Do You Have a Recipe to Share For First Week in Sept.?

Here is the recipe someone requested for the

Nine Vegetable Marinated Salad

You can vary this recipe with other vegetables if you like. It was originally a 7 vegetable salad but I added more.

12 oz. can of shoe peg corn (this is not easy to find in my grocery so I substituted a can of white and gold corn)

15 oz. can of small peas

14 oz. can of French cut green beans

1 cup of chopped green onion

1 cup of chopped green or any sweet pepper

2 oz. jar of pimentos or chop up fresh pimentos

1 cup of diced celery

1 cup of diced cucumber

1 cup of diced zucchini

Drain canned vegetables and combine with fresh vegetables.

Combine the following dressing ingredients and bring to a boil and foil for one minute. Pour hot dressing over vegetables. Cover and refrigerate at least over night.

Dressing Ingredients

1 cup of sugar

1/4 cup of oil

3/4 cup of apple cider vinegar

1 Tablespoon water

You can salt and pepper to taste, but we don't.
