I was going to say that waffle and chicken salad sandwiches have been around for ages but you said Belgian waffles! Those are special....and I'll bet that the chicken salad was extra special, too!
I don't care for waffles, although I've eaten a Belgian waffle once or twice and it was Ok. I don't think that I'd care for it as a sandwich. But it sure sounds different! I've never heard of a waffle (Belgian or otherwise) sandwich!

The PA Dutch version is to make creamed chicken and put it over a waffle! So delicious!!! It can go over any kind of waffle Belgian or otherwise. I made it once for my Grandchildren and they loved it! Joann
I was going to mention creamed chicken and waffles, too. It's a family favorite for us. My mother makes them once a year. They are so good. Never thought of chicken salad and waffles, but that sounds good, too.
