What's for dinner Sunday Oct 6?

I am about to pull out two whole chickens and rub them down with my favorite BBQ rub...then hubby will rotissorie them on the grill.
~Beautiful Fall Day here~
Sides...not sure..
Roasted Cauliflower, green salad and maybe mac n cheese.

After dinner, carcass' cleaned..and into the crock pot over night for stock.

The dehydrator is filled with apple slices and there is a saucepan full of apple chunks cooking down for sauce.

What are your plans for your evening meal?

Just got home from Outback's, my first time ever.

There were 22 of us that went from church.

T'was good, but I like Longhorn's better.

I had their 6 oz sirlion, medium rare, with baked sweet potato and honey butter.

Hi everyone, First of all, I want to thank everyone for their continued prayers, hugs, good wishes and just for being there. I am slowly getting back to what ever this week's version of normal is. When my kids were still home, we went through all of my photos and made a picture CD of Lucas. It was heartbreaking, yet healing at the same time. It is still hard to wrap my head around the idea that we will never see his smile again, but we did have lots of years to enjoy that smile and I am trying to cling to that. My kids were extremely close to Lucas and his 2 sisters, and most of the pictures are of the 5 of them in various poses. My other two nieces lived in SC and didn't get to visit very often. So my kids took Lucas' death very hard and it was hard for me to let them go back to FL and LA. Relatives kept harping on the fact that my son was the only boy left. Needless to say, this made me feel nervous and teary. But tears are necessary in the healing process and I am sure that what I am feeling is only a fraction of the pain my DSIL and DBIL are feeling. After we looked at all of Lucas' pictures, I decided to scrapbook my kids' albums that had the old fashioned sticky pages. I am not getting fancy, but at least the new pages are acid free and I can rest easy knowing the photos will be preserved. Plus I needed something to focus on and it seems to be helping. So I know that I have been MIA and I know you all understand. I will try to get on-line more often and keep up with everyone's trials and tribulations. I'm late with this but thought I'd share anyway. I've been turned on to the low and slow method of cooking. So far I've done french dip sandwiches - bottom round roast and yesterday we did a fresh chicken. The concept is to cook for hours at low temperatures. So far I've use 170 degrees. The meat temperature never rises about 170. We did the bottom round for just a bit too long. I should have gotten it out when the temp read about 150 so it could rest for slicing. Yesterday's chicken on the other hand, so good. All I did was salt and pepper the inside/outside the night before and left in the fridge over night. In the morning I took it out about an hour before cooking. I cranked the oven to 500 to crispen it up then dropped it down to 170 for about 6 hours. I did baste it with olive oil, rosemary and thyme and stuck some lemons in the cavity. It was the juiciest chicken I've ever done and so flavorful. Broccoli and garlic mashed tatoes along with a wilted lettuce salad with hot bacon dressing. Leftovers for lunch today.

Shirley, that coney dog is calling me! Glad the snow and ice are gone so you can get out and about! Jasdip, did your team win? I haven't been keeping up with the Olympics. My bad! I had 5 large baking potatoes that needed to be used so I made them into twice-baked potatoes. Baked the potatoes, scooped out the pulp, mashed it with butter, milk and sour cream. Added shredded cheddar, sliced green onions chopped parsley and some chopped bacon. Topped with more cheese and bacon. Put them on a cookie sheet and they are in the freezer before being stored in bags and run through the Food Saver. They sure look pretty! Sue, glad you are able to get out again. Lunch sounds great. Little Alyssa will soon be a 3-year old. It's a great age. I've never had Captain D's but it looks a lot like Long John Silvers. Glenda, I really like Thai coconut soup, but the rest of your meal sounds even better.

Pam, Spring mornings used to find me up and full of energy. Sounds like that's what happened with you today. Just a "feel-so-good" kind of day. Enjoy your steak. Mary, glad you have your computer back! Your dinner sounds yummy--especially the lemon meringue pie. Raven, I was going to do corn on the cob, but the asparagus needed to be cooked. And we have enough left over for tomorrow night. I saw a new way to cook corn on Pinterest today. This sounds easy enough. OVEN CORN ON THE COB (Pinterest) How did I NOT know this? Never boil corn again! Want to know the easiest way to cook corn on the cob? Throw it in the oven at 350ÃÂ° for 25-30 minutes. ThatÃ¢ÂÂs it. Leave the husk on, it will trap in the moisture, leaving you with juicy, tender corn. The husk and silk will peel away easily once itÃ¢ÂÂs cooked. Cut off the large end and it slides right out with no silk. We do this all the time.....good on the grill too!

We have a Farmers Market in our town every Sunday. I got 2 ears of corn today. . I'll make the same dinner I've made every Sunday since May- hot dogs and corn. Next week I'm going to our nephew's wedding so I'll miss the FM.

I made my favorite soup, winter minestrone (Giada recipe). I add more chard, kidney beans and pancetta. I like a really thick minestrone. Will serve it with a warm, crunchy sourdough baguette. I can't wait!

The temperatures finally cooled, yesterday in the 80s and today in the 60s. Fajitas were for our mid-day meal. This evening it will be a hearty soup with our carrots, shell beans, onions and garlic from the garden. Add some beef and barley and I'll have a good soup (my doctor loves it when I relate that kind of stuff).

Warm again today.....was busy watching the President's Cup all day so not much time for cooking. We're just having hamburgers smothered in mushrooms and onions and some potato salad that I made yesterday. DH will be a happy camper! LOL

Mmmmm, those are two wonderful sounding soups. We're having grilled chicken thighs (skinnless) with a baste of a mustardy raspberry glaze. I'll grill a couple of sweet potatoes and sautee a pile of zucchuni and yellow squash.

I made this today, and as usual for a pork roast done in the crock pot, it was DRY. And I cooked for only 5hrs, as I know my crockpot runs hot.

Does anyone have a suggestion for why my pork ALWAYS is dry when coming from the crockpot?

Slow Cooker Pork Tenderloin
2 pound Pork Tenderloin
1/4 cup low sodium soy sauce
1 TBS Yellow Mustard
2-3 TBS maple syrup
2 TBS olive oil
2 TBS Diced dried onions
1 1/2 TSP Garlic Salt or Powder
Mix ingredients above. Pour over Tenderloin in the crock pot and cook on low for 6 hours.

I put a big beef roast with baby red potatoes and baby carrots and onions in the slow cooker earlier today. I have rice cooking for the rice and gravy. So that's our dinner.

I made soup, too! Very low calorie, but quite tasty.
Cabbage, kale, onion, celery, garlic, red bell pepper, carrot, chicken stock, Rotel tomatoes, fire roasted tomatoes and cilantro.

I love soup...but hubby doesn't...so when I make it I try to keep the amount to a minimum..

I did end up making my version of stove top mac...plus roasted cauliflower..

It was such a lovely day here...it's sad to know that it's changing as I type..

Oh dessert was more apples...crustless pie..or really slices with sugar and butter baked covered until soft..over vanilla ice cream..

The trees are heavy with fruit this year..thank goodness they are dwarfs!
