Dinner help - what to do with ingredients on hand?

I am in a rut.

I have about 2 hours from now - or 6:30-7:00 eastern to put dinner on the table. I am completely uninspired.

There are a lot of pantry items plus the following:

Boneless skinless chicken breasts

frozen shrimp (uncooked, shell on)

several assorted cheeses (inc blue, fresh mozzarella, st andre, parm, romano, cheddar, havarti w/dill, etc)

proscuitto

ham

mushrooms

onions

scallions

red bell peppers

carrots

green beans

lettuce

tomatoes

hot peppers (various)

carrots

Rice (red, purple, white & brown)

barley

quinoa

orzo

pastas & noodles

fresh herbs:

parsley

thyme

rosemary

sage

dill

Sour cream

cream cheese

heavy cream


Help! Please give me some direction. I am bored with everything I normally make and I do not want to go shopping.
