple Dumplings

This recipe was given to me by a friend. My neighbor gave me some apples recently and I made it and gave them some in return. They gave me some more apples, so, I made a second batch last week and did the same. I will be making another batch on Friday to take to my DD's birthday dinner. Does that tell you how good they are?

2 8-oz tubes refrigerated Crescent rolls, separated.
4 apples, cored, peeled and sliced into 8 wedges.
ý cup butter
1 cup sugar
1 cup water
ý tsp cinnamon

Cut each crescent roll in half, forming 2 triangles from each. Roll up one apple wedge in each triangle, crescent roll style. Arrange in a 13X9" baking pan* coated with non-stick vegetable spray. Set aside.

Put butter, sugar and water in a small saucepan and bring to a boil. Reduce heat; boil and stir until sugar dissolves. Pour over crescents; bake at 350 for 30 minutes. Sprinkle with cinnamon. Makes 32.

* I made the second batch in two square pans, because the ones in the middle in the long pan didn't get as well done.

My sister passed this one to me. I don't know what to call it, but here it is

1 8oz block of cream cheese
1/2 tub of Imperial sharp cheddar cheese
1/4tsp of curry powder or more to taste
1 small jar of chutney ( she uses peach)
trail mix

1. Cream the cheeses together and add curry powder
2. Spread mixture on a plate or bowl
3. Pour chutney over top and sprinkle with the trail mix
4. Serve with crackers

I made this tonight to bring to work tomorrow. I'll let you know what my co-workers think.

Due to the success of the minute steaks for dinner yesterday, I'm buying more and making this recipe this weekend.

Korean Beef Bulgogi

1/3 cup soy sauce
2 tbsp honey
2 tbsp dark sesame oil
4 garlic cloves, minced
1/2 tsp pepper
1 lb sirloin fast-fry steaks
2 tbsp vegetable oil
1/2 savoy cabbage, thickly sliced, about 8 cups
4 green onions, 1" pieces
1 tbsp toasted sesame seeds

Stir soy sauce, honey, sesame oil, garlic and pepper in a large bowl. Cut steak into bite-size strips, each about 1/4" thick. Stir into soy mixture until well coated; set aside.

Heat a large skillet over medium heat. Add 1 tbsp vegetable oil. Add cabbage and 2 tbsp water. Stir-fry until soft, 3 minutes. Add onions for the last minute of cooking. Remove to a large platter.

Increase heat to medium-high. Add 1 tbsp vegetable oil to pan. Remove meat from soy sauce and stir-fry until no pink remains, 3-4 minutes. Stir in any remaining soy sauce, cabbage and onions and cook until heated through, 1 minute. Sprinkle with sesame seeds and serve over rice.

Quick Potatoes

2 (16-oz.) cans small whole potatoes, well drained
2 Tablespoons oil
Paprika

Heat oven to 375 degrees. Pat potatoes dry with paper towels. Pour oil into 10 x 6 (1 1/2 quart) baking dish. Add potatoes, stir to coat potatoes evenly with oil. Sprinkle with paprika. Bake at 375 degrees for 30 minutes or until lightly browned and thoroughly heated. 6 servings

EASY PARMESAN POTATO WEDGES

This recipe can also be served with sour cream.
1/3 cup grated parmesan cheese
1 teasp paprika
1 teasp garlic powder
1/2 teasp salt
1/4 - 1/2 teasp pepper
4 potatoes unpeeled
1/3 cup vegetable oil

1) Preheat oven to 400F (204C)
2) In plastic bag combine first 5 ingredients.
3) Cut each unpeeled potato into 8 wedges. Dip wedges in oil and then shake in cheese mixture.
4) Place wedges on a baking sheet skin side down and bake at 400F (204C) for 30 - 40 minutes.

Luckygardner, Glad your DH liked the Dumplings. They were a hit at DD's Birthday lunch/picnic also.

Was given more apples, (think my neighbor is trying to tell me something?) so decided to try something else this time. I made this recipe a couple days ago and it is also yummy, so thought I would share it too.

Apple Walnut Squares (All Recipes)

ý cup shortening
1 cup sugar
1 egg
1ý cups all-purpose flour
1ý teaspoons baking soda
ý teaspoon salt
2ý cups finely chopped peeled tart apples
ý cup packed brown sugar
1 cup chopped walnuts
1 teaspoon ground cinnamon
1 teaspoon vanilla extract

In a mixing bowl, cream shortening and sugar; beat in egg. Combine flour, baking soda and salt; gradually add to the creamed mixture and mix well (dough will be stiff). Stir in apples. Spread batter into a greased 13in. x 9in. x 2in. baking pan.

Combine brown sugar, walnuts, cinnamon and vanilla; sprinkle over batter. Bake at 350ð for 30-35 minutes or until golden brown. Cool. Cut into squares.

Poblano-Shrimp Enchiladas (prepare a day ahead)
3/4 pound unpeeled, medium-size fresh shrimp
5 tablespoons olive oil, divided
1 large poblano pepper, halved and seeded
1 large onion, chopped
1 tomato, chopped
1/4 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin
1/4 teaspoon pepper
1/2 cup sour cream
8 corn tortillas
1 (10-ounce) can green enchilada sauce
1 1/2 cups (6 ounces) shredded Monterey Jack cheese
1.Peel shrimp, and devein,. Coarsely chop shrimp, and set aside.
2.Brush an 11- x- 7-inch baking dish with 2 tablespoons oil. Set aside.
3.Sauté pepper in remaining oil in a large skillet over medium-high heat until skin looks blistered. Remove from skillet, and chop.
4.Return chopped pepper to skillet. Add onion and next 5 ingredients; sauté 4 minutes. Add chopped shrimp, and sauté 1 minute; remove from heat, and cool 5 minutes. Stir in sour cream.
5.Heat tortillas according to package directions. Spoon shrimp mixture evenly down center of each tortilla, and roll up. Arrange, seam side down, in prepared pan. Top with sauce, and sprinkle with cheese. Cover and chill up to 1 day ahead.
6.Bake at 350*F (175*C) for 25 minutes or until thoroughly heated.
Makes 4 servings.

This can be a side dish or dessert--good either way.

Baked Apricots

5 cans apricots, drained
1 lb. (2-1/2 c.) brown sugar
1 round Ritz crackers, crushed
1-1/2 c. butter, melted

Place 1/2 the apricots in casserole. Sprinkle with 1/2 the brown sugar, 1/2 the cracker crumbs and 1/2 the butter. Repeat. Bake at 300 degrees for 50-60 minutes.
