Need a recipe idea for Mexican fiesta

Hi all you good cooks! I am going to an event this weekend in which the theme is "Mexican fiesta" and am to take a finger food. Appetizers or desserts mainly. I know what a few of the others are taking: taco dip; another dip with black beans, corn, avocado and salsa; and brownies (the Mexican type with cinnamon in it).

Since these are the things I thought of and pretty much are my Mexican repertoire, what else can you suggest?

Maybe mini margarita cupcakes?(here is a from scratch recipe but there are doctored up cake mix recipes for those out there)

Ditto on Oriental Trading Company! Can you buy Amy's Cheese Enchiladas (frozen, family pack) where you live? They are REALLY good! If you are serving dinner and it's not too many people, I'd recommend them! I miss them; can't buy them here. You could also have a "salsa tasting." Buy several different types and put them all out in little bowls with a big bowl of chips. Here's the recipe for one of my specialities. It's named after my young daughter who refined it to her tastes. The result: adults and kids alike LOVE it! It doesn't matter how much I make, there is never any left over. Annamaria's Texas Guacamole 2 lbs. ripe avocados 1/4 cup LIME juice 1/4 cup minced red or sweet onion 1/2 cup chopped tomatoes 1 teas. salt (or to taste but remember chips are salty) Peel and pit avocados and mash with fork. I (with LOTS of help) did a Mexican Fiesta for 150 adults last year at our club. We cooked ground beef with taco seasoning (bought a huge container of taco seasoning at Costco or Sam's-very reasonable) the day before and reheated it in slow cookers from which we served. For garnishing, we bought bags of shredded Mexican blend cheese (Costco or Sam's again), chopped onions, drained diced canned tomatoes (saved alot of work) and shredded lettuce. Oh, and sour cream! We offered soft tortillas and corn taco shells. The preference for soft tortillas was probably 9 to 1, a big surprise to us!!! We cooked big batches of Mexican Rice and Vegetarian refried Beans as accompaniments. Of course, we had a big batch of salsa as well. With teens, I'd also think about salad greens, so the girls can make a taco salad with the above offerings.

What about crepes? Sausage crepes, fresh asparagus, or a poached salmon filling with a light lemon dill cream sauce. Just "google" crepes and crepe fillings to see what recipes result. RECIPE: Mexican Pot Roast

So here's what I finally made. We liked it better than the recipe I lost! My husband actually had 3 helpings, which is very surprising (he usually likes his own cooking more). Mexican Pot Roast One boneless chuck roast (mine was small, ~ 2 lbs) 1-2 T Mesquite Grill seasoning 1 14 oz. can diced tomatoes, preferably with Mexican seasonings 1 small can tomato sauce 1 t Cajun seasoning 1 t chili powder 1 T Worchestershire sauce adjust seasonings to taste or if using pre-seasoned tomatoes. Mix these above 5 items together in a bowl. 1 medium onion and 2 cloves garlic, sliced. 1 can kidney beans, drained and rinsed. 1 cup frozen corn, defrosted. Sprinkle roast with Grill seasoning and put in slow cooker on high till browned (or can brown in a pan first). Add water or broth if liquid/fat from the meat evaporates (keep about an inch of liquid in the pot). You want it to roast with moist heat, not dry out. Brown the onions and garlic in olive oil until caramelized. When browned, remove meat and cut large pieces of roast in the pot into smaller pieces, like 4 or 5. Drain juice from slow cooker and separate out the fat; returning meat and de-fatted juices to slow cooker. (In my slow cooker this browning and initial cooking took about 4-5 hours on high.) Pour kidney beans and corn around sides of meat. Cover meat with browned onions/garlic. Pour tomato mixture over all. Stir slightly to make sure beans are covered with sauce/juice, but keep meat covered too. Cook for another hour or so. We served this over noodles because my daughter always wants noodles, but it would have been good too served like chili with a crispy cornbread. Hope you like it!

Guacamole and tortilla chips would be a nice "fit" with the other dishes you mentioned! Queso and chips is always a hit, too.

For a superb guacamole that is simple, Rick Bayless has a line of products that you can now find in the stores. Its Frontera and you can get the guacamole mix, add it to some avacados and your on your way. Great guacamole and the salsas are just as good. A seven layer dip is also easy and goes over well for a crowd.

You could make this on a sheet pan and cut into workable squares for finger food. I would serve it with a small bowl of sour cream to dollop on top.

TACO PIZZA

1 lb. lean ground beef
1 pkg. (10.75 oz.) TACO BELLÂ® HOME ORIGINALSÂ® Taco Dinner 1 ready-to-use pizza crust (12 inch)
1 cup Mexican Style shredded four cheese
1 cup shredded lettuce
1 large tomato, chopped

HEAT oven to 400Â°F.

COOK meat with Taco Seasoning Mix as directed on package. Spoon onto pizza crust; top with cheese. Place directly on oven rack.

BAKE 8 to 10 min. or until crust is golden brown and cheese is melted. (That doesn't seem like enough time.)

TOP with lettuce and tomatoes. Crush taco shells; sprinkle over pizza. Drizzle with Salsa.

Shea, I'm not happy with the recipe I just posted. First, I think there are some ingredients missing and second, I don't think the time for baking is correct.

If you want to make guacamole here's my SUPER simple "recipe". Simply mix the mashed avocados with LOTS of freshly squeezed lime juice and your favorite salsa. Then sprinkle with kosher salt (use regular if you don't have kosher). The lime not only keeps the avocado from turning brown but it adds a nice tart flavor.

This is the way I always make guac. I've read many recipes with lots of fresh ingredients, onions, tomatoes, cilantro, etc. But I always get rave reviews on this recipe and it takes no time to throw together.

You could also do a simple chile con queso recipe. Melted velveeta + rotel. Add a can of chili to that mix for extra oomph.

Another great cheezy dip idea is to melt shredded jack and/or cheddar with cream cheese & salsa. I don't remember the exact amounts, probably 8 oz each of the cheeses. Again, E-Z but people love it.

I'd suggest a Mexican Flan. That's a very traditional---maybe the most---Mexican dessert. Simple, but few people know how to make it.

Thanks everyone. I have avocados I need to use up, so will make guacamole with those, thanks for the lime juice tip, lowspark! And the margarita cupcakes sound divine, so I may make those too, if I think I have time.

Patti, I think the Taco Pizza sounds really good, and I'll try that recipe sometime soon, and just keep an eye on it and bake it a little longer. I know my family will love it!

No suggestions on what to take.Everyone else pretty much covered what I had in mind.LOL I do have a hint to keep the avacado dip from turning dark.Put the dip in a container with a fitted lid.Take one or 2 of the seeds and poke them,pointed side up down,into the top of the dip about 2/3 of the way.Cover and refrigerate.The dip will not turn dark.It will even keep overnight in the fridge without turning.Don't wash the seeds though.It works.

These are so good and so easy. I have some ready to be baked for this weekend.

chile cheese squares
It can also be made up to 24 hours ahead of time and served hot, cold, or at room temperature.

2 cups grated Monterey Jack cheese
2 cans green chiles
4 well beaten eggs
.

Preheat the oven to 350 degrees. Sprinkle the cheese and chiles in the
bottom of a 9X13 baking dish. Pour the eggs over the top. Bake for
30-40 minutes or until golden brown and firm. Cool to room temperature
and then cut into squares. ***I baked mine in a square pyrex dish.

Serve with salsa

Preparation Time: 5 minutes
