Dinner on Monday?

I am sorry to be late again. I was caught up in trying to find a large button remote control for my sister. I found one to order but it had equal negative and positive reviews. My dinner tonight will be a supper of shaved beef hoagie. We have never tried this before.....How about you?

5 Guys for me, today, for a little burger with mayo, lettuce, grilled onions. Their buns are so fresh!

Glenda's picture of spinach quiche looked so good the other day, I decided to make spinach quiche for dinner. I think we'll have Caesar salad to go with it since I already have the dressing made from the other night and it doesn't last forever.

Rhizo, it does seem like we've been eating (and cleaning, breading, cooking) a lot of clams, I'm almost a little 'clammed-out'....DH doesn't like to see them frozen. But they are close, plentiful, and it feels wasteful or something not to dig them the days the State has opened the beaches for clamming, so we eat clams ;) I can a few jars for dips, chowder in off-season but haven't yet this year.

LOL Angela.......looking forward to an avocado!! Rhizo, I wish I lived closer, I'd crash your dinner. Now you made me want kabobs! Raven, I love a good sub.Haven't had a sub in a long time. Kittie, we love hamburger patties and broccoli. We need a potato though. OF, steak and strawberry pie. You eat well. Marilyn, tacos are so good. Now you made me want them, too. Glad I could help with your watermelon craving. :) Shirley, I always, always want ham, potatoes and green beans. I keep looking for ham on sale but it hasn't been in a dog's age. I think instead of craving everyone's meals and make them, I'll just have to make a road trip and visit you all!

Here it is Grams. This only makes about 2 big bowls, I double the recipe (for just 2 of us)......Angelaid Crockpot French Onion Soup 2 cans of beef broth 3 T butter 2 yellow onions 1/2 T granulated sugar 1/4 cup cooking sherry 1/2 t kosher salt (you might need more if your butter isn't salted) slices of brown rice bread (or french bread) gruyere cheese (swiss could work too) Heat your crockpot to high and plop your butter in to start melting slice the yellow onions into rings break up the onion slices with your fingers, and rub them around in the melted butter add the beef broth, sugar, salt, and sherry cook on high for 6-8 hours or low for 10-12. It takes a while for the onions to get translucent and pliable Before serving: --preheat oven to the broiling option --toast 4 slices of the bread that you are going to use. That Trader Joe's brown rice bread needed to be toasted twice in my toaster to get to the desired crunchiness. --cut gruyere cheese into slices --put the cheese onto the toasted bread, and carefully float the bread and cheese on the top of the soup --remove stoneware from crockpot and place the UNCOVERED stoneware into the oven --broil for a minute or two--the cheese should be all melty and turn a golden color ladle into 4 bowls.

I had a crock pot full of lima beans simmering for dinner. Then I stopped by Whole Foods on the way home to pick up a couple of things. They were having a fundraiser for a local charity that provides food to needy families. Whole Foods was donating the food so the entire donation went to the charity. For $5, you got an entree & two sides. I called DH & he came over. He had catfish with grits, collards & pecan pie. I had the catfish and grits too, but with sweet potato wedges and something called a root vegetable mash. It was all very good. The lima beans will be dinner tomorrow night.

Been busy today so just made a chicken/egg salad sandwich and heated up leftover homemade vegetable soup.

I had a cottage cheese stuffed home grown tomato, a part of a baked potato, a little home grown cantaloupe, a piece of Sock it To Me Cake and a pint of milk. We picked more tomatoes today, not sure when I am canning busy days ahead. Very nice weather here today.

Some lean pork chops, breaded in panko crumbs, baked in the oven with a bit of butter.

I was tempted to go to my usual, Ashley Mac's for their spinach and feta, but decided it would take too long and I'd be late for my mamo.

Well, no hoagies tonight. Hubby was late getting back from foot doctor, so we each threw something together. Everyone's meals sound great.

Turkey/Parm meatballs just went in a bath of jarred Marinara in the oven..pan of water on the stove for Kellan to put bowties in..

I just jumped on the bike...

Guacamole was on my menu, too. I chopped up a big chicken breast and sauteed it with an onion and Penzey 's Southwest seasoning. Then piled some on a flour tortilla and added layers of salsa, chopped tomato, lettuce, sour cream.......and guac.

Don't know what the heck to call it, but it hit the spot!

I was too tired to view this last night, but we had homemade Chicken and Dumplings. Was really good!
