Do you Have A Good Cheese Cake Recipe?

Any one have a good cheese cake recipe? I also wonder if they can be frozen after being baked. I am thinking about making one for Easter, but would like to make it ahead of time.

I have one that I do,but it isn't baked,and it definitely could not be frozen

This is the one I have used many times. It is yummy plain or with a fruit topping.

We never have enough left to freeze so I can't answer that question.

Description This cheesecake is based from the one that you can purchase from Sam's Wholesale Club. You will find the nut crust quite unusual.

Copykat Recipe

Crust

121/4 C. Finely Chopped Pecans
1/4 C. Finely Chopped Almonds
1/4 C. Finely Chopped Walnuts
3/4 C. Finely Chopped Vanilla Wafers
2 Tbsp. Melted Butter
9" Springpan (coat lightly with butter)

Mix all nuts and vanilla wafer crumbs with melted butter and press in the buttered spring pan, trying to line the sides as much as possible about 1 1/2" up the sides of the pan, set aside.

Filling
1 1/2 lb. Cream Cheese
1 1/3 C. Sugar
5 Large Eggs
16 oz. Sour Cream
1/4 C. Flour
2 tsp. Vanilla
2 tsp. Lemon Juice
All above ingredients should be at room temperature before your begin. Methods/steps
Start by beating the cream cheese until light and fluffy. Keep the mixer on a low setting throughout the beating and mixing process. Add the sugar a little at a time and continue beating until creamy. Add one egg at a time and beat after each egg. When eggs have been mixed into the cream cheese add flour, vanilla and lemon juice, mix well. Add the sour cream last and beat well.

Pour cream cheese into the spring pan. Place on the top rack in the middle of a 325 degrees preheated oven for one hour and 15 minutes. When time is up, prop open oven door and leave in oven for one hour. After one hour, remove from oven. Let cool enough before the cheesecake is put into the refrigerator for 24 hours. A cheesecake should season. The wait is worth it. The flavor ripens and becomes enriched.

Carrot cake Julie TÃ¯Â¿Â½s 3 eggs 3/4 cup vegetable oil 3/4 cup buttermilk 2 cups sugar 2 teaspoons vanilla 2 cups flour 2 teaspoons baking soda 3/4 teaspoon salt 2 tsps cinnamon 1 8 oz can crushed pineapple, drained 2 cups grated carrots 1/2 cup raisins chopped with 1 Tablespoon of flour Buttermilk glaze 1/2 cup sugar 1/4 tsp baking soda 1/4 cup buttermilk 1/4 cup butter 1 Tblsp light corn syrup 1 tsp vanilla Orange Cream Cheese Frosting 1/2 cup softened butter 4 oz softened cream cheese 1 tsp vanilla 3 cups powdered sugar 1 tsp orange juice 1 tsp grated orange rind Preheat oven to 350 With a mixer Beat eggs, add oil and buttermilk, sugar and vanilla. beat to combine. Stir together flour, salt, cinnamon and baking soda and stir into batter. stir in pineapple, carrots and raisins. Pour into a greased 8 by 13 pan or 2 greased round 9 inch cake pans. Bake 35 to 45 minutes until set in the middle. Remove from the oven and immediately spread with the buttermilk glaze. Cool completely and frost with the cream cheese frosting. Buttermilk glaze: In a medium sauce pan ( don't use a small pan) combine all ingredients but vanilla. Bring to a boil and cook 3 minutes stirring often...it will bubble a lot. It should be a light caramel color, stir in vanilla and pour over the cake Cream cheese frosting: Beat cream cheese and butter until light add vanilla powd. sugar and juice and rind...beat until smooth and frost the cooled cake

Hi pattico, How great that you enjoyed the Lemon Cheesecake that was developed from the Kraft recipe book. I checked "my" Kraft recipe book, spring edition, to see whether it had lemon cheesecake (which wouldn't be a big deal to me, as I'm not a devotee of lemon). Not there - this is a Canadian edition. They sure do own a lot of our regular grocery items, though, don't they? This comes in step-aunt's name, who died over 5 years ago and I've never bothered notifying them to stop it, though I hardly ever make use of the recipes. It comes to the formerly correct address at a rural route, but now they've put a number on every house, for "911" reasons ... but the postmistress has a long memory. She's good at telling the mail "where to go". ole joyful

Here are two recipes I have made. Both are moist. I once sold the Pistachio Marble Cake at a bake sale for $15! Pistachio Marble Cake 1 pkg. yellow cake mix 1 pkg. (4-serving) Jell-O Pistachio Instant Pudding 4 eggs 1 C water 1/2 C oil 1/2 tsp. almond extract 1/4 C chocolate syrup Combine cake mix, pudding mix, eggs, water, oil and extract in large mixer bowl. Blend; then beat at medium speed for 2 minutes. Measure 1 1/2 C batter; stir in chocolate sryup. Spoon batters alternately into a greased and floured 10" Bundt pan or tube pan. Zigzag spatula through the batter to marble. Bake @ 350Âº for 50 minutes. Cool 15 minutes; remove from pan and finish cooling on rack. Sprinkle with confectioners sugar before serving. Pistachio Inside Outside Cake 1 pkg. white or yellow cake mix 1 pkg. (4-serving) Jell-O Pistachio Instant Pudding 3 eggs 1 C club soda 1 C oil 1/2 C chopped nuts Preheat oven to 350ÂºF. Blend all ingredients in large mixer bowl, then beat 2 minutes at medium speed. Bake in greased and floured 10" Bundt pan @ 350Âº for 50 minutes. Cool 15 minutes; remove from pan and cool on rack. Split into 3 even layers. Spread about 1C of frosting between layers, spoon rest into center. Chill. Garnish with chopped nuts. To make frosting: Blend 1 pkg. (4-serving) Jell-O Pistachio Instant Pudding with 12 ounces Cool Whip. Chill slightly to set.

Thanks, that sounds like a really good one. I'll copy that off. I think I have everything except the vanilla wafers and can get those when I get my groceries. I just like to get as much done as I can ahead of time as I never know how I will be feeling.

I have two. The one you might want to look at if freezing and it works really well in a 9x13 is the Creamy Baked.

However, I think cheesecake is fine in the fridge for a few days..just bring out to sit for serving..

Baked Cheesecakes freeze really well though. I like them frozen, and just thawing as I eat it. LOL

Thanks for the recipes. I have copied them and plan to make them at a later date as our oldest DD, Cheryl is going to bring one for Easter. That will save me some time.
