I make it with lots of "stuff"==

Dried peas
Ham hock
Chicken broth
carrots
celery
onion
parsnip
1 leek
1 tomato
bay leaf
1 t thyme
S&P (but might not need S if ham has enough)

Cook it all day. Take the hock out and let it cool. Pick out the meat and return to soup.

There is usually a good basic recipe on the bag of peas.

Split Pea Soup -- 8 servings

1 -2 Ham hocks or a leftover ham bone
3 T. Butter
1 C finely chopped onion
1 C finely chopped carrot
1/2 C finely chopped celery
2 Tsp. minced garlic
1 lb. ham, diced
1 tsp. salt -- 3/4 tsp pepper
1/4 tsp red pepper flakes
** 5 - 7 C water
5 - 7 chicken bouillon cubes
1 bay leaf -- 1 tsp. thyme

Put peas and ham hocks in pot. Cover with 5 cups of water. Simmer 1 - 2 hrs. Remove ham hocks and puree. (I use an immersion blender but can put in regular blender in batches.) Saute' onions, carrots and celery until tender add garlic and ham. cook another minute Add to peas. Add spices and additional water for desired consistency. Enjoy!
I use two bags of peas.

**Be careful with water. Start with smaller amount and add as needed for desired consistency. I think the amount of water on bag makes for too watery a soup. You can always add more if needed.

Pea soup is one of my favourite soups! It's a common soup to make in Newfoundloand and we probably make ours a bit different than everyone else. For one, we use salt beef which I don't even think is available anywhere else, or if it is you call it something different. You can also use a ham bone and leftover ham but I prefer mine with salt beef. Here's my tried and true recipe:

Pea Soup & Doughboys

2 cups salt beef, diced
2 cups yellow split peas
1 cup chopped onion
1 cup diced turnip
1 cup diced carrot
½ cup chopped celery
2 - 3 potatoes, cut in large chunks
salt & pepper to taste
Doughboys:

1 ½ cups flour
1 tbsp baking powder
½ tsp salt
3/4 cup water or milk (approx)

-Soak peas overnight in cold water.

-Place meat in large saucepan. Add 8 cups cold water; bring to a boil. Simmer 30 minutes.

-Add drained split peas and chopped onion. Simmer gently for about 1 ½ - 2 hours. Add more water if desired.

-Add other vegetables and cook until tender (remember to stir often).

Doughboys:

-Combine flour, baking powder and salt. Gradually stir in enough water or milk to form a soft dough (it will be sticky).

-Drop mixture by tablespoons into hot soup; cover tightly and simmer, without removing the cover, for 15 minutes.

I like Socks Recipe, but I would add a dollup of Sour Creme on top of each bowl. Yum!

I like pea soup if the onion is left out...for some reason ham,peas and onions don't taste good to me...I know...I'm a dork!

Lickety Split Pea Soup

Ingredients:

1 cup split peas, rinsed, then soaked overnight in 3 cups of water
2 tablespoons butter
2 small leeks or onions, chopped
1/4 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon thyme
1 teaspoon chopped parsley
1/2 stalk celery, chopped
1 carrot, chopped
1/2 cup frozen peas
Garnish: carrot curls or parsley sprigs

Directions:

1.Boil the split peas in 6 cups of water. Cook until the peas are mushy, about 25 minutes. Set aside.
2.Melt the butter in a medium saucepan on medium heat.
3.Add the leek, salt, pepper, thyme and parsley and saute for 5 minutes, stirring with a wooden spoon.
4.Add the celery, carrot and 2 cups of water and stir.
5.Bring to a boil, then reduce heat and simmer, covered, for 15 minutes.
6.Add the vegetable mixture and the peas to the split pea pot and simmer for 5 minutes.
7.Ladle into bowls and garnish.

Makes 4 to 6 servings.

I make it often in the cold month. We LOVE it.

I always do mine in a crock pot. Ham bone, peas, chopped onion, celery, carrots, 1 or 2 garlic cloves, bay leaf and water. I don't use chicken broth or salt and pepper.
