KA recipe...what is this ingredient? substitute what??

I get more than a little annoyed with a lot of the KA recipes which call for one ingredient that of course I, and I suspect a lot of others, don't have on hand. Catalog sales need to keep them going I know but...In a recipe for a Pepperoni and Cheese Bread (a monkey bread), it calls for 3T of Signature Secrets to be added to the cheese mix you dip the dough balls into. This "Signature Secrets" is listed as -

Signature SecretsÂ® Culinary Thickener

Item # 2808

Ingredients: modified food starch, bleached enriched wheat flour (wheat flour, niacin, iron, thiamin mononitrate, riboflavin, folic acid). Processed in a facility that also packages products containing eggs, milk, soy, tree nuts, and wheat.

Do you think a mix of cornstarch and flour would suffice?

Maurieen, check out this description of the product by Cooks Illustrated.

Although I haven't seen the recipe, my guess is that you could just use a little flour.

I use sage in my meatloaf too. I've never thought of adding allspice but I like that idea. Thanks Marymd. Would make it taste similar to the filling for my Tourtiere. Meat Loaf Magnolia ================== 1 1/2 pounds ground veal or mixture of beef and veal 1 small onion finely chopped 1 to 2 cloves of garlic 2 slices Italian/French Bread soaked in milk 2 eggs 1 Tablespoon Dijon mustard 2 Tablespoons chopped parsley 1 tablespoons of dried herbs, (sage and Thyme, a small amount of rosemary olive oil Sauce Green peppercorns mushrooms 1 to 2 cups chicken broth Saute onion in olive oil until soft. Add minced garlic and saute for 30 seconds. Do not brown garlic Soak bread in milk In a large bowl add meat, Dijon mustard, chopped parsley, herbs, onions and garlic and mix with hands. Squeeze bread to break up and add milk and bread to mixture. Mix well and season with salt and pepper. Saute a small piece to check for seasoning. Adjust to taste. Shape meatloaf into a rectangle about 8 X 4 x 3 inches high and place in a small roasting pan. Bake for 30 minutes and then add a small amount of broth to the pan to prevent the bottom from becoming to brown. Bake another 30 minutes and baste with the pan juices. Add more broth if necessary. Cook another 10 minutes or until the meatloaf is nicely browned. Let cool and wrap in foil and refrigerate. Reserve pan juices. Make a sauce by adding some green peppercorns and sauted mushrooms to the pan juices. Heat grill Slice meatloaf into 1/2 inch thick slices and grill on both sides until nicely marked and hot. Lyfia, no problem, but the thanks goes to the regulars :) In fact, if anyone here is a member of cooks.com it would be a public favor to post the info re: 14oz. many times, so it should become noticeable & findable. OK, now as for the semantics and "not-so-dumb" questions, I guess i'll leave that to your collective imaginations! BTW, dcarch, to my chagrin, and that of my tums (plural, cuz there's double of all of them to match my chins), I too am an experienced sweets eater :)))) To CL Blakey & foodonastump, thank you SO much for the info! Actually i had, in fact, browsed the comments, but must have missed the 14oz. ones, due to my dried blurry eyes (often caused by computer fluresence). Had I only only ignored the scaremonger doctors long ago, and begun drinking coffee+milk+turbinado long ago instead of just recently out of desperation, I'd have had much less headaches, eye deterioration, memory loss & premature aging nowadays. Now I guess all that's left for me to break those 7 white bars into itsie bitsies by hand ;-) at such time as opportunity plus energy + motivation present themselves together.

I'm probably too late, but here are 2 recipes. WARM SPINACH-PARMESAN DIP 2 tablespoons (1/4 stick) butter 2 tablespoons olive oil 1 3/4 cups chopped onion 6 large garlic cloves, minced 2 tablespoons all purpose flour 1/2 cup chicken stock or canned low-salt chicken broth 1/2 cup whipping cream 1 10-ounce package ready-to-use fresh spinach leaves 1 cup (packed) grated Parmesan cheese 1/4 cup sour cream 1/2 teaspoon cayenne pepper Baguette slices, toasted Melt butter with oil in heavy large pot over medium heat. Add onion and garlic; sautÃ© until onion is tender, about 6 minutes. Add flour; stir 2 minutes. Gradually whisk in stock and cream; bring to boil, whisking constantly. Cook until mixture thickens, stirring frequently, about 2 minutes. Remove from heat. Stir in spinach, cheese, sour cream and cayenne (spinach will wilt). Season with salt and pepper. Transfer dip to serving bowl. Serve warm with toasted baguette slices. Makes about 3 cups. A couple of years back I linked onto their website and was sent a FREE "sample". The sample they sent was a BIG 10 1/2 ounce jar...!! Unbelievable.
I've only used it once and it worked as promised...I just keep forgetting I have it.

Thanks all. Since it is just .."just" is a dangerous thing for me to say in baking, right?...an ingredient to aid adhesion, I'd agree Ann and say flour could work here. Wonder what they'll do when they are overwhelmed with requests for free samples!

Put some very dry bread crumbs in the blender....and you've got a "Secret thickener"...flavor neutral, doesn't form lumps, cooks quickly and keeps a long time.

I'd use Wondra Flour. Sounds like it acts in a very similar way in that it thickens without clumping and is made mostly of flour.
