Chili time!

Have had chili two days straight and two different places and BOTH different.

One yesterday you had the meat and beans and the rest was all blended together, and light reddish color.

Today, you had tomato bits as well as chopped onion plus the meat and beans. Lot thicker than the one yesterday, and liquid was darker.

Both were delicious,

One I had today is closest to me and they have the chili and grilled cheese specials now. I chose to have a a chili hot dog.

Love white chili, but I don't see it in restaurants.

Crumbled soda crackers and shredded is my preference for chili.

What's your chili pleasure?

I love chili so two days in a row wouldn't be hard for me. My dad always put a spoonful of pickle relish in his chili bowl and I also like it. I just put it in a corner instead of mixing it all in. Crumbled crackers here, too. Harry likes grated cheddar on top of his.

I'd love to have a chili dog from Dairy Queen. Sigh!!

My former SIL served homemade mashed potatoes. Put them in serving bowls and ladled chili over it.

Just give me a good ole sloppy chili burger. Only place I can find one is at Johnny Rockets and it's open faced.

"Good" as in safe? Yes. Good as in flavor? Probably. Several possible explanations like maybe the beans weren't hydrated enough or extra beans used or maybe something mis-measured or pre-cooked too ling, etc. But honestly it sounds as if it was just too thick when put in the jars - not enough liquid. It needs to be "soupy", more sloshy than you might prefer, when jarred so that during the processing the beans can absorb the extra and won't end up as yours did. At any rate it is safe and while some of the food above the liquid might darken over time it will be safe to eat. Just add a bit more liquid to it when re-heating to eat. Dave

The book that came with the pressure canner said to process for 90 minutes AFTER steaming for 10 min, then applying the petcock and bringing up the pressure so it rocks 3-4 times per minute. Don't want to get this thread off course ;) but are you talking about the chili or the green beans? Pressure canning time for chili is 75 mins for pints and green beans time is 20 mins for pints and 25 for quarts. Pressure canner manuals aren't the best source of info for canning as they are usually quite outdated when it comes to canning info. Check out NCHFP or the Ball Blue Book instead. Siphoning - lots of discussions here about it, its causes and how to prevent it and the link below is to the NCHFP basic guidelines about it. Primary cause is inconsistent pressures during processing because the heat source was adjusted too many times. If you need more info just let us know. Last year I posted here about how I entered a Brazilian Black Bean Stew (Feijoada) in a Chili, Wings and Ribs cookoff hosted by a local club, and ended up winning second place. About a month ago the second annual cookoff was held and this year I was determined to make a more chili-like chili and hoped to win first place. There are a lot of ingredients and a lot of steps because I was trying to end up with a rich layering of flavors. The chili ended up being some of the best chili I've ever eaten, however it still only managed to garner a second place ribbon. :-( Award Winning Chili 3 lbs Sirloin Tips 1 lb Smoked Sausage (chopped) 1/2 lb thick-sliced Bacon (chopped) 3 large Yellow Onions (chopped) 3 Tbsp Cumin 1 1/2 Tbsp Chili Powder 1 1/2 Tbsp Ancho Chili Powder 2 Tbsp Diced Pickled Jalapeno Peppers 1 Serrano Pepper (seeded and chopped fine) 1 Tbsp Crushed Garlic 1 tsp Black Pepper 3 10 oz cans Rotel Diced Tomato w/ peppers (drained) 1 small can Tomato Paste 1 Tbsp Adobo Sauce 4 Chipotle peppers (seeded and chopped) 3 15 oz Bush's Chili Beans 2 15 oz cans Black Beans (drained) 1 15 oz can Small Red beans (drained) 2 12 oz bottles Dark Beer (porter or stout) 1.5 oz Lindt Dark Chocolate w/ Chili Cut sirloin tips into ~ 1 inch cubes, spread on baking sheet and place in freezer for about 10 minutes. Place in batches in food processor and pulse several times until meat is coarsely ground. Next in large pan brown meat over high heat in smallish batches, deglazing pan with the beer between each batch, keeping seared meat and the deglazing liquid in a glass bowl for later. Next cook bacon and smoked sausage until lightly browned, and remove that meat to another bowl. Then add the onions to the bacon grease and cook over medium heat until onion is softened and translucent. Add chili powders, cumin, serrano pepper, and garlic stir in well for a few minutes, then add tomato paste, pickled jalapenos, black pepper, chipotle peppers and adobo sauce, stir and cook for a few more minutes. Next add the diced tomatoes, all of the beans and the two bowls of cooked meat, and any remaining beer, heat to simmering and reduce heat to low and simmer for about 1 hour until the meat is tender. Remove from heat, stir in chocolate, refrigerate overnight. Reheat the next day to a low simmer, and serve with shredded cheddar on the side.

I think I'd love either version that you had. But my favorite is a variation of your white chili recipe. I've been using it ever since you first posted it on the KT.

I made homemade chili today and snuck in carrots and squash!! No one was home to see how it was made and what went in so I had a free for all!! It was delicious and they all enjoyed it very much....needless to say I never said a word about the "extras" in it...but boy it made for a wonderful thicker sauce.

I LOVE chili. I've made it twice so far this fall. When I was newly married, I didn't know how to cook...anything. I did get a cook book for a wedding gift and thought that chili sounded easy to make. It was and turned out so good, Hubs had me make it again that weekend and invited his family over for chili and cornbread (which was made from a mix) I remember feeling so proud and domestic. LOL I like my chili two different ways, one, real thick and then I like it thin, more like a soup. I've never had white chili. That I would like to try sometime. How is it different?

I like chili, too. Sometimes I put Fritos, cheddar cheese and then a dollop of sour cream in mine. I usually make a big pot and eat it the rest of the week.

We had our first chili of the season last night, I use turkey, that's the only meat I will eat. I use lots of cumin, I would put beans in but evidently, that is against the law in Texas! Haven't had beans in chili in thirty years.

I've put cocoa in my chili before. Gives it a rich flavor.
Also heard of beer in chili, but I've never had it.

My homemade chili is made in the microwave. Was in cookbook that came with my FIRST ever microwave from Sears.

I'm brand new here and this is my very first post.

All this chili talkin' is making my mouth water...lol!

I would love to have the white chili recipe if anyone has the time to share it.

Y'all seem like a really great group of special peeps here...I'm already glad I joined.

Here's white chili with my rendition:
1 can chicken broth
1 Tbl olive oil
2 boneless chicken breast, chopped ****Use WalMarts rotissorie, and use breast only shredded.
1/4 cup or more chopped onion
1 4 oz can green chiles, chopped ***I puree mine with my hand blender WITH juice
1 19 oz can navy beans, undrained
1 tsp garlic powder
1/2 tsp cilantro ***I use instead 2 tsp chili powder
1/2 tsp oregano
1/8 tsp red pepper
Sauce chicken and onions 4-5 minutes in olive oil **If using Wal Marts cooked, saute onions only till translucent
Stir in spices, broth, simmer about 15 minutes, then add beans and shredded chicken and simmer 5 more minutes, to get the flavors blended.
We love it topped with fritos, shredded cheese, and a dollop of sour cream

I started to pick up supplies to make chili the other day, they had out some beautiful chili meat, I said oh look must be chili time, my husband was all for that he loves it.

I make chili year around because the kiddos love it. I made a big pot of beef stew yesterday and it's all gone today. It was 56 this morning - definitely 'soup' weather.

We are freezing down here in NW Florida! It got up to 75 this afternoon, but with the breeze coming off the ocean, that's STILL COLD!

DH loves the Wendy's Copy Cat recipe. It's the only one he uses now.

WendyÃ¯Â¿Â½s Chili Copycat Recipe

2 1/2 lbs. lean ground beef, browned and drained if necessary
29 oz. can tomato sauce
40 oz. can kidney beans with liquid
29 oz. can pinto beans with liquid
1 c. diced onion
Ã¯Â¿Â½ c. diced green pepper or 3 tbsp. dried green peppers
Ã¯Â¿Â½ c. diced celery
29 oz. can crushed tomatoes
2 tsp. cumin
2 tbsp. chili powder
1 Ã¯Â¿Â½ tsp. salt
2 c. water

Brown and drain ground beef. Put beef and the remaining ingredients into a large, heavy pot. Cover and simmer 1 to 3 hours stirring every so often.

I'm going to stop at the grocery store for chili ingredients today. You were my inspiration. It's cold here today and will be perfect for tonight or tomorrow night depending when I get it made.

My dad owned a grocery store and sold chili that was packed like a brick. Found in the meat dept.
