This is my go-to apple pie. It's Ina Garten's and no-fail and easy.

The pastry is flaky and is only one crust. Made is yesterday again.

Apple Crostata

Pastry (2 crusts)

2 cups flour

1/4 cup sugar

1/2 tsp kosher salt

1/2 lb very cold butter, sliced (I use 1/2 butter and 1/2 lard)

1/4 cup ice water

Filling (1 pie)

1 1/2 lb firm apples--empire, macoun, courtland

1/4 tsp grated orange zest

1/4 cup flour

1/4 cup sugar

1/4 tsp kosher salt

1/4 tsp cinnamon

1/8 tsp allspice

4 tbsp cold unsalted butter, diced

For the pastry place the flour, sugar and salt in food processor with steel blade. Pulse to combine. Add the butter and toss quickly and carefully with your fingers to coat each cube of butter with the flour. Pulse 12-15 times or until the butter is the size of peas.

With the motor running, add the ice water all at once thru the feed tube. Pulse to combine but stop the machine just short of the dough coming together.

Turn the dough onto a floured board and form into 2 discs. Wrap with plastic and refrigerate one of the balls for at least an hour. Freeze the other.

Preheat oven to 450 degrees.

Roll the pastry into an 11" circle on a lightly floured board. Transfer to baking sheet lined with parchment paper.

For the filling, peel and quarter the apples. Cut each quarter into thirds. Toss with orange zest. Cover the dough with the apples, leaving a 1 1/2" border of dough.

Combine flour, salt, sugar, cinnamon and allspice in food processor with steel blade. Add the butter and pulse until mixture is crumbly. Pour into a bowl and rub it with your fingers until it starts to hold together. Sprinkle evenly over apples. Gently fold the border over the apples, pleating it to make a circle. It won't meet, the apples will be visible.

Bake the crostata 20-25 minutes or until the crust is golden and the apples are tender. Let cool 5 minutes and transfer to a wire rack.
