KA recipe...what is this ingredient? substitute what??

I get more than a little annoyed with a lot of the KA recipes which call for one ingredient that of course I, and I suspect a lot of others, don't have on hand. Catalog sales need to keep them going I know but...In a recipe for a Pepperoni and Cheese Bread (a monkey bread), it calls for 3T of Signature Secrets to be added to the cheese mix you dip the dough balls into. This "Signature Secrets" is listed as -

Signature SecretsÂ® Culinary Thickener

Item # 2808

Ingredients: modified food starch, bleached enriched wheat flour (wheat flour, niacin, iron, thiamin mononitrate, riboflavin, folic acid). Processed in a facility that also packages products containing eggs, milk, soy, tree nuts, and wheat.

Do you think a mix of cornstarch and flour would suffice?

Maurieen, check out this description of the product by Cooks Illustrated.

Although I haven't seen the recipe, my guess is that you could just use a little flour.

When you HAVE to dig up your septic system for any reason, your priorities change! I'm way too familiar with septic systems, having gone through quite a bit with the two separate ones here... one for the house, and one for the kennel! (Hint: they should both be constructed the same, as they both serve the same purpose!) Kennel septic, no peacock used in outgoing piping... use your imagination! Anyway... I'm surprised at the amount of moisture retained without the use of turface in my mix. The top couple of inches can be fairly dry, but the area around the roots will still be quite damp. While I do have to water more often than if I were to use a more moisture retentive, organic medium, it's not nearly as often as I originally thought it would be. I'm quite happy with the results so far... the real test will be what the roots look like at re-potting time. And... so far, so good on that issue... I recently re-potted a couple of small bulbs in 4" pots... they were planted in a pre-mixed bonsai medium, which was quite gritty, but with smaller particles than Al's Mix. The roots looked healthy and numerous, and the used medium fell away with very little effort, making re-potting much easier.

I am at the flipp'n grocery store at least every other day and today twice! But we are coming off of a long haul in a temporary kitchen, almost 2 years in construction, and I'm still not stocked as well as like. I think if you start saving recipes and plan at least 4 meals a week, your pantry will be pretty well stocked for wonderful meals within a month or so. On Monday I was at the store picking up plums and decided to stock my vinegars that have been sadly lacking. So I picked up my usual, White and Red wine vinegar, a few balsamic that were on sale, Rice vinegar and Champagne and even a few odd ball ones in the Oriental aisle. Over the last month or so I've been stocking up on my oils, sesame seed, walnut, 2 gallons of EVOO, Peanut oil and a some others that I can't recall now. I buy most of my baking staples at the bulk store as they have a nice selection of flours, all purpose, cake, WW and rye. Although the other day I was out of crisco, for heaven's sake! How that happened I don't know. I am at the bulk store probably once every 2 wks and I pick up spices at the time and white and long grain wild rice. I keep many varieties of pasta, a few cans of tomato paste and sauce. Now that I canned my stewed tomatoes, I don't need to buy any crushed tomatoes but I usually keep at least 2 cans on hand at all times. Also, keep some mild Italian sausage in the freezer. As far a meat, I keep 10-12 chicken breasts, some skinned and some deboned. Ground beef some in patties and some in bulk. Now, we do have a pork shoulder in the freezer but this was on sale and I need it to make more sausage. Several different cuts of beef, and I think we even have some pork chops which we usually don't. Lately I've been buying bacon too. Our fresh vegetable and fruit vary but I always have green onions, several lemons and at least 1 orange, brussel sprouts, carrots, celery, mushrooms, tomatoes, purple onions, radishes, broccoli, potatoes and cauliflower. And we always have bananas and apples. I keep a huge stock of cheeses and it varies as to what is on special. But I stock several white cheeses, maybe a packet of shredded cheddar and usually brie or a similar dessert cheese. I keep a ready supply of nuts in the freezer, walnuts, pecans, peanuts, sliced and whole almonds, pine nuts, cashews and macadamia nuts. I'm probably too late, but here are 2 recipes. WARM SPINACH-PARMESAN DIP 2 tablespoons (1/4 stick) butter 2 tablespoons olive oil 1 3/4 cups chopped onion 6 large garlic cloves, minced 2 tablespoons all purpose flour 1/2 cup chicken stock or canned low-salt chicken broth 1/2 cup whipping cream 1 10-ounce package ready-to-use fresh spinach leaves 1 cup (packed) grated Parmesan cheese 1/4 cup sour cream 1/2 teaspoon cayenne pepper Baguette slices, toasted Melt butter with oil in heavy large pot over medium heat. Add onion and garlic; sautÃ© until onion is tender, about 6 minutes. Add flour; stir 2 minutes. Gradually whisk in stock and cream; bring to boil, whisking constantly. Cook until mixture thickens, stirring frequently, about 2 minutes. Remove from heat. Stir in spinach, cheese, sour cream and cayenne (spinach will wilt). Season with salt and pepper. Transfer dip to serving bowl. Serve warm with toasted baguette slices. Makes about 3 cups. Bon AppÃ©tit SPINACH AND GARLIC DIP WITH PITA TRIANGLES AND VEGETABLES Fresh spinach, sauteÃ©d in oil with garlic, is pureed with sour cream and green onions to create this delicious dip. Roselin, this was an easy recipe. I made it for my MIL a few months back and she raved about it. So I thought it would be good for Christmas too. The recipe came from Allrecipes.com. Here's the recipe: Cinnamon Biscotti: Ingredients * 2 cups all-purpose flour * 1 1/2 teaspoons ground cinnamon * 1 teaspoon baking powder * 1/4 teaspoon salt * 2/3 cup white sugar * 6 tablespoons butter * 1 egg * 1 egg yolk * 1 teaspoon vanilla extract * 1 egg, beaten * 3 tablespoons white sugar * 1 teaspoon ground cinnamon Directions Preheat oven to 325 degrees F (165 degrees C). Line baking sheets with parchment paper. Sift together the flour, 1 1/2 teaspoon cinnamon, baking powder and salt, set aside. In a medium bowl, cream together the 2/3 cup sugar and butter. Beat in 1 egg, egg yolk and vanilla. Stir in the dry ingredients. On a lightly floured surface, divide dough into two pieces. Roll each piece into a log about 9 inches long and 1 1/2 inches wide. Place logs on the prepared baking sheet and flatten slightly. Brush with the beaten egg. Bake for 25 to 30 minutes in the preheated oven, until golden and firm to the touch. Cool for 15 minutes. On a cutting board, slice each log crosswise at a diagonal into 1/2 inch slices, using a serrated knife. Place back on the baking sheet, cut side down, and sprinkle with a mixture of the remaining cinnamon and sugar. Return to the oven for an additional 15 to 20 minutes, until toasted. Cool on wire racks, and store in an airtight container.

A couple of years back I linked onto their website and was sent a FREE "sample". The sample they sent was a BIG 10 1/2 ounce jar...!! Unbelievable.
I've only used it once and it worked as promised...I just keep forgetting I have it.

Thanks all. Since it is just .."just" is a dangerous thing for me to say in baking, right?...an ingredient to aid adhesion, I'd agree Ann and say flour could work here. Wonder what they'll do when they are overwhelmed with requests for free samples!

Put some very dry bread crumbs in the blender....and you've got a "Secret thickener"...flavor neutral, doesn't form lumps, cooks quickly and keeps a long time.

I'd use Wondra Flour. Sounds like it acts in a very similar way in that it thickens without clumping and is made mostly of flour.
