Wjhat a good cake

I was at a group of women this afternoon for a bagged lunch and making plans for the following few months activities.

One lady brought 1/2 of a cake they had had for thanksgiving. It was absolutely delicious.

She said it was pumpkin carrot and it had a special cream cheese icing. She had used a carrot cake mix and beyond that I don't know what she did.

Have any of you had this, and do you have a recipe to share?

I found recipes on the net but none that I saw started with a carrot cake mix.

I'm sure that you would enjoy it too.

Ole joyful, I saw you sneak in, but didn't see you leave. Why didn't you stay. Some men do occassionally join us. You would have been welcome.

Actually, I wondered if you were hiding in one of the cupboards.

If it was me baking it I would stay away from the boxed carrot cake mix. I baked a cake from a brand named carrot cake mix and it was horrid. I took one bite of the cake and tossed it. Smelled good baking but I didn't like the flavour - kind of tasted like soap to me. Maybe my taste buds were off but oooh -yuck. Even the creamed cheese icing couldn't save it.

I love muffins and cakes with pumpkin as an ingredient especially if they are topped or filled with a cream cheese icing.

Chase, I made this as a layer cake with a vanilla Vienna buttercream filling and frosting so I don't see why not. The original is baked in two layers so presumably it's intended to be filled. Traditionally here jam and cream is the filling for a Victoria sponge cake- this is my no fail recipe (even people who have said "I can't make a sponge cake have come back and said "Hey! That recipe really works!") Generally the top is just dusted with powdered sugar but I don't see why you couldn't top with whipped cream. No-Fail Sponge Cake 4 eggs, separated 3/4 cup superfine sugar 1 tsp vanilla 1 cup cornstarch 1 heaped teaspoon baking powder Preheat oven to 350F, grease and paper line two deep 8" pans. Beat egg whites until soft peaks form. With mixer running, slowly add sugar and beat until stiff peaks form. Keep mixer running and add egg yolks and vanilla. Now gently fold in cornflour mixed with baking powder until just combined. Pour mixture into prepared pans and bake about 45 minutes, or until well risen and firm to touch in the centre. Cakes should slightly shrink away from sides of tins. Remove from oven and immediately turn out of tins onto wire racks to cool. Fill with jam and cream or use as the base for sponge tortes. To make this a chocolate sponge, substitute 1/4 cup of sifted cocoa for 1/4 cup of the cornflour.

Like cloud swift, I use all butter for flavor, but if I have to decorate and want things to look just so, I use half butter and half shortening, as the shortening doesn't melt as quickly or get as soft. Like Sol, I don't think the cake sounds too heavy, as long as you don't skimp on that beating step. I know I hurried it once on Pixistix' Hot Milk Cake and got a very heavy cake, but it's far lighter when I don't hurry that beating in the beginning, then don't overbeat when I add the flour at the end. I'd also go for the cake flour if you are worried about the texture or density of the cake. The cake flour is lower in protein (i.e. less gluten development if overbeaten) and more finely textured. It generally makes a lighter cake. That said, I think it will be fine with all purpose, which I use for most of my baking, from cake to bread. I only buy the "specialty flour" when I'm doing something special, like my stepdaughter's wedding cake next week. As our Sol is a baker extraordinaire, she's never steered me wrong. If she says so, then I do it. And here some people thought I was a good baker, maybe I'm not that good after all, maybe it's just Sol's good advice and the recipes from here! Annie

This is the one I have used many times. It is yummy plain or with a fruit topping. We never have enough left to freeze so I can't answer that question. You will find the nut crust quite unusual. Source Copykat Recipe Crust 121/4 C. Finely Chopped Pecans 1/4 C. Finely Chopped Almonds 1/4 C. Finely Chopped Walnuts 3/4 C. Finely Chopped Vanilla Wafers 2 Tbsp. Melted Butter 9" Springpan (coat lightly with butter) Mix all nuts and vanilla wafer crumbs with melted butter and press in the buttered spring pan, trying to line the sides as much as possible about 1 1/2" up the sides of the pan, set aside. Filling 1 1/2 lb. Cream Cheese 1 1/3 C. Sugar 5 Large Eggs 16 oz. Sour Cream 1/4 C. Flour 2 tsp. Vanilla 2 tsp. Lemon Juice All above ingredients should be at room temperature before your begin. Methods/steps Start by beating the cream cheese until light and fluffy. Keep the mixer on a low setting throughout the beating and mixing process. Add the sugar a little at a time and continue beating until creamy. Add one egg at a time and beat after each egg. When eggs have been mixed into the cream cheese add flour, vanilla and lemon juice, mix well. Add the sour cream last and beat well. Pour cream cheese into the spring pan. Place on the top rack in the middle of a 325 degrees preheated oven for one hour and 15 minutes. When time is up, prop open oven door and leave in oven for one hour. After one hour, remove from oven. Let cool enough before the cheesecake is put into the refrigerator for 24 hours. A cheesecake should season. The wait is worth it. The flavor ripens and becomes enriched.

Here is a pumpkin carrot recipe, you can just use the carrot cake mix instead and add the extra ingredents to it.

These all look yummy.

The one I had to-day was from a mix and really was delicious. I'm hoping that I can find one using the mix. I expect you might have to alter the oil and maybe the eggs - but maybe not. I don't know.

I made the box cake, too, Cherryfizz and I agree. Ick! But if you add pumpkin and some other stuff it may be good.

I don't remember the brand name of the carrot cake mix I used because I actually hate mixes and rarely ever use one. I had a lot of unexpected baking to do for a club meeting and decided what the heck........and they raved about how good the cake was .....I think it was a Duncan Hines but I can't swear to it....but I do know that there is at least one good mix out there.

I always use Duncan Hines. I'm not fond of some of the others. I haven't made many cakes for a long time but would like to do this one sometime for the family.

This is perfect! My sons favorite cake is carrot and his favorite pie is pumpkin. His birthday is Saturday so I will be trying one of these recipes. Thanks!
