I'm having my left over eggplant Parmesan from yesterday and DH is having his left over baked ziti. Glad to have the night off!

Potato pancakes and mixed vegetables in teriyaki sauce. Because I really want the potato pancakes, but we also need the veggies.:)

leftovers tonight. hot pork sandwich, buttered noodles and green and wax beans for me and pizza for jim. he has no sense of adventure!! haha :)

I canned salsa this afternoon, so far 17 pints are canned, the first I have canned this year. Was not really hungry so I had milk and some graham crackers.

I got my meat order today from the little tiny grocery a few miles away. I can get my ground meats as lean as I want them there. So this afternoon I used a lb of lean ground beef and a lb of lean ground pork to make my meatloaf. I baked a potato while I had the oven hot. Lima beans as a side dish made my meal complete (and good).

Patti: When I was in my 20s, I took a long spell of not being able to eat anything spicy, no meat, etc. I mostly lived on baked potatoes (no butter), jello and toast. The thing the dr told me to do was add a little warmed milk when mashing the potato to make it easier to swallow.

While grocery shopping I saw napa on sale for 67cents/lb.
I bought it and made Asian coleslaw (a favourite for us).
Spiced up a couple of pork chop and fried some potatoes.
Also bought a 3 litre pkg of Freestone peaches. We're having some with ice cream as I type. :)

This is the first time I've seen the peaches in a square plastic container sealed instead of in open baskets. This is a great idea, because it stops people from picking over all the peaches and piling the basket high.

I have the cooker loaded up with purple hull peas, ham, onions and tomatoes, I am going to make either rice or cornbread to go with it to sop up the juice.
Hubby is finally done with the training and this will be his first home meal all week. This will be his happy meal lol.
I personally enjoyed not cooking all week.

Georgysmom, I won't have to cook tomorrow either. My potatoes was huge and Harry's dinner serves 2 (or in his case 3).

Joann, I've never made or eaten potato pancakes that I remember but people sure do love them. I would like the veggies in teriyaki--how did you do that?

Lindalou, just be glad Jim's getting rid of something in the frig. But your dinner sounds better.

Sue, you really are working way too hard. Hope you can get a break from all that hot canning for a few days this weekend. Really, you need a break, my dear!!

Shirley, that sounds so good. Thanks for the milk tip. Wish I 'd read it before dinner. I will do that on the leftover potato tomorrow. I had quite a bad time of it so drank a Kellogg's Special K drink and ate some Kozy Shack tapicoa.

Jasdip--wow, what a great price on Napa. That's probably my favorite cabbage. And it's so pretty!! That's a good way to package the peaches because people think you squeeze them to see if they're ripe--wrong--just smell them. I hope there were vents in them.

Raven, all good things must come to an end--sigh! At least you know your DH is going to be a happy guy tonight (happy to see you even more than the home-cooked meal).

Add the milk a little at a time to right consistency for you. Also forgot to add that I made the toast and 'dipped' it in plain hot tea so I could eat it.
