{{!gwi}}Whistle Stop Cafe now Irondale Cafe for my good eats today.

Had a business appointment and in the neighborhood so I stopped for lunch before time for the meeting.

Had their fried chicken livers, always have their wonderful carrot raisin salad, and their buttermilk cornbread, which BYW our patti 43 loves to make the cornbread.

Looking forward to hear your big meal of the day!

getting some boneless loin pork chops ready to put in the oven. Having acorn squash and fresh carrots also.

Well, I don't know about a big meal of the day, guess it was at noonish. Cheryl and I picked up lunch in between working on tomatoes to can into juice. I had a taco salad from Taco Bell. Supper was just a peanut butter sandwich. We canned two cannings of tomato juice, should end up with 14 quarts if they all seal. Had a quart and a half pint left so I put them in the refrigerator. I plan on making home made chili soup sometime this week. A very pretty day out.

Seriously, Christmas dinner here is the day after when my husband gets home. We eat at dinner time (5 or 6 pm). If you do show up (it is an invitation, after all), be prepared for a rude awakening as the dining room table is full of brug cuttings. You will have to sit in the living room & balance your plate on your lap. Doing this puts it at the perfect nose-height for a 150 lb Newfie (who drools & will steal shamelessly). We consider cat hair extra insulation for the winter & it is applied liberally to every available surface. You will be taking a free sample with you when you leave. Those of you who are "pee shy" had better "go" before you leave home & be prepared to hold it. We have 10 cats (I do fostering & will be encouraged to take one with you when you leave) & no one gets privacy (picture all those cats watching your every move). Also please be aware that homemade means there's hair in it (& possibly worse). In other words, you were warned. LOL Linda

We woke up to a light rain this morning. It's got a nip in the air and got up to 62 degrees. We liked it! :0) Very hearty and I put hot sauce over mine. 3 lbs potatoes, diced(small) & boiled, skins on 1 lb bulk breakfast sausage 1 cup diced raw onion 6 eggs 1 Tbl flour 1/2 lb grated cheddar cheese Seasoning salt & pepper to taste Fry the sausage, drain any grease off & add onions in a skillet until fully cooked. Press the potatoes into a 13 x 9 casserole dish. Spoon the sausage mixture over the potatoes. In a large mixing bowl whisk eggs, flour, salt & pepper. Pour over casserole, distribute the grated cheese over the top. Cover with foil. Bake 1 hour @ 400 degrees. This post was edited by nicole__ on Wed, Sep 10, 14 at 21:10

Pistachio Icebox cookie Pistachio cranberry icebox cookies MAKESABOUT 3 DOZEN COOKIES ACTIVE TIME:20 MIN START TO FINISH:2 1/2 HR Gourmet magazine, DECEMBER 2006 It doesn’t get fancier or more Christmassy than these glittery-edged cookies sporting studs of red and green. But all that festivity comes in an easy slice-and-bake package, so you can always keep a log of dough in the fridge, ready to go when company unexpectedly comes calling. This is just one of Gourmet’s Favorite Cookies: 1941-2008 [EDITED TO ADD: Sadly the link to this fabulous cookie collection is broken. I encourage you to go to the Gourmet website and retreive and print recipes you are interested in, before it goes away. Epicurious has many Gourmet recipe, thankfully, but the photos of the cookie recipes are fabulous and only available at Gourmet.com.] Although we’ve retested the recipes, in the interest of authenticity we’ve left them unchanged: The instructions below are still exactly as they were originally printed. 1 1/2 cups all-purpose flour 1/2 teaspoon cinnamon 1/4 teaspoon salt 1 1/2 sticks (3/4 cup) unsalted butter, softened 1/4 cup plus 2 tablespoons granulated sugar 1/2 teaspoon finely grated fresh orange zest 1/2 cup shelled pistachios (2 1/4 oz; not dyed red) 1/3 cup dried cranberries (1 1/4 oz) 1 large egg, lightly beaten 1/4 cup decorative sugar (preferably coarse) SPECIAL EQUIPMENT: parchment paper MAKE DOUGH: • Stir together flour, cinnamon, and salt in a bowl. • Beat together butter, granulated sugar, and zest in a large bowl with an electric mixer at medium-high speed until pale and fluffy, about 3 minutes. Reduce speed to low and add flour mixture in 3 batches, mixing until dough just comes together in clumps, then mix in pistachios and cranberries. Gather and press dough together, then divide into 2 equal pieces. Using a sheet of plastic wrap or wax paper as an aid, form each piece of dough into a log about 1 1/2 inches in diameter. Square off long sides of each log to form a bar, then chill, wrapped in plastic wrap, until very firm, at least 2 hours. SLICE AND BAKE COOKIES: • Put oven racks in upper and lower thirds of oven and preheat oven to 350°F. Line 2 large baking sheets with parchment paper. • Brush egg over all 4 long sides of bars (but not ends). Sprinkle decorative sugar on a separate sheet of parchment or wax paper and press bars into sugar, coating well. • Cut each bar crosswise into 1/4-inch-thick slices, rotating bar after cutting each slice to help keep square shape. (If dough gets too soft to slice, freeze bars briefly until firm.) Arrange cookies about 1/2 inch apart on lined baking sheets. • Bake cookies, switching position of sheets halfway through baking, until edges are pale golden, 15 to 18 minutes total. Transfer cookies from parchment to racks using a slotted spatula and cool completely. COOKS’ NOTES: Dough bars can be chilled up to 3 days or frozen, wrapped in plastic wrap and then foil, 1 month (thaw frozen dough in refrigerator just until dough can be sliced). My kitchen remodel was absolutely designed around how I cook & how we use the kitchen. Three things I wanted were: 1. Lots of natural light - I cook from-scratch meals almost every day and spend a lot of time here. In addition to prep/cooking, this is where most casual entertaining happens, where I fold laundry, work on the computer, and where DH & I eat most meals. I used to have one small window and we looked at walls of upper cabinet boxes (depressing). We eliminated many uppers, added storage in the island, put the range in the corner so that this is now what I see when I'm working there. 2. Induction range - I also chose my stove for how I cook. I prefer the look of a pro-style gas stove but chose induction because the perfect stovetop temp control works best for my style of cooking. I don't do wok or high sear frying, but for 9 months of the year you'll likely see a pot on my stovetop. I do lots of stocks, soups, stews & chowders. Induction was made for simmering! Here's the pot of chicken stock I have going on this rainy day. 3. Big stone (no prep sink) island -I chose to have a big, uninterrupted island top that, in addition to being our preferred everyday eating spot, also works as a serving table for buffets (has the plugs for crockpots/warming trays). It also allows for a number of people to work around it with room to spare. Like when the grands come over for the annual Christmas cookie bake ;) There are SO many elements I just love in other kitchens posted here but some just wouldn't have worked as well for me. I've used this kitchen for almost a year now, though, and still appreciate it every day. Great thread to get people in the planning stages to really consider their priorities for use over just looks. Everything listed so far sounds very good to me. I had fish, sweet potato, and peas. Looked so colorful and pretty on the plate.

jeaninwa, I haven't baked an acorn squash in ages! Used to love those!
Taco salad sounds good, Marilyn SUe, but peanut butter sandwich, well.......... :o)
I'd like a cheeseburger mac and cheese, raven, that sound great!
gadgets, I just love a baked sweet potato plain, it if's a really sweet one. What kind of fish did you have?

I made a Pot Roast dinner in my cast iron Dutch Oven..with potatoes, carrots & onions. Not only was it delish-but my house smells so darn good!

sharon, that's the way I always cook a pot roast in the cast iron dutch oven. I agree, the smell is so darn good!

Doctored up a can of vegetarian baked beans to put in the oven with a couple lemon pepper seasoned chicken breasts. Made garden salad to go with, and finished up some leftover from yesterday roasted cauliflower with garlic. We ought to be well gassed up for tomorrow, lol.

I made a recipe for chicken gumbo.....onions, celery, chunks of chicken, sausage, chicken broth and spicy vegetable juice and spices. It's to be served over rice. It was very soupy, so I threw some rice in the soup. I put a bit too much in, and it was thicker than I wanted, but I still served it over rice. It turned out more like a jambalaya, which I didn't particularly want, but it was still good.

pam, I'll go for a roll and meatloaf! Can't beat that! Maybe patti will pop in soon with an update. If not I might give her a call end of the week to check.

gazania, your whole meal sounds great! Yummm, lemon pepper chicken!

All the ingredients for your gumbo sounds great, jasdip. Know it was tasty!

I'm doing some market research this week. I was sent a box with 4 meal items to use this week. I'm answering questions online and recording video of the meals for $175. Can't talk about what they were! Anyway so far they have been real easy to make!

Tuesday.....

Lunch - none (couldn't get away from my desk)
Dinner - my sweet husband brought me a salad and two slices from a frozen pizza (I still couldn't get away from my desk)

Was not a good work day! I did leave to get breakfast at about 8 a.m. but otherwise was working from 5 a.m. to 8 p.m. when I was finally able to leave, jump in the shower, then directly into bed!

Not a good work day :-(

But I sure appreciated that salad and pizza!

I agree Glenda you are doing great, we miss Patti but certainly understand her need to relinquish the task.

The only suggestion I could make is put the day in the title so if there is more than one topic on the page we use the proper days. I have a hard time anyway lol.
