Coconut Curry Soup

LifeâÂÂs Ambrosia

Note: To make this vegetarian simply substitute vegetable broth for the chicken broth and omit the chicken.

Serves 4

You will need:

⢠1 pound chicken breasts, diced

⢠1/2 teaspoon kosher salt

⢠1/2 teaspoon pepper

⢠2 tablespoons olive oil

⢠1/2 medium onion, diced

⢠2 cloves garlic, minced

⢠2 cups chicken broth

⢠1 (14 ounce can) coconut milk

⢠1 tablespoon green curry paste (I donâÂÂt have green so IâÂÂd use a mild curry paste)

⢠1/2 teaspoon turmeric

⢠2 small russet potatoes, peeled and diced

⢠3 green onions, chopped

1. Season chicken breasts with salt and pepper.

2. Heat olive oil in a skillet over medium heat. Cook chicken, onions and garlic just until chicken is browned, 5- 7 minutes.

3. Stir in chicken broth, coconut milk, curry paste, turmeric and potatoes. Cook potatoes until soft about 10 minutes. Use a potato masher to mash potatoes slightly. This will thicken the soup. Reduce heat to low and let simmer for 30 minutes. Stir in green onions.

4. Serve.
