Here you go Pat, it's Ann T's recipe. As you can see in the picture I do individual puffs. Ann does a full ring. La Gougere (Ann T) 1 Cup water (or half milk/halfwater) 1/3 Cup butter 1/2 Tsp salt fresh nutmeg,Grated cayenne pepper 1 Cup flour 4 eggs 1 Tbl Dijon Mustard 1 Cup gruyere cheese 1 Tsp milk extra cheese for top Bring the water/milk to a boil and add butter. When butter has~melted remove pan from heat and add flour, salt, cayenne, nutmeg, pepper and stir vigorously with a big wooden spoon. The mixture should come away from the sides of the pan and form a ball. Place mixture in the bowl of a large mixer and add one egg at a time beating well, After you add last egg continue to beat well. Mixture will be shiny. Add dijon mustard and taste for~ seasoning. Adjust to your taste. Add coarsely grated cheese. Butter a large cookie sheet and flour. Draw a small circle in the flour (about 2 inches wide) and proceed to drop the dough by tablespoon fulls around the outside of this hole, making a ring, or a crown. Dough should be piled high. Brush lightly with milk and sprinkle the extra cheese over top. Bake the ring in the over for 45 minutes at 400F. Do Not Open Door. Aften baking, open the door of the oven and leave the gougere in the oven for 5 minutes. It should be firm to the touch and golden brown. My Notes: 1)Do not refrigerate batter it needs to be at room temp. Do not place on the pan until ready to cook or they will spread. Cook as close to servng as possible...best warm but OK room temp 2)Gougere are best when cooked as close to preparing the batter as possible in order to get maximum "puff" and best texture. 3)I prefer individual puffs. Scoop up a heaping teaspoon of dough and with another spoon, push it off onto the paper-lined baking sheet (it should form a mound about 1 inch in diameter). Continue with the remaining dough, leaving an inch of space between the gougeres (work in batches as necessary, the dough can stand, covered with buttered waxed paper or parchment, for up to 1/2 hour). Bake until the gougeres are puffy and light golden, about 25 minutes, switching pan positions halfway through. Remove from oven and let cool slightly before serving, or turn off oven and let gougeres remain in oven, with door ajar, for up to 1 hour. 4) Chopped chives make an nice addition so does roasted garlic .

They freeze well, but thaw them before adding icing. I posted this last year and got quite a few comments from people who said everyone loved them. * 1/2 C butter * 1/2 C sugar * 1/3 C brown sugar * 1/2 tsp. lemon zest * 1 egg * 2 tsp. vanilla * 1 C flour * 1 tsp. baking powder * 1/2 tsp. cinnamon * 1-1/2 C chopped pecans (I use walnuts) * 1-1/2 C chopped fresh cranberries Cream butter, sugars, and lemon zest. I finally got around to developing and testing this recipe and making the photos. My goal was a zippy cranberry chutney. Cranberry chutney is not such an original idea as I first thought. Malna posted one early in this thread and it turns out there are many recipes for it on the Internet. Anyway, here is mine. Chutney Ingredients Chutney Appetizer CRANBERRY CHUTNEY 12 oz. fresh or frozen cranberries 1 orange, chopped 1 apple, chopped 2 Tablespoons finely minced shallots 1 Tablespoon finely minced fresh ginger root 3/4 Cup white vinegar 3/4 Cup white wine 1 Cup sugar 1 teaspoon salt 1 teaspoon ground cinnamon 1/4 teaspoon ground cloves 1/4 teaspoon ground allspice Combine all ingredients and bring to a boil in a covered pot. Simmer covered for 5 minutes. Simmer uncovered for 25 minutes. Note: Prior to cooking, it may appear that there is not enough liquid. Check the consistency after the first five minutes of cooking. Add wine or water if necessary. The final product should be thick. You made my day. LPM, this chutney was pretty much what I expected it to be. It's based on a review of many other recipes so I couldn't go too far wrong. My main innovations were to use shallots, ginger root and wine, nothing especially daring but fitting to the concept of a chutney I thought. I was tempted to use balsamic vinegar but went with white vinegar for the sharpness I wanted. I figured the other ingredients would provide enough fruitiness. Since it is the only cranberry chutney I ever tasted, I have no basis for comparison. I can only say it tastes good to me. I agree about that recipe which called for sage. I would not use green herbs. IMO, it's sweet spices you want with the fruitiness of chutney and that is consistent with most of the recipes I looked at. I just looked at Malna's recipe again and it looks like she also used ginger root, not ground ginger. Check her recipe and look at a few of the other on-line recipes and see what you think. Let us know if you make chutney. There is no total reason for this, other than I've never tried it. But also, I am not a big curry fan, and I don't really know why, because I liked seasoned food. There must be some particular ingredient in curry I don't like, and I think it may be fenugreek. Here's my take on the chutney issue - I much prefer the sweet one. As a matter of fact, I can just eat it right out of the jar. On a turkey sandwich? To die for. The curried one - DH loves it. I liked it right after I canned it but, as I said above, I think the curry part got too strong after a few months on the shelf. BTW, the ingredients in Balti are coriander, garlic, ginger, cumin, dundicut chilies, Ceylon cinnamon, mustard, cardamom, cloves, fennel, fenugreek (sorry, LPM), charnushka, star anise, ajwain, black cardamom, cilantro, anise seed and bay leaf. Whew, long list to type!

Update: they've decided against the resort for lots of reasons, some logistic, some esthetic, mostly they just couldn't "see" a wedding there in their respective mind's eyes. That last is probably the most important qualification or lack thereof.....I think DD was looking for a place that would make her say yes, this is a place I would really like to have a wedding, and that would make her want to have one We have backed out of the planning/ viewing / discussion process. We told the couple we would give them X amount of money to do with as they wish and have offered an engagement party here at home in the spring, probably May. I think they will likely just elope in early December. Last night some of our city friends hosted a dinner party in honor of their engagement. It was lovely amd DD and DF enjoyed themselves very much but have strongly discouraged or simply refused all other offers of parties, luncheons or showers. Much to my mother's disappointment!

Yesterday afternoon was windless and sunny, in the mid20’s, so I went for a walk in the field along the river. A pair of mature bald eagles flew out of one of the large pines along the bank and right over my head a couple of times as they gained altitude to clear the trees farther upriver. I only had my cellphone, but at least low flying eagles are large enough to be visible in the photos. All fall and into early winter I have been seeing mergansers on the river, but I haven’t remembered to grab the camera, and they are too far to photograph with the phone because it is a long riverbank. The males have had a good amount of white well into December, so I wonder if that is from last year’s breeding plumage or for this coming year. There was ice starting to form on the river yesterday and I didn’t see the mergansers, so they may have decided to move somewhere that the water will remain open during the winter.
