Patti posted an AWESOME summer torte recipe yesterday.It is absolutely wonderful and SO easy.You can use most any fruit or a combo.I made it w/blueberries.I will try and bump it up.

This is a wonderful cobbler recipe, I used canned peaches but fresh would be much better.

PEACH COBBLER

1 large can sliced peaches
1 tablespoon butter
1 cup sugar
Mix and pour into 9 x 13 pyrex dish.

Make a batter of

1 cup self-rising flour
1 stick butter
1 tsp. Vanilla
1 cup sugar
1 egg

Mixture will be thick. Drop by "globs" over the peaches.
Bake at 350 for 35 minutes or until golden brown. Serve warm.
Great with a scoop of ice cream on top of each serving.

You can't beat peach shortcake topped with ice cream!

Arosegirl, do you know if I need to cook the fresh peaches prior? I know that canned are much softer than the ones I have. Do I need to cook and peel?

Can't fine mine, but this one is very very close.

Fresh Peach Pound Cake

1 c Butter; softened
3 c Sugar
6 Eggs; at room temperature
1 ts Vanilla extract
1 ts Almond extract *****I do not like almone, so I use extra vanilla
3 c Flour; all purpose
1/4 ts Baking soda
1/2 ts Salt
1/2 c Sour cream
2 c Peaches; peeled and chopped

Grease and flour a 10 inch tube pan. Preheat oven to 350 degrees.

In large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in extracts.

In small bowl, combine dry ingredients and add to creamed mixture. Fold in sour cream and chopped peaches. Spoon batter into prepared pan.

Bake for 1 1/4 to 1 1/2 hours or until a wooden pick comes out clean. Cut into thin slices to serve.

What is a tube pan?? Can I use something like a loaf pan?

Do you have a bundt pan?

That's the modern day version of a pound cake pan.

Here's a peach bread, makes two loaves.

Georgia Peach Bread

3 cups fresh peaches, sliced
6 tablespoons granulated sugar
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups granulated sugar
1/2 cup shortening
2 eggs
1 cup pecans, finely chopped
1 teaspoon vanilla extract

Place peaches and sugar in blender or food processor container. Process until pureed. Mixture should yield about 2 1/4 cups.

Combine flour, baking powder, baking soda, salt and cinnamon; set aside.

Combine 1 1/2 cups sugar and shortening. Cream well. Add eggs and mix well. Add peach puree and dry ingredients; mix until dry ingredients are moistened.

Stir in nuts and vanilla extract. Spoon batter into 2 well greased 9 x 5 x 3-inch loaf pans.

Bake at 350 degrees F until done.Cool for 10 minutes in pan. Turn out on rack and let cool completely.

If it were ME, I would not put in the nuts.

All you need to do is peel and slice the peaches. Cooking for 35 minutes will be all the peaches need to tenderize them. Enjoy!

Peaches are so good. Do you drop yours in hot water a few seconds and then into cold to make the peelings come off easier? I love peach pie.

Peach Cobbler Dump Cake

1 (18.25-ounce) package yellow cake mix
1 (32-ounce) can sliced peaches in heavy syrup*
1/2 cup butter or margarine, melted
Ground cinnamon for sprinkling
Vanilla ice cream or sweetened whipped cream for accompaniment
Preheat oven to 375°.

Pour peaches along with the syrup into the bottom of a 13 x 9 x 2-inch pan. Sprinkle evenly with the dry cake mix and press down firmly. Drizzle the melted butter evenly over the cake mix. Sprinkle top lightly with cinnamon.
Bake for 45 minutes. Serve warm or cool with vanilla ice cream or sweetened whipped cream if desired.
Makes 12 servings.

* Fresh peaches can be cut up and sweetened to taste first.

Trin, a tube pan is what Angelfood Cakes are baked in. . the "tube" in the middle.

Thanks all for the tube pan info....I feel so out of it not knowing..I guess it is pretty obvious that I don't get out in the baking world often.
I am not sure which recipe I will try, will let DD and kids make the final pick.

I will let you all know how our masterpiece comes out. Thank you all for coming to my rescue.

Hey Trin....I have a tube pan...you've got peaches. I'd say that's a good combination! I bet any of those recipes would be delicious. I'm jealous of your peach tree. Mmmmmmm. Be sure to take a picture of what you decide to make....just to torture us!

Just plain ole peaches and ice cream, sprinkled with a bit of nutmeg will do the trick. And sugar cookies to eat on the side.

Oh, I can see a KT trip coming... Trin, we can help you make stuff with them peaches. :)
