fry it up with some chopped onions -- add a large can of tomatoes (or tomato sauce) 28 oz? Heat together and simmer for about 1/2 hour. Boil some pasta (I use mini rigatoni). Before tossing it with the pasta, add about 3 tablespoons of cream (or half-and-half, or light cream, or even milk) to the sauce. Promise that this will be a favorite! DH loves it!

I stole it from a local fancy restaurant that named it "Rigatoni with sausage and cream"

Mongolian BBQ

In a wok, fork fry the sausage to break it up well as it fries. Add one chopped onion and one minced garlic clove or season with garlic salt. Drain off any excess grease. Add a 3 drops of chili oil, available in the Chinese food ingredients aisle of your grocery store.

Now per person add to the wok one shredded carrot and a stalk of celery thinly sliced. Also add shredded cabbage, some sliced green or colored peppers, some snipped cilantro, and a little good soy sauce and cover the veggies with a large lid like from a frying pan if possible to steam the veggies in their own juices for a few minutes. Sometimes I add sliced mushrooms. Now add a handful of bean sprouts per person. When the bean sprouts are done to your preference, but still have some crispiness to them, your Mongolian BBQ is done. Serve a large spoonful inside some pita bread for a delicious but messy to eat meal. It can be served over rice, but the pita bread is better. This is a very forgiving recipe if you want to use more or less of anything or even substitute.

Egg and Sausage/Bacon Breakfast Casserole
(a passed on recipe from a friend)

6 slices bread - cubed (may use a baguette of French bread enough to cover the baking dish)
1 lb. pork sausage or bacon, browned and drained
8 oz. grated cheddar cheese
6 eggs, beaten
2 cups Carnation evaporated milk
1 tsp. salt and a dash of pepper
1 tsp. dry mustard

Place cubed bread in a 9 x 13 x 2 inch greased baking dish. Spoon sausage/bacon over bread. Sprinkle with cheese. Beat together eggs, milk, salt, pepper, mustard. Pour over mixture in pan. Let stand 10-15 minutes. Bake at 350 degrees for 45 minutes to an hour uncovered. Cheese will rise to top during baking.

Well it's a little late for any inspiration today...

But for supper tonight I made our simplest meal and the family's favorite.

I made mashed potatoes with the country white gravey that you can buy in packets and mix with water. (I buy bulk boxes) Brown ground beef with dehydrated onions , mix it in the gravy. We eat it over the mashed potatoes.
I fixed peas, and sliced fresh tomatoes to eat with it.

No body makes a run to taco bell when I fix that. And I saw three eat seconds.

Sausage is great in place of beef in soft tacos.

Wow, I got about 4 meal ideas out of this thread.
I live alone and am trying not to waste so much food.
I have some leftover buttered noodles and tomato sauce in the frig. I'll use 1/3 of the sausage to make a version of deemarie's post.
One third will make some breakfast burritos I can bring to work and heat up.
1/3 will be mixed with 1/2 a lb of ground beef for tacos/burritos
The other 1/2 of the ground beef will be browned to add to some leftover chicken cacciatore sauce to turn it into spaghetti sauce.

I see a lot of leftovers in Scott's (my boss) future. Out of one lb of ground beef and one lb of sausage. LOL
