Remember pudding cake?

Do you remember that messy looking but delicious chocolate pudding cake? My older sister discovered the recipe in the late 1950s; it's fast to bake and yummy. You bake it in an 8 or 9 inch square pan, and as it bakes it forms a pudding layer under the chocolate cake layer. It is bumpy and doesn't look fancy at all, but it sure is heavenly with a little vanilla ice cream.

Yes, and there is also the lemon pudding cake and the butterscotch pudding cake. All are really good. I even remember baking them in the microwave too.

Hot Fudge Pudding Cake

Ingredients:

* 1-1/4 cups granulated sugar, divided
* 1 cup all-purpose flour
* 1/2 cup HERSHEY'S Cocoa, divided
* 2 teaspoons baking powder
* 1/4 teaspoon salt
* 1/2 cup milk
* 1/3 cup butter or margarine, melted
* 1-1/2 teaspoons vanilla extract
* 1/2 cup packed light brown sugar
* 1-1/4 cups hot water
* Whipped topping

Directions:
1. Heat oven to 350ÃÂ°F. Combine 3/4 cup granulated sugar, flour, 1/4 cup cocoa, baking powder and salt. Stir in milk, butter and vanilla; beat until smooth.

2. Pour batter into ungreased 9-inch square baking pan. Stir together remaining 1/2 cup granulated sugar, brown sugar and remaining 1/4 cup cocoa; sprinkle mixture evenly over batter. Pour hot water over top; do not stir.

3. Bake 35 to 40 minutes or until center is almost set. Remove from oven; let stand 15 minutes. Serve in dessert dishes, spooning sauce from bottom of pan over top. Garnish with whipped topping. About 8 servings.

I've had this recipe at least since the 70's, and, since it's an historic recipe, is probably quite old. Fudge Batter Pudding Cake Shaker Hancock Village Sauce 1/2 cup white sugar 5 Tblsp. unsweetened cocoa powder 1/4 tsp salt 1 2/3 cups boiling water Batter 2 Tblsps butter, melted 1/2 cup white sugar 1 tsp. Vanilla 1 cup white flour 3 Tblsp. unsweetened cocoa powder 1 tsp. baking powder 1/2 tsp. salt 1/2 cup whole milk 1/2 cup coarsly chopped walnuts or pecans Set oven for 350 F. Butter 1 1/2 qt. baking dish. Sauce: Combine sugar, cocoa powder and salt in bowl and stir until combined. Pour in boiling water and stir until completely dissolved. (This will be very liquid and not look like a sauce at all.) Pour into baking dish. Batter: Combine the melted butter, sugar and vanilla in small bowl and set aside. In large bowl sift together flour, cocoa, baking powder, and salt; stir milk into butter mixture alternately with flour mixture; stir in nuts. Drop large spoonfuls of batter onto chocolate sauce. Bake for 40 minutes. Cool slightly. Serve warm.

According to Stacy's description, she might be referring to 'Pouding Chômeur.' It's a French-Canadian dessert, which is also known as 'Poor Man's Pudding.' And yes, it is extremely sweet. Very similar to the American Upside-Down cake, minus the fruit. But so delicious, that I haven't made it in years, because I can't be left alone with it. I have a picture of it somewhere, and a recipe I'd be glad to provide, if you haven't already found one. So here it was. It was fabulous. For the frosting I did 1/4 c lightly salted softened butter creamed with 4 oz softened cream cheese. Then added 3 c confectioners sugar, the zest of 1 orange and the juice from half the orange. I refrigerated overnight to allow flavor to develop. Then I made the cake the following morning. I added the juice from the remaining half of the orange to soften the frosting before frosting the cake. For the cake I just did my standard gluten free yellow cake and added the zest and juice of 1 orange at the end of prep.

My hubby LOVES these! Luckily he also loves to bake them. Kind of wish he liked the cleaning part at least a little ;)

We love the chocolate pudding cake, but would be interested in trying the other recipes. Does anyone here have them?

As I recall, there was also a recipe where you added a package of pudding mix (maybe instant?) to the batter. It didn't create a liquid layer, just added to the flavor. I think it also required oil and egg.

You can buy packaged pudding-cake mix (various flavors) now in pretty much any grocery store. I haven't tried it. The "real thing" is so darned easy.

Lemon Pudding Cake

Ingredients:
4 eggs, separated
1/3 cup lemon juice
1 teaspoon lemon zest
1 tablespoon butter
1 1/2 cups white sugar
1/2 cup sifted all-purpose flour
1/2 teaspoon salt
1 1/2 cups milk
Directions:
1. Beat together egg yolks, lemon juice, lemon rind, and butter or margarine until thick and lemon colored. Combine sugar, flour, and salt; add alternately with milk to the yolk mixture, beating well after each addition.
2. Beat egg whites until stiff. Blend egg whites into batter on low speed of electric mixer. Pour into 8 inch square baking dish.
3. Place a pan of hot water in the oven, and set the baking dish into the pan. Bake at 350 degrees F (175 degrees C) for 45 minutes.

Hot Fudge Pudding Cake; that brings back an old memory.

My recipe is like Marilyn Sue's except it calls for salad oil in place of butter.

Now I want some!

At the cooking forum, they have been talking about Earthquake cake. I looked it up and sounds rich and delicious!

DS's birthday is coming up and I might just make that.

Earthquake cake

1 each german chocolate cake mix
1 cup flaked coconut
1 cup chopped pecans
8 ounces cream cheese
3 1/2 cups confectioner's sugar (1 lb)
1/2 cup butter
1 tsp vanilla

Instructions
1. Preheat oven to 325 degrees. Spray a 9 x 13 pan with cooking spray.
1. Spread coconut and pecans over bottom of pan evenly.
1. Mix cake mix according to package directions. Pour over the pecans and coconut.
1. Melt butter: Add with cream cheese, vanilla, and confectioner's sugar to a medium-sized bowl and mix well til smooth. Spoon with a teaspoon over the cake and lightly spread around.
1. Bake cake at 325 degrees for 50 - 55 minutes or until done. It will still look not done in the middle, but take it out and let it cool.
  
  Very similar to Paula Deen's ooey gooey chocolate bar cake
