What's for dinner Friday?

We went to HD this morning because two of our ceiling fans went kaput and needed to be replaced. We use our fans a lot in the Spring and Fall. We also needed to replace our hand-held shower head in our bath. It is so handy for Harry--and me for cleaning the shower.

Then we went to Sam's for a new printer since my won't print anymore. Got a good deal on an HP. I wanted to get a corned beef and ended up with LOTS of meat/seafood, fruit and cheese. The wild Alaskan salmon was just too beautiful to pass up.

While we were there, I picked up a rotissiere chicken so that's for dinner. Cheesy mashed potatoes and broccoli for the sides.

It's a stormy evening here. Hope it cools us off a bit. What are you doing for dinner this evening?

Beef/gravy over a nuked potato, and an ear of corn. I'd rather had mashed potatoes but was just too lazy to go the extra mile.

Glenda, he liked it a lot. But he would've loved those fried chicken thighs. Georgysmom, I won't have to cook tomorrow either. My potatoes was huge and Harry's dinner serves 2 (or in his case 3). Joann, I've never made or eaten potato pancakes that I remember but people sure do love them. I would like the veggies in teriyaki--how did you do that? Lindalou, just be glad Jim's getting rid of something in the frig. But your dinner sounds better. Sue, you really are working way too hard. Hope you can get a break from all that hot canning for a few days this weekend. Really, you need a break, my dear!! Shirley, that sounds so good. Thanks for the milk tip. Wish I 'd read it before dinner. I will do that on the leftover potato tomorrow. I had quite a bad time of it so drank a Kellogg's Special K drink and ate some Kozy Shack tapicoa. Jasdip--wow, what a great price on Napa. That's probably my favorite cabbage. And it's so pretty!! That's a good way to package the peaches because people think you squeeze them to see if they're ripe--wrong--just smell them. I hope there were vents in them. Raven, all good things must come to an end--sigh! At least you know your DH is going to be a happy guy tonight (happy to see you even more than the home-cooked meal).

It was a beautiful day here today but I was busy cleaning out my closet so the contractor can work on it while we are away. We're headed for the outer banks on Sunday and unbeknownst to DH I'm having my closet ripped out, painted, rebuilt and new carpeting. If you don't hear from me in a while, I might be looking for a new place to live. LOL We're going out for dinner tonight and then we are going to see Spamelot. I could really use the time at home but we got the tickets weeks ago. I'm sure it will be fun

Bigack, beans and cornbread is one of my favorite meals. Sometimes I make the bread-like dumplings and pour the beans over a big ole dumpling. So good! Mary, I sure hope you weren't out there helping clean up the damage from last night. Not sure how your PT would feel about that. Walnutcreek, when I can't decide, sometimes I make an fried egg sandwich. Fast, easy cleanup and it fills the tummy. Hounds, it sure sounds good. I saw a recipe today on pinterest for a soup similar only it had smoked sausage and white beans with the greens. Enjoy! Matti, now see. Last night you were dreading WW and it went well. Congratulations! I know how hard it is to lose even 5 pounds.

Marilyn, are you building a new barn "from scratch"? That's quite a job. Your dinners sound good and I'm sure Jody appreciates them. I am going to make your cake with the candied fruit in it this year for sure. I bought the fruit quite a while ago. Hope it's still good, although I can't see how it could go bad. Raven, LOL! Harry used to call his lab work visiting the vampires, too. That shrimp po-boy sure sounds yummy. Shirley, I think asked you about your sisters before--I have 5 also. I have one brother, too. Yeah, I'm not big on sauerkraut, but that's just me. Alisande, the recipe sounds good and the picture looks good. Did you like it? I think I'd like it on rice better than mashed potatoes.

We had leftovers from Hubs yesterday B'day supper. Salmon loaf, mashed potatoes with creamed peas. When I cook, I like to make enough for at least two meals.

I'm with you, dotmom. I never cook for just one meal. DH took the leftover shrimp dish from Wed. Wine and Dine and added more shrimp to it. There were plenty of veggies and by adding more shrimp he could stretch the meal for two people. He also made some fried rice to go with it. He is not by any far stretch of the imagination a cook. His repertoire includes tuna fish salad, eggs for breakfast (does a pretty good job on that,) a steak or a hamburger with home fries. One day he decided to get out a cookbook and look up fried rice. He does a pretty good job with that, too. It's when he thinks he can "create" something that he usually gets in trouble and it winds up inedible. Tonight it was very good.

I always cook for more than one meal, too. Most of the time it's because I don't take the time to cut the recipe in half. But, I seal and freeze the leftovers for yet another time. I have enough Food Saver meals in the outside freezer to last at least two or three weeks. Figure they'll come in handy if we get a hurricane and I have to cook on the Coleman stove. Heat 'n eat :-)

Get this, we had oatmeal! LOLOL

Hubby is playing tonite and he always eats light anyway. He didn't want meat tonite, didn't want pasta, so we had porridge.

I'm going tonite to see him as well. Haven't seen them for a long time. It's a 10pm start time, and they play till 2 which is incredibly late for me. I'm so not a nite owl! My step-brother and SIL are picking me up so I'm hoping we'll head home around 12:30 or thereabouts.

We finished off the oyster stew I made for last nights dinner. It was even better the second time around.
