Lemon-Garlic Chicken

This is for barbecuing the chicken but I don't see why the oven wouldn't work as well, which is what I'm going to do

8 skin-on, bone-in chicken breasts

1/2 cup lemon juice (2 lemons)

3 tbsp olive oil

1 tbsp garlic powder

1 tbsp oregano

1 1/2 tsp basil

salt and pepper

Make several shallow cuts in chicken to let the marinade infuse the meat. Place chicken in a dish just large enough to hold it snugly.

In a medium bowl, whisk lemon jjuice with oil, herbs, salt and pepper. Pour over chicken. Turn to coat evenly. Marinate at room temperature 20 minutes or refrigerate up to 4 hours.

Remove chicken from marinade and grill chicken with lid closed 15 minutes, then baste with the marinade.

Turn chicken and grill another 15-20 minutes.

Macaroni Salad

Ingredients

* 2 cups uncooked elbow macaroni
* 3 hard-cooked eggs, chopped
* 1 small onion, chopped
* 3 stalks celery, chopped
* 1 small red bell pepper, seeded and chopped
* 2 tablespoons dill pickle relish
* 2 cups creamy salad dressing (e.g. Miracle Whip)
* 3 tablespoons prepared yellow mustard
* 3/4 cup white sugar
* 2 1/4 teaspoons white vinegar
* 1/4 teaspoon salt
* 3/4 teaspoon celery seed

Directions
1. Bring a pot of lightly salted water to a boil. Add macaroni, and cook for 8 to 10 minutes, until tender. Drain, and set aside to cool.
2. In a large bowl, stir together the eggs, onion, celery, red pepper, and relish. In a small bowl, stir together the salad dressing, mustard, white sugar, vinegar, salt and celery seed. Pour over the vegetables, and stir in macaroni until well blended. Cover and chill for at least 1 hour before serving.
This is very much the way I make my macaroni salad. You can also toss in some cooked peas.

Thanks, Jasdip, I have been wanting to make Lemon Chicken, after seeing Debra serving it to Raymond, all those years on TV.LOL. I will give this recipe a try, it sounds easy.

Sauerkraut Balls 8 slices bacon ÃÂ½ cup finely chopped onion 1 clove garlic, minces -----we leave this out 1 can (16 oz.) sauerkraut drained ÃÂ½ cup mashed potatoes 1 Tablespoon parsley 1 ÃÂ½ cup finely crushed corn flakes 2 eggs beaten Oil Fry bacon in large skillet crisp, drain &n crumble. Pour off all but 2 T. fat. Add onions & garlic to fat in skillet. Cook & stir until onion is tender. Remove from heat, stir in bacon, sauerkraut, mashed potatoes & parsley. Drop by rounded teaspoonful onto waxed paper lined baking sheet. Gently form ball shapes. Cover with waxed paper or plastic wrap, refrigerate until firm or overnight. Dip sauerkraut balls in eggs. Roll in crushed corn flakes. Heat oil to 375ÃÂ°, fry until golden brown about ÃÂ½ minute. Drain on paper towels. Serve hot. Can be fried 24 hours in advance & reheat in 400ÃÂ° oven about 10 minutes. We fry, cool, and freeze. This is my MIL's recipe for Sauerkraut Balls. We don't put the garlic in them. The Cheesy Bacon Chicken Tater Tot Bake is in the crockpot, smaller version, and with frozen hash browns instead of tater tots. The convenience store was out of tater tots. I also have a Jambalaya recipe that I concocted several years ago at a family gathering. I think there were 20 some people there, so the recipe as I've recorded it is rather large. (with nearly 7 lbs of meat!) I prefer it done this way, with the rice prepared separately, rather than cooking the rice with the rest of the dish, since if there are leftovers the rice absorbs all of the liquid, making the rice gluey and the rest of the dish dry. Also since several members of the group didn't want it too spicy, the amount of red pepper, cayenne pepper and tobasco were much less than I would otherwise have used, but adding tobasco after it is served works very well. JAMBALAYA 2 lb Chicken Breast (3/4" cubes) 1 lb Honey Ham (1/2" dice) 1 lb Hot-Italian Sausage (de-skinned and broken into pieces) 2/3 lb Andouille-style smoked sausage 2 lb uncooked shrimp (cleaned, de-shelled, and de-tailed, cut into thirds) 2 large sweet yellow onions chopped into 3/4" square pieces 2 red bell peppers (remove stems, seeds and membranes and cut into 1" by 1" pieces) 2 yellow bell peppers 4 cups of rice 2 large cans diced tomatoes 1 15 oz can tomato paste Olive oil 10 cloves garlic 2 tsp red pepper flakes 1/2 tsp black pepper blend (ground) 1/4 tsp cayenne pepper 4 shakes Tobasco sauce 1 tsp thyme 1 tbsp chopped parsley In one large pan, cook onion in olive oil, add thyme and 3 cloves of garlic (chopped) until onion starts to turn translucent, then add bell peppers and cook another 10 minutes or so. In a different large pan, cook chicken and hot Italian sausage until both are lightly browned and mostly cooked. Empty both pans into large pot. Stir in tomatoes (including water from tomato cans) and the tomato paste. Bring to a low boil and reduce heat to a simmer and stir well. In the chicken pan, cook Andouille and ham over medium heat for 10 minutes, then add to large pot. Crush remaining garlic and other spices except parsley into large pot to suit taste. Cook rice separately while continuing to simmer large pot. When rice is done, remove large pot from heat and add shrimp stirring until it is cooked. Serve over rice, adding tobasco to taste, top with a pinch of parsley.

I made Ina's Apple Crostata the other nite. It's our favourite apple pie, by far. I thought of taking a pic, after we'd already had our pieces. Apple Crostata (Ina Garten) Pastry: 1 cup all-purpose flour 2 tablespoons granulated or superfine sugar 1/4 teaspoon kosher salt 1/4 pound (1 stick) very cold unsalted butter, diced 2 tablespoons ice water For the filling: 1 1/2 pounds Macintosh, Macoun, or Empire apples (3 large) 1/4 teaspoon grated orange zest 1/4 cup flour 1/4 cup granulated or superfine sugar 1/4 teaspoon kosher salt 1/4 teaspoon ground cinnamon 1/8 teaspoon ground allspice 4 tablespoons (1/2 stick) cold unsalted butter, diced For the pastry, place the flour, sugar, and salt in the bowl of a food processor fitted with a steel blade. Pulse a few times to combine. Add the butter and pulse 12 to 15 times, or until the butter is the size of peas. With the motor running, add the ice water all at once through the feed tube. Keep hitting the pulse button to combine, but stop the machine just before the dough becomes a solid mass. Turn the dough onto a well-floured board and form into a disk. Wrap with plastic and refrigerate one for at least an hour. Preheat the oven to 450 degrees. Flour a rolling pin and roll the pastry into an 11-inch circle on a lightly floured surface. Best cake I have ever made is this one..... APPLE CIDER POUND CAKE 3 cups sugar 1-1/2 cups butter, softened 6 eggs 3 cups all-purpose flour 1/2 teaspoon salt 1/2 teaspoon baking powder 1 teaspoon ground cinnamon 1/2 teaspoon ground allspice 1/2 teaspoon ground nutmeg 1/4 teaspoon ground cloves 1 cup apple cider 1 teaspoon vanilla extract ICING: 1/2 cup sugar 1/4 cup butter, cubed 1/4 cup buttermilk 1/2 teaspoon vanilla extract 1/4 teaspoon baking soda Directions In a large bowl, cream sugar and butter until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir together all dry ingredients; set aside. Combine cider and vanilla. Add dry ingredients alternately with cider mixture to batter. Mix until well blended. Spoon into a greased 10-in. angel food cake pan or fluted tube pan. Bake at 325 degrees F for 1 hour 10 minutes or until a toothpick inserted near the center comes out clean. Meanwhile, combine icing ingredients in a saucepan. Bring to a boil; reduce heat and simmer for 10 minutes. While cake is warm, drizzle half of icing over cake. I haven't made this but I've eaten it. Nice blend of sweet and hot. Couldn't be easier and it's pretty!

SPICED CRANBERRY DIP

1 pkg. (8 oz.) cream cheese, softened
1/2 c. canned whole berry cranberry sauce
1/4 c. orange marmalade
1/8 tsp. ground red pepper (cayenne)
1/4 c. slivered almonds, toasted

Spread cream cheese on bottom of a 9" pie plate. Mix cranberry sauce, marmalade and red pepper. Spoon over cream cheese. Sprinkle with almonds. Serve with Ritz crackers.

Made these once and they were oh so tasty!

Cranberry meatballs
2 pounds ground chuck
2 large eggs
1/3 cup dry breadcrumbs
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon thyme
1 (16-ounce) can cranberry sauce OR you can use the whole cranberry suce.
1 (12-ounce) jar chili sauce
1 Tablespoon brown sugar
2 tsp lemon juice
Combine first 8 ingredients in a large bowl. Shape mixture into about 54 (1-inch) balls.***I made 75 with smaller balls

Cook meatballs, in batches, in a large skillet over medium-high heat until browned (about 5 minutes); remove meatballs from pan, and drain well on paper towels.

Stir together cranberry and chili sauces, sugar and lemon juice. in a large Dutch oven over medium heat, and cook, whisking occasionally, 5 minutes or until smooth. Add meatballs; reduce heat to low, and cook, stirring occasionally, 15 to 20 minutes or until centers are no longer pink. **Because my meatballs were smaller, cooked in 10 minutes.

***The thyme, etc added an extra delightful taste to the meatballs

Breakfast egg-a-muffin

6 english muffins(wheatberry is my fav)
6 Eggs
1 lb bulk breakfast sausage(divide into 6 patties),6 slices of ham or 12 slices of bacon 1/2 lb colby cheese, 6 slices

fried mushrooms,peppers or onions are optional

*butter for each side of the muffin

I microwave an egg in a plastic 1/2 lb butter tub(same size as an english muffin) with a teaspoon of water and the lid half on, 3 @ a time for 1 minute....then hit another minute & let sit. Use a spoon to scoop out in one perfect piece.

On a griddle that covers 2 burners...I cook all 6 sausage patties @ once. Then layer one sausage patty, cheese slice and egg onto a buttered english muffin. And yes....mushroom & onions and all that is delicious....but they are already too thick to put into your mouth, but you can try! Then put in a baggie. They keep for a week in the fridg no problem. Makes 6.
